Just a little tip: leaving deep-fried food on the kitchen towel will catch moisture between the towel and the food which will make the food soggy. If u want it to remain crispy then it's better to use a rack

You can peel the hard outer shell off the head, than crispy fry the head. Had this in my favorite Thai restaurant in Las Vegas, the Lotus of Siam.

Great video Mike! In the UK, we have something very similar and super popular - but with szechuan pepper added. It's called Salt and Chilli / Salt & Pepper - its made with lots of different main components like Chicken, Prawns, Beef... but the most popular is with Chips! (Chunky Fries) - I would definately recommend giving it a try!

Mikey as you know in Peru there’s a lot of Chinese influence. When you were describing the spice and salt mix it reminded me of this sort of chicken drumstick that we have in Peruvian Chinese restaurants. The drumstick is “peeled” from the leg bone and made into a little Ball and fried, then we dip it in lemon. It uses the same seasoning mix. Have you ever heard of this dish or is it just a product of cultural fusion ? I’d love to know the real name of this dish and maybe see a recipe of you making it

The american style Chinese buffet I usually go to had a similar dish, deep fried shrimp, tossed in chilies, and garlic, other spices. For the longest time I'd peel the whole thing, and one time a server walked by and just hinted to eat the tail. My mind was blown, they don't even toss them in corn starch or anything, they just cook them until the whole shell is edible. They seem to only make it a seasonal dish tho. The legs are the best part.
