Ok so lot of comments about subbing the bun...heres the thing. This bun is called Bai Ji Mo and the it's been around for hundreds of years. The bun is very unique, it has sear patters on the outside otherwise it's pure white. It's thin with a subtle crunch and is basically the go to "bun" for the northern Chinese and it is just as important as whatever goes inside it. So I do encourage everyone to make it and try it because it is a very unique Chinese dish.
There's a restaurant in Alameda, CA that uses English muffins which.. well... is honestly heretical. It's a match in size and shape but the texture is completely off. A thick pita (the pocket-less kind), toasted, would be a better choice, but there's really nothing that compares with the OG.
I think that's how all people who love to cook are. I'm at the point where I'll read through a recipe, pull out the ingredients and measure nothing. I'll look at the list to get an idea, but I always eyeball it.
Mike you need to ask your parents or grands or aunties to write down even a few recipes or make some notes for you or give you notes scribbled out. (Even clippings they wrote on maybe their ideas)....you will be so thankful to see it later in life and pass down to the next generation. I’ve have bound together all the written (and time worn and stained) recipes of my grandmothers, great grandmothers and my mom. Also the guys too, just not as many. Yes because all cultures the parents and grandparents cooked without recipes or moved on to cooking their own way and forgetting the initial one. Even I do that now. It’s so nice seeing all the history together and handwriting of the elders that have passed on or may soon. A lot of that they had the date on or what they made it for....yes that will go to my kids but also made copies to pass out to the very large family. And they can add to it as well!

Haha. I'm German and my Granny measured like that when cooking. Today my daughter wanted Japanese fried rice and Hibachi chicken. She helped some and asked how much soy sauce and I told her "Just enough " play it by ear 😂

I made this last night for my husband who grew up in China ... he loved it and demolished them! I used my instant pot for the meat and it was so easy! I screwed up the bread dough (I added too much water and it was too sticky even after the 2nd rise) but I just added more flour, kneaded it until no longer sticky and let is rise for a third time. The buns still turned out great so is was a very forgiving recipe! Just an FYI for anyone intimidated about making this. I even added some hardboiled eggs to slowcook in the Instant Pot overnight after the meat was done to make some seasoned eggs. I'm saving this one to make again!
It’s looks yummy ,its amazing how recipes are passed down but are estimated quantities,more to do with taste ::::that’s why each time the dish tastes slightly different but yummy every time !

My Instant Pot is my FAVORITE cooking tool in my kitchen. I'm sorry, Crock pot, we had a good run. ❤️❤️❤️ I use it for everything: soup, stews, roasts, beans, rice. I even make my own Greek yogurt in it, and proof bread dough. 👍👍

My family at home is small but when we get together with relatives there's a lot of us. I started with the 6 qt, but it was too small so got the 8 qt. But for our home the 3 qt would suffice I think. Every video you make, I become a better cook. Your use of ingredients is an art form. Last night I made corn dogs, simple ol' state fair brand. But instead of dipping them in standard ketchup or mustard, I used hot chili oil. That flavor transformed them into something special and new. Honestly I was tired of my cooking after 45 years and you brought new life to my food, no matter how simple it is. I can't wait to try this version of a "hamburger". I know it will be great. Thanks!
Thanks much for your recipe -- it produced great results. My family and I truly enjoyed it, and the results were so much better than rou jia mo that I get locally. I hope you will be able to publish a lamb filling recipe in the future, but I think it will be a long time before I feel the need to have an alternative to this one.

rou jia mo is one of the first foods my dad ate when he first arrived in Xi'an in the 80s and fell in love with it. Then he met my mom and fell in love with her. And now I exist and can confess that rou jia mo is one of the best things that exists ever 😍

Ok you combined so many regions for the way the food was prepped. Lets take eastern for dough and slice it like middle east for serving and add pork to call it a burger. Throw some pickles in there and we have a world wide tour. Seriously I am hungry now.
