I have a son who is very gluten intolerant. I made these tonight using all purpose einkorn and they turned out amazing. Einkorn has a lot less gluten and can be tolerated by many gluten intolerant people. Because of the low gluten I was not sure how these would turn out. Let me tell you they were soft, light, and extremely fluffy which blew my mind. I will be using this recipe for rolls, hamburger, and hot dog buns for now on and my son will be able to enjoy them also. Thank you so much!

I tried like fifty million videos/recipes of dinner rolls and then I watched Natasha’s and she explained everything very well for me so it makes it easier for my dislexia and adhd.
Hey Natasha, sample this... 1/2 C Sugar 1/2 C Shortening 1 Cup Whole Milk 2 Eggs & 2 Egg Yolks 2 Tsp Salt Bread Flour (650-670 Grams Roughly) 1 Full Portion/Packet of Yeast You have an excellent preparation method. Here's how I do it... I usually microwave the (milk - shortening - sugar - salt) until the shortening melts and then I stir in a Cup or so of flour until it's like crepe batter, by then the temperature of the mixture is just about right. Next the eggs & yolks get mixed in thoroughly and finally the activated yeast (I use WAY less water, as little as possible in fact and a little sugar) and keep going with the flour about 1 cup at a time as per any bread kneading process until the dough is perfect. Proof, as a cohesive whole, for 2-4 hours and again in whatever form you prefer, my grandmother always chose croissant roll outs, for about 45-90 minutes and bake for roughly 11-13 minutes at 350 for a batch size of 11-13 (longer obviously for larger batch sizes, you know how they're supposed to look). The recipe is in my cookbook on Kindle "Room Service at the Motel 9" :)...o I am at least the 4th generation in my family to have perfected this bread. It's funny to watch young men devour these around the holidays, WARNING, they're like piranha on these. You'll likely have to make 2 batches if you want any with dinner. I bet it's the sugar, it turns them into crackheads: like at the motel.
Update on using a hand mixer with a dough hook attachment***….It workout perfect 😌🥰 I made these today for Thanksgiving using my hand mixer instead of my stand mixer because I lost my stand mixer dough attachment, but my hand mixer came with its own. Everyone loved them!!!….I also made your recipes for garlic mashed potatoes, green beans casserole, apple pie, pumpkin pie, honey butter, and gravy…My Thanksgiving dinner was big hit this year thanks to you 🙃🙂

Wooowwo tried them today and they are so delicious . The salt at the end really makes a big difference to the taste. Managed to get 15 with 3 cups of flour and next time i bake i will reduce a bit of sugar .found them a bit sweet for my taste but great recipe simple and fast. Thank you Natacha .

I had the same problem. Knead the dough for a couple of mins approx 8-10. And leave the dough to rest for more than two hours instead of one. Once I was busy and left the dough after kneading for 3-4 hrs and again one additional hour after making balls. The dinner rolls turned out so fluffy and delicious that I could not believe myself. :). One more thing for 4 cups of flour I use 240ml of water and two eggs. They turn out so delicious and fluffy.

Great recipe! Although I decided to reduce the sugar from 1/3 to 1/4 of a cup and I reduced the salt from 1 1/4 teaspoon to just 1 teaspoon. Perfect.

It's easy .. every one can do it..and delicious ...i learned with few misatkes first time but from second time onwards they are always perfect

I also use the microwave to proof dough. I put a small cup with hot tap water in the corner of the microwave without turning the microwave on at all.
