Egg roles are supposed to taste as you described as the undesirable qualities, they bubble on the outside, are crunchy on the outside but soft on the inside. Spring rolls are crispy all the way through.
you need to watch an Asian to have the real deal.... I'm not sure what she is making but egg rolls and spring rolls don't have noodles. Vietnamese imperial rolls do, but the wrap is rice paper.

I love egg rolls! My mom makes them with ground turkey most of the time! She usually uses the spring roll paper. She will fry the first few batches all the way, then she will cook the rest of the batches halfway so we can airfry them for later. I love the egg roll paper because of the outer bubbles. My mom doesn't add vermicelli to the mix.
Love your show and tell process of making egg rolls. How i do mine, add fresh shrimps grounded and mixed in with the sauteed beef. Like you said, use sesame oil and soy sauce, but also you can use oyster sauce or we filipinos use fish sauce also. These crispy rolls is great for family get together for everyone to enjoy. Made these for dinner tonight. We had 10"x10" wrappers. Used 1/3 cup filling per roll. Got 27 out of the recipe. Family absolutely loved them. Will definitely make them again!
This is very similar to Vietnamese egg rolls. The only difference is we keep the filling raw. It cooks up nicely in the oil without drying out. I actually made some yesterday. Yummm! Great video!
OMG! I have wondered how to make egg rolls for ages. I have two favorite Chinese restaurants that I go to and get both egg rolls and spring rolls that are delicious! After seeing this, now I MUST try it! I even have an oriental market within driving range, and I'm sure they have all of the ingredients. I bought an air fryer too. Best purchase ever! *FOR ANYONE PLANNING ON MAKING THESE PLEASE READ* Absolutely love you Natasha but the part where you're talking about which egg roll wrapper to use is incorrect. It makes zero difference whether you get them frozen or refrigerated. What is making the difference however, is the fact that the thicker bubblier one you showed says *egg roll* wrapper on the packaging, because egg rolls generally do have that thicker wrapping. You're actually making spring rolls in this recipe, and if you want yours to look like the ones she made, it doesn't matter if the wrappers you buy are in the fridge or the freezer, just make sure they say *spring roll* wrappers on them 😊 Edit: I don't normally ask for likes, but I want to make sure that anyone who wants to make these gets the result they want, so if this has more likes, maybe people will be more likely to see it! X
I agree. These are spring rolls. The egg rolls do have bubbles on the surface once you deep fry them but it doesn't change the flavor of a good egg roll... BTW she forgot to add minced garlic and minced ginger when cooking the veggies and a teaspoon of sherry with the soy sauce. They are out of this world!! I haven't tried them with noodles though, it does sound delicious and I imagine they will fill you up. I will definitely have to try making them like that because no matter how many egg rolls I make, my son will devour them! 😋😋
Well, as far as I know, only Chinese style egg rolls uses the "egg rolls wrappers". They are thicker, not as scrispy as the "spring rolls wrappers". Personally, I like the spring roll wrappers because they are thinner and scrispier. I don't how how they came up with the names of the two types of the wrappers, but authentic spring rolls aren't fried and use none of the above wrappers. Spring rolls are wrapped with damp rice paper and NOT fried. 😄

One of our favorite restaurants has Vietnamese cuisine and these are what they serve, and their menu states "spring rolls"..... Every culture has their own way of cooking and the dishes have different names, of course. Asia is no different... 😆
These are soooo good. It takes a bit of prep time and if you use a smaller deep fryer (I get 5 per batch), then it takes a bit. They do reheat so well in the air fryer like Natasha said. They come out crispy and very good. Great recipe!
normally you’d soak the noodles in cold water just to give them the flexibility you need to stuff the roll. later they will cook in the oil. you don’t want mushy noodles! great video though, i will be making these soon!😊
I’m Vietnamese and this is one of our traditional dishes. U made is very similar to what my mom made when we were kids except she used cat ear mushrooms which is typical in some Asian cuisine. Now that my own family is plant based, she is exploring different ingredients to make us tasty egg rolls. Love my mom and enjoyed your recipe. Nice job!
no where close to Vietnamese style. WE use mushroom ear which gives it a whole different taste than mushroom and no cabbage at all. Raw ground pork season with little salt and fish sauce and little sugar little pepper little garlic and 1 egg to combine the ingredients. use glass noodle. dip in fish sauce. Her style is more of Chinese style
Oh no another plant base. When the mayor of newyork said he only ate plant based stuff I knew to run from that. Both my grannys ate deer bear and cow and cooked everything in bacon grease and ate salt like crazy! Perfect blood presure and cholesterol. They both had the same birthday, different family. I learned how to cook homestyle eggrolls from a Chinese woman. Instead of stir-frying cabbage, she parboiled them first. Then it takes a lot of muscle to squeeze out ALL the moisture. I'm a lot older now, and this method looks WAY easier!! I would add more pepper and maybe rice wine vinegar, love sesame oil, but this recipe looks really delicious! Thank you!!!
Oh - and you can freeze them! Fry just until the skin is opaque with some bubbles beginning to form (only if you have used the thicker wrappers). Thaw first, and fry to finish.

The reasons the refrigerated one bubbled wasn’t cause they are refrigerated but because they are egg rolls the other ones are “SPRING ROLLS” whole different ingredients in each one
I made these today and they turned out great! I omitted the noodles, pork, and mushrooms. Added chicken, celery, ginger and garlic. I absolutely love dipping these and the sweet chili sauce. I also prefer the spring roll wrappers rather than egg roll wrappers. Thank you for a terrific recipe even though I switched it up a little!
.... I think your recipe sounds more like what I'm used to eating ! I once lived near a woman who made these similar to what you described, using the chicken, etc but she did use the noodles and ohhhhh myyyyy , so delicious. I prefer the Spring Roll wrappers as well.

Please, if you want yours to be like hers, it doesn't matter if you buy the wrappers from the fridge or the freezer, what matters is whether they say egg roll wrapler or spring roll wrapper on the packaging. She was comparing a frozen egg roll wrapper and a refrigerated spring roll wrapper so yes they were completely different, but it was because of the type of pastry it was, not how it was stored. So long story short, if you want to make ones like hers, make sure it says *spring roll* wrappers x
I really enjoyed the video and appreciate how well organized it was. There was no unnecessary commentary. I have made egg rolls twice since watching. The first time I used a whole 14 oz package of noodles and I ended up with far too much filling. The second time I used about 1/3 of a 14 oz package and had just the right amount to fill two packages of egg roll wrappers. The brand I had contained 22 wrappers in each package. Question: Can I reuse the oil after frying the egg rolls and if so, should it be refrigerated? Thanks again for the video. I am looking forward to seeing your other contributions.

Natasha, the first recipe of yours I tried was the lasagna. The other day I made the lasagna roll ups. I was looking at your chicken marsala recipe today cuz that's what I'm making for dinner tonight. Your egg roll recipe caught my eye. I have been making them over the past 6 months or so. I love the idea of the noodles, and I've never used mushrooms before. I love mushrooms! I will be trying these in the near future!! Thanks for all your awesome recipes and videos!!
My Filipino mom had this basic recipe: sweet white potato, carrots, green beans, mung bean sprouts (toge), wood/mouse ears (tenga ng daga) & chinese parsley -- of course, garlic & onion, sometimes cooked minced pork (but I would substitute with crumbled tofu). Same seasonings except for sesame oil. Chinese parsley is strong so I would sub with celery leaves. Saute everything until half-cooked (frying later will finish it). Throw into a big colander until the liquid drains & everything cools. Wrapping a wet or a hot filling will be a mess -- that's why mom won't use cabbage (too much water). The sweet potato is starchy so it helps to hold things. Btw, a vinegar dip is the best for this recipe. Thanks so much for reading. And thanks Natasha for sharing! I love the exchange of knowledge.

I LOVE this recipe. I add 1 can of chopped water chestnuts, as well as about a 1/2-1 t of celery seed. I just finished the last 3 I had in the freezer from last Winter so I'll need to make another batch - maybe tomorrow.
Thank you. This recipe is so good. I did not have rice paper so I used tortilla and a little cheese and baked them in the air fryer. The filling will be a standard homemade fast food in the freezer from now on. I have no pepper so I used 1 cm grated ginger instead. No onion, but the greens on 7 shallots. I just made my second batch.

Mine from last Winter were covered in freezer "burn" - didn't matter - placed on sheet tray and heated in 375 oven 6 minutes/side - they still tasted fresh and delicious!
So the refrigerated wrappers you mentioned are egg rolls (says on the labels), made w eggs and flower, and the wrappers you used are spring rolls, also labeled as so. But its great to know the difference on how they come out. Thank you

I've made many egg rolls in the past and this recipe beats what I've made previously. I was informed that the crispy egg roll wrappers are referred to as spring roll wrappers which is the lighter, crunchier, and tastier wrapper as opposed to the thick, refrigerated egg roll types. I also made this recipe using lean ground beef for those who couldn't eat pork for whatever reason. It was a HIT! Thanks for sharing this recipe.
Yes thank you for pointing that out. Spring rolls made from rice flour and water. There is no egg anywhere in the delicious spring rolls she just made. It’s like calling sneakers boots but hey they’re both great.
That's true. These ones she has in her photos don't look like egg roll wrappers. When that is added to oil, it looks different. I am not saying what she made was bad, but it doesn't look like an egg roll to me.

The difference between the two is the qualities she talks about she doesn’t like. Egg roll wrappers bubble & are crispy on the outside & a bit chewy on the inside. This is actually the authentic way to make them (in my opinion the best too) make sure your oil is the right temp & not to over fill them if you choose the egg roll wrappers. When using spring roll wrappers most the Asian cooks I know don’t even cook their filling because of how thin the paper is (outside of the noodles)

Love the video! In the Philippines we call them lumpia and my mom likes to add water chestnut for the crunch, bean sprouts, and green beans to ours in addition to what you put. Minus the mushrooms I hate those 😂
Hello gummyhero, I.was surprised to see that eggrolls in the Philipines are also called "lumpia", because I learned this word from our maid who was Indonesian and spoke fluent Malays. She used the word "taugé" for bean sprouts. Obviously, the Malesian language and the Togalog that is spoken in the Philippines must resemble each other, who knows. Anyway, I am a great fan of lumpias and I am glad to have now a good recipe: just adding a bit of taugé to the filling gor more crispiness. I followed the recipe almost exactly! Except for: I didn’t use any meat, and I added couple of slices of pickled ginger in each egg roll, and immediately after I wrapped them, I put the cookie sheet straight into the freezer. Don’t forget the wax paper under the eggrolls before placing the tray in the freezer! Final step: freezer bagged. I like cooking them to order in the air fryer.😁 The two samples I kept for myself tasted heavenly! I dipped them into some home made chilli oil😋

I've been making Egg rolls for almost 40 yrs ( my College roomie was Filipino & taught me)😇. I've never seen Egg roll wrappers in the Freezer section!😳 When I make them there's rarely any left over, but the few times there were I'd always end up reheating them at 425° in the oven to crisp them up. I'll definitely look for them in the Freezer section going forward, so a big THANKS 😊 to you💜💚❤️

I love egg rolls! My mom makes them with ground turkey most of the time! She usually uses the spring roll paper. She will fry the first few batches all the way, then she will cook the rest of the batches halfway so we can airfry them for later. I love the egg roll paper because of the outer bubbles. My mom doesn't add vermicelli to the mix.
Love your show and tell process of making egg rolls. How i do mine, add fresh shrimps grounded and mixed in with the sauteed beef. Like you said, use sesame oil and soy sauce, but also you can use oyster sauce or we filipinos use fish sauce also. These crispy rolls is great for family get together for everyone to enjoy. Made these for dinner tonight. We had 10"x10" wrappers. Used 1/3 cup filling per roll. Got 27 out of the recipe. Family absolutely loved them. Will definitely make them again!
1/3 cup seems to be the perfect amount. Any less and they get kinda thin. Any.more and they want to burst the wrapper.

This is very similar to Vietnamese egg rolls. The only difference is we keep the filling raw. It cooks up nicely in the oil without drying out. I actually made some yesterday. Yummm! Great video!
OMG! I have wondered how to make egg rolls for ages. I have two favorite Chinese restaurants that I go to and get both egg rolls and spring rolls that are delicious! After seeing this, now I MUST try it! I even have an oriental market within driving range, and I'm sure they have all of the ingredients. I bought an air fryer too. Best purchase ever! Absolutely love you Natasha but the part where you're talking about which egg roll wrapper to use is incorrect. It makes zero difference whether you get them frozen or refrigerated. What is making the difference however, is the fact that the thicker bubblier one you showed says *egg roll* wrapper on the packaging, because egg rolls generally do have that thicker wrapping. You're actually making spring rolls in this recipe, and if you want yours to look like the ones she made, it doesn't matter if the wrappers you buy are in the fridge or the freezer, just make sure they say *spring roll* wrappers on them 😊
Edit: I don't normally ask for likes, but I want to make sure that anyone who wants to make these gets the result they want, so if this has more likes, maybe people will be more likely to see it! X
I agree. These are spring rolls. The egg rolls do have bubbles on the surface once you deep fry them but it doesn't change the flavor of a good egg roll... BTW she forgot to add minced garlic and minced ginger when cooking the veggies and a teaspoon of sherry with the soy sauce. They are out of this world!! I haven't tried them with noodles though, it does sound delicious and I imagine they will fill you up. I will definitely have to try making them like that because no matter how many egg rolls I make, my son will devour them! 😋😋
Well, as far as I know, only Chinese style egg rolls uses the "egg rolls wrappers". They are thicker, not as scrispy as the "spring rolls wrappers". Personally, I like the spring roll wrappers because they are thinner and scrispier. I don't how how they came up with the names of the two types of the wrappers, but authentic spring rolls aren't fried and use none of the above wrappers. Spring rolls are wrapped with damp rice paper and NOT fried. 😄

One of our favorite restaurants has Vietnamese cuisine and these are what they serve, and their menu states "spring rolls"..... Every culture has their own way of cooking and the dishes have different names, of course. Asia is no different... 😆
These are soooo good. It takes a bit of prep time and if you use a smaller deep fryer (I get 5 per batch), then it takes a bit. They do reheat so well in the air fryer like Natasha said. They come out crispy and very good. Great recipe!
May I know how many minutes do you reheat the eggrolls in air fryer? what will be the temperature? Thanks

normally you’d soak the noodles in cold water just to give them the flexibility you need to stuff the roll. later they will cook in the oil. you don’t want mushy noodles! great video though, i will be making these soon!😊

I’m Vietnamese and this is one of our traditional dishes. U made is very similar to what my mom made when we were kids except she used cat ear mushrooms which is typical in some Asian cuisine. Now that my own family is plant based, she is exploring different ingredients to make us tasty egg rolls. Love my mom and enjoyed your recipe. Nice job!

no where close to Vietnamese style. WE use mushroom ear which gives it a whole different taste than mushroom and no cabbage at all. Raw ground pork season with little salt and fish sauce and little sugar little pepper little garlic and 1 egg to combine the ingredients. use glass noodle. dip in fish sauce. Her style is more of Chinese style

Oh no another plant base. When the mayor of newyork said he only ate plant based stuff I knew to run from that. Both my grannys ate deer bear and cow and cooked everything in bacon grease and ate salt like crazy! Perfect blood presure and cholesterol. They both had the same birthday, different family. Ok, thats hilarious but completely understandable. It looked pretty great as is.
I learned how to cook homestyle eggrolls from a Chinese woman. Instead of stir-frying cabbage, she parboiled them first. Then it takes a lot of muscle to squeeze out ALL the moisture. I'm a lot older now, and this method looks WAY easier!! I would add more pepper and maybe rice wine vinegar, love sesame oil, but this recipe looks really delicious! Thank you!!!
Oh - and you can freeze them! Fry just until the skin is opaque with some bubbles beginning to form (only if you have used the thicker wrappers). Thaw first, and fry to finish.

The reasons the refrigerated one bubbled wasn’t cause they are refrigerated but because they are egg rolls the other ones are “SPRING ROLLS” whole different ingredients in each one

I made these today and they turned out great! I omitted the noodles, pork, and mushrooms. Added chicken, celery, ginger and garlic. I absolutely love dipping these and the sweet chili sauce. I also prefer the spring roll wrappers rather than egg roll wrappers. Thank you for a terrific recipe even though I switched it up a little!

Please, if you want yours to be like hers, it doesn't matter if you buy the wrappers from the fridge or the freezer, what matters is whether they say egg roll wrapler or spring roll wrapper on the packaging. She was comparing a frozen egg roll wrapper and a refrigerated spring roll wrapper so yes they were completely different, but it was because of the type of pastry it was, not how it was stored. So long story short, if you want to make ones like hers, make sure it says *spring roll* wrappers x

I really enjoyed the video and appreciate how well organized it was. There was no unnecessary commentary. I have made egg rolls twice since watching. The first time I used a whole 14 oz package of noodles and I ended up with far too much filling. The second time I used about 1/3 of a 14 oz package and had just the right amount to fill two packages of egg roll wrappers. The brand I had contained 22 wrappers in each package.
Question: Can I reuse the oil after frying the egg rolls and if so, should it be refrigerated? Thanks again for the video. I am looking forward to seeing your other contributions.

Natasha, the first recipe of yours I tried was the lasagna. The other day I made the lasagna roll ups. I was looking at your chicken marsala recipe today cuz that's what I'm making for dinner tonight. Your egg roll recipe caught my eye. I have been making them over the past 6 months or so. I love the idea of the noodles, and I've never used mushrooms before. I love mushrooms! I will be trying these in the near future!! Thanks for all your awesome recipes and videos!!

These are spring rolls, egg rolls are a different wrapper and also do not contain noodles.
My Filipino mom had this basic recipe: sweet white potato, carrots, green beans, mung bean sprouts (toge), wood/mouse ears (tenga ng daga) & chinese parsley -- of course, garlic & onion, sometimes cooked minced pork (but I would substitute with crumbled tofu). Same seasonings except for sesame oil. Chinese parsley is strong so I would sub with celery leaves. Saute everything until half-cooked (frying later will finish it). Throw into a big colander until the liquid drains & everything cools. Wrapping a wet or a hot filling will be a mess -- that's why mom won't use cabbage (too much water). The sweet potato is starchy so it helps to hold things. Btw, a vinegar dip is the best for this recipe.

I LOVE this recipe. I add 1 can of chopped water chestnuts, as well as about a 1/2-1 t of celery seed. I just finished the last 3 I had in the freezer from last Winter so I'll need to make another batch - maybe tomorrow.

The filling will be a standard homemade fast food in the freezer from now on. I have no pepper so I used 1 cm grated ginger instead. No onion, but the greens on 7 shallots. I just made my second batch.

Mine from last Winter were covered in freezer "burn" - didn't matter - placed on sheet tray and heated in 375 oven 6 minutes/side - they still tasted fresh and delicious!
So the refrigerated wrappers you mentioned are egg rolls (says on the labels), made w eggs and flower, and the wrappers you used are spring rolls, also labeled as so. But its great to know the difference on how they come out. Thank you

I've made many egg rolls in the past and this recipe beats what I've made previously. I was informed that the crispy egg roll wrappers are referred to as spring roll wrappers which is the lighter, crunchier, and tastier wrapper as opposed to the thick, refrigerated egg roll types. I also made this recipe using lean ground beef for those who couldn't eat pork for whatever reason. It was a HIT! Thanks for sharing this recipe.
Yes thank you for pointing that out. Spring rolls made from rice flour and water. There is no egg anywhere in the delicious spring rolls she just made. It’s like calling sneakers boots but hey they’re both great.
That's true. These ones she has in her photos don't look like egg roll wrappers. When that is added to oil, it looks different. I am not saying what she made was bad, but it doesn't look like an egg roll to me.

@@afpwebworksshe shows the egg roll wrapper around 5:34 & says it’s not the one to use & actually uses a spring roll wrap. The difference between the two is the qualities she talks about she doesn’t like. Egg roll wrappers bubble & are crispy on the outside & a bit chewy on the inside. This is actually the authentic way to make them (in my opinion the best too) make sure your oil is the right temp & not to over fill them if you choose the egg roll wrappers. When using spring roll wrappers most the Asian cooks I know don’t even cook their filling because of how thin the paper is (outside of the noodles)

Hello gummyhero, I.was surprised to see that eggrolls in the Philipines are also called "lumpia", because I learned this word from our maid who was Indonesian and spoke fluent Malays. She used the word "taugé" for bean sprouts. Obviously, the Malesian language and the Togalog that is spoken in the Philippines must resemble each other, who knows. Anyway, I am a great fan of lumpias and I am glad to have now a good recipe: just adding a bit of taugé to the filling gor more crispiness. I followed the recipe almost exactly!
Except for: I didn’t use any meat, and I added couple of slices of pickled ginger in each egg roll, and immediately after I wrapped them, I put the cookie sheet straight into the freezer. Don’t forget the wax paper under the eggrolls before placing the tray in the freezer! Final step: freezer bagged.
I like cooking them to order in the air fryer.😁

I've been making Egg rolls for almost 40 yrs ( my College roomie was Filipino & taught me)😇. I've never seen Egg roll wrappers in the Freezer section!😳 When I make them there's rarely any left over, but the few times there were I'd always end up reheating them at 425° in the oven to crisp them up. I'll definitely look for them in the Freezer section going forward, so a big THANKS 😊 to you💜💚❤️

That’s because these aren’t egg rolls they are called spring rolls they are two different things u can only usually find spring roll wrappers in Asian stores

@@maricelportugal3431 i can tell she mixed it with Filipino version and Chinese version and other versions 😂 Panda Express puts noodles. She added mushrooms to make it her own version. But her version looks delish too. I’m gonna give it a try to see if it’s yummy
