- Making a great homemade chocolate ice cream sandwich doesn’t seem hard, since it’s basically just two chocolate cookies with some vanilla ice cream pressed in between, but while the construction isn’t complicated, getting the taste and texture just right is. When chef John said “you don’t want to know where artificial vanilla comes from” my first thought was “maybe I do!” So I looked it up. I regret that. Well played chef John.

A tip I learned & wanted to share when making ice cream sandwiches, to prevent the cookies from cracking place 1 cookie on your fingers (not in your palm) place the scoop of ice cream on, then place the other cookie on top & with a push & slight turn you'll get a ice cream sandwich that's secure & without any cracks in your cookies. I did that with gingerbread cookies and eggnog ice cream once ... it turned out really well.

chef Jon, love ur show, I’ve been called and amazing chef just cause I follow ur recipes. 😂. I use to work at an ice cream store. We would assemble ice cream sandwiches. A tasty trick is to spread room temp hot fudge topping on the inside of both cookies.

I think I will try these with the Black Cocoa I got from the King Arthur Baking Company for making Oreos.
That definitely sounds like the right move. I think I will order some. And some cocoa rouge as well. Because why not? I have some Dröste dutched cocoa from World Market that is great for nearly everything and only about $6 a box, I might make a batch from that first just to set a control. I use it to make Chef John's Chocolate Sour Cream Bundt Cake and it always blows everyone away. You should absolutely try that if you haven't. It works for layers and cupcakes, too. Phenomenal.

@@SuZiKaT22 Heh, I use Droste in that recipe, too. Swapping in some Guinness amps up the flavor, as does some cayenne in the ganache.
Good quality cocoa is a must.

I kept buying really good ice cream for kid's birthday parties. Then one day I bought the cheep stuff, and bam! right back to my childhood. I guess my mom bought the least expensive ice cream she could find. Thank you mom for giving us the best ice cream memories. Now I buy the cheep stuff for my kids. Success.

I have been searching for an ice cream sandwich "cookie" recipe for 2 years that I could use to make these for my little home-based ice cream business.
Every recipe that I've tried has turned out hard, dry, bland, etc. I bet I've tried over 18 recipes. All disasters!!!
Until NOW!! I've added a tbsp. of coconut oil to the batter to ensure a very moist "cookie". It's a huge success! Moist, chocolatey goodness.
Thanks Chef John! And he's right. Premium pure vanilla is a MUST for this recipe! Don't skimp on the vanilla. Also, find a good cocoa. Forget the cheap garbage that is sold in many grocery stores and search for one of good quality.
Does coconut oil make a huge difference? Don’t really feel like altering the tecipe

In grade school we made ice cream sandwiches by putting cake mix in a waffle iron. Very easy and quite tasty. Slice the ice cream with a knife, OG style.
