They had met that fall at LSU and my smart Daddy volunteered to drive my Mama home on weekends so they could get to know each other. He asked her out for Valentines Day and brought her candy, flowers and in his pocket he had an engagement ring! He asked her ON THEIR FIRST DATE to marry him and she said YES! Less than 6 months later they married and were happily married for almost 60 years before he passed away. Growing up, every Valentines Day was a special day in my house too! Pro tip for making chocolates at home, use plastic forks and break out the middle two tines. The chocolate can drain much better. We also throw a 1/4 bar of parafin wax in the chocolate which helps to thin it out and garden a little faster!

We think your ganache siezed because you kept it on the hot burner after you added your chocolate, but it could have been the espresso powder. If it happens again add a little bit of milk and mix it should thin it out. We are scratch cooks and bakers as well. I'm Carmen, I use my daughters UA-cam because I'm not allowed to have one, due to forgotten password. I know (it's a pain), but she lets me use hers, and I'm grateful for it. I'm going to finish watching what comes next.

wow, all these are so neat, I may have to use some of these ideas, and I have ALWAYS wanted to make marshmallow, so I will definitely be making those! I have made LOTS of truffles and chocolates over the years, and I feel I should share my little secret idea with you...try taking a plastic fork and removing the middle tynes so you only have the outer ones, then, use that as your dipper in the chocolate. it helps in removing the excess, and best of all, when you are done you can toss it! lol...everything looks delish! =)

All looks wonderful. Next time with your truffles you should try lining a loaf pan with cling film, pour in the chocolate, smooth out then refrigerate. When firn all you have to do is lift the block out truffles out of the pan and cut into the desired size. when I make expresso (mocha) truffles I roll them in cholate sprinkle and plain truffles I roll in cacao powder

Normally at Christmas my son loves to make cookies and other sweets with me but this past year my oven went out a week before Christmas. So, I told my son we'd make cookies and some other things for Valentine's. Now we both decided we're going to make the macarons from your last video and the marshmallows, Reese's hearts and truffles from this video! Becky, I don't understand why you've said you're not as good at baking as you are cooking because everything I've ever watched you bake you've always done a great job!

Something I've learned when packaging cookies or candy, the paper cupcake and small mini-muffin paper liners work really well. Also protects the cookies and candies from damage if you're packing them to mail. I usually try to buy them at after holiday sales at 50% or 75% off. Stores also have them in candy making supply isles. Just a little handy hint! Thank you so much for allowing us a glimpse into your life along with your garden and kitchen. Hi Becky, I have a suggestion for you when measuring syrup. If you spray the cup with Pam cooking spray, just a bit, plus warm the syrup bottle for 10-15 seconds then measure out the amount needed. It will not stick to the cup and being slightly warm, it will flow better. Have a great day!

I agree Becky, I raised my kids celebrating Valentine’s Day going all out, showing them that that day was about the love ( not just the love of a spouse or gf or bf, but live of family and friends) of each other and we would make a wonderful dinner for the entire family with a fancy looking ( not always hard to make though) dessert. My kids loved it.

I love soaps that are homemade. My son gets his from a store that does amazing soaps. I can’t go in when they are making the soap. I love candles, perfume or flower shops. I get sick just walking in. I love candles in tea cups un scented. Everything you do is amazing.
It's easy to "temper" chocolate for coating cookies or truffles. Save about a quarter of the chips out of what you're melting. Once your chocolate is fully melted, add in the whole chips and stir until fully melted. The chips are tempered and will bring the whole bowl of melted chocolate back into a tempered state. I learned this trick from a chocotier magazine many years ago.
My husband makes homemade marshmallows like this. Our fave is peppermint ones for Christmas. You put peppermint in the mix while in the mixer and once it goes in the pan you dust with crushed candy canes before it sets.
I get the notification Becky has a new video out and have to FIGHT the urge to watch it on my computer while at work. I prefer to get everything done I need to around the house (dishes, laundry, etc) then get my jammies on, snuggle up in bed with snacks to watch Becky's videos.... it's practically a ritual now. I bought the cooking school cookbook on Becky's advice and I'm getting ready to make the chocolate chip cookies and the Glazed Lemon Cookies. I'm gonna box up some valentines cookies for my family members too! 💜
I Love how you do this for your loved ones! I used to do something similar, but being on a very limited budget now, I can still do it a little, just not the way I am used to. I actually thought that I was the only one who did it. I also do a raffle for Easter and the person who gets the special number gets a special gift, that others don't get.
I make buckeyes every Christmas, 200+ this year. Everything looks so good, I want truffles!! I use to dip pretzels, one yr my sister an I dipped 1200+. NEVER AGAIN..lol For dipping we used those large two prong forks, I think they’re used for picking up a big piece of meat while cooking. Another awesome video.🥰

I watched a video a while ago when you were doing freezer meals and you mentioned that you were using glass pans so you weren't throwing the aluminum ones away, I loved that idea! Your a girl after my own heart. I can get messy while making, but I clean as I go so I multi-task to get the rhythm going of creating in the kitchen. My husband calls me a mad scientist in the kitchen because I like to combine or add to recipes to make it my own. I love your lets try this or lets mix this or that. My husband said u remind him of me in my younger days. I have known my husband since I was 15 years so he knows my cooking/baking skills. So that was a compliment to me since I love watching your videos.
Looks yummy, well done. When measuring out flour I use the blunt side of a knife so I don't get flour on my fingers, saves me from having to wipe them all the time.
Hi Becky, I always love your videos. I just wanted to suggest something but you certainly don’t need my help. When making a shape, a ball, a heart, whatever you want covered in chocolate, I do freeze the hearts or whatever shape, but then I put them on a wire cooling rack to cover them. I put parchment paper under the rack to catch excess chocolate to be reused as needed. I simply drizzle the chocolate over the top and then they maintain their shape better. Just my 2 cents. Keep up the great content!
In the peanut butter you could also use graham cracker crumbs. I think the chocolate seized cause your freeze dried coffee contained water. Love the recipes. Love and prayers always have a blessed day ❤️❤️🙏🙏

I find if you add a splash of vanilla extract it creates a beautiful gloss and removes any graininess from the chocolate. My family’s favorite is when I roll them in the ball type sprinkles as it adds a crunch to them. I love them rolled in nuts too.

I agree with you about valentine's. I have always given my kids valentine cards and a small something. I also make Valentine cards and send them. Some people have said they think it is odd that I send them a card when Valentine's is for spouse or boyfriend & girlfriend. I send the cards anyway.

Love these recipes! The graininess is from chocolate getting to hot. Sometimes you can add a little more cream and whisk in to smooth out.

I agree Becky, I raised my kids celebrating Valentine’s Day going all out, showing them that that day was about the love ( not just the love of a spouse or gf or bf, but live of family and friends) of each other and we would make a wonderful dinner for the entire family with a fancy looking ( not always hard to make though) dessert. My kids loved it.

I love soaps that are homemade. My son gets his from a store that does amazing soaps. I can’t go in when they are making the soap. I love candles, perfume or flower shops. I get sick just walking in. I love candles in tea cups un scented. Everything you do is amazing.
It's easy to "temper" chocolate for coating cookies or truffles. Save about a quarter of the chips out of what you're melting. Once your chocolate is fully melted, add in the whole chips and stir until fully melted. The chips are tempered and will bring the whole bowl of melted chocolate back into a tempered state. I learned this trick from a chocotier magazine many years ago.

My husband makes homemade marshmallows like this. Our fave is peppermint ones for Christmas. You put peppermint in the mix while in the mixer and once it goes in the pan you dust with crushed candy canes before it sets.
I get the notification Becky has a new video out and have to FIGHT the urge to watch it on my computer while at work. I prefer to get everything done I need to around the house (dishes, laundry, etc) then get my jammies on, snuggle up in bed with snacks to watch Becky's videos.... it's practically a ritual now.
I bought the cooking school cookbook on Becky's advice and I'm getting ready to make the chocolate chip cookies and the Glazed Lemon Cookies. I'm gonna box up some valentines cookies for my family members too! 💜

I Love how you do this for your loved ones! I used to do something similar, but being on a very limited budget now, I can still do it a little, just not the way I am used to. I actually thought that I was the only one who did it. I also do a raffle for Easter and the person who gets the special number gets a special gift, that others don't get.

I make buckeyes every Christmas, 200+ this year. Everything looks so good, I want truffles!! I use to dip pretzels, one yr my sister an I dipped 1200+. NEVER AGAIN..lol For dipping we used those large two prong forks, I think they’re used for picking up a big piece of meat while cooking. Another awesome video.🥰
I love watching your videos and have gotten so many new things to try! I watched a video a while ago when you were doing freezer meals and you mentioned that you were using glass pans so you weren't throwing the aluminum ones away, I loved that idea! So here's a little secret of mine....when I make candy, I use silicone mats instead of using parchment. Thank you so much for your time and your informative videos!

Your a girl after my own heart. I can get messy while making, but I clean as I go so I multi-task to get the rhythm going of creating in the kitchen. My husband calls me a mad scientist in the kitchen because I like to combine or add to recipes to make it my own. I love your lets try this or lets mix this or that. My husband said u remind him of me in my younger days. I have known my husband since I was 15 years so he knows my cooking/baking skills. So that was a compliment to me since I love watching your videos.

Looks yummy, well done. When measuring out flour I use the blunt side of a knife so I don't get flour on my fingers, saves me from having to wipe them all the time.

I always love your videos. I just wanted to suggest something but you certainly don’t need my help. When making a shape, a ball, a heart, whatever you want covered in chocolate, I do freeze the hearts or whatever shape, but then I put them on a wire cooling rack to cover them. I put parchment paper under the rack to catch excess chocolate to be reused as needed. I simply drizzle the chocolate over the top and then they maintain their shape better.

In the peanut butter you could also use graham cracker crumbs. I think the chocolate seized cause your freeze dried coffee contained water. Love the recipes. Love and prayers always have a blessed day ❤️❤️🙏🙏
Becky, your videos are always so inspiring! I make truffles every winter holiday season. I find if you add a splash of vanilla extract it creates a beautiful gloss and removes any graininess from the chocolate. My family’s favorite is when I roll them in the ball type sprinkles as it adds a crunch to them. I love them rolled in nuts too.

I agree with you about valentine's. I have always given my kids valentine cards and a small something. I also make Valentine cards and send them. Some people have said they think it is odd that I send them a card when Valentine's is for spouse or boyfriend & girlfriend. I send the cards anyway.
