OMG what a great recipe - this is my ideal kind of dish.. In Australia, we're looking at salads for Christmas day, but this would be ideal on a cold cosy Christmas Day like you've got. It reminds me of another of my faves, Root Soup (always gets a guffaw) which just has swedes added (but no clementines) and it's made into a soup.. Thanks Bob !

Hello, great recipe, thank you! I love the idea of adding a clementine to the vegetables. I also find the shape interesting and appreciate the fact that unlike many people you do not discard the core of the parsnips. Waste not, want not! Any idea what I could use instead of cider? My beloved husband is sulfite intolerant and unfortunately cider is among the many ingredients he reacts to.

I love your videos. Presentation is excellent, as is your knowledge of vegetables. I tried this recipe with excitement, but it didn't quite work for me. I'm not a big fan of star anise, and the overall taste was a little bitter.
However, after soaking my carrots in cider, with the clementine and cinnamon stick overnight, I roasted them the next day in duck fat, and they tasted incredible, so thanks for the inspiration. I love tour rotational cuts of veggies, and applied this method to both the carrots and parsnips. I roasted the parsnips in duck fat, adding a little maple syrup for the last 5 mins, and added to the carrots when serving. The combination of the 2 was brilliant, so now I have my methods for Christmas day sorted. Thanks again.

So if I'm cooking in advance to just finish off I put back on the stove for what 5 mins? And can I add honey for those 5 mins
I originally was looking for seasonings or herbs for what I read was Sunshine, a mash of carrots and parsnips. I have a friend not doing potatoes, rice or pasta. I am making a pot roast Wednesday in cider, a bit of beef stock, cider vinegar,, cinnamon,, onions, garlic, sliced mushrooms added at end when roast comes out to rest. Thicken and yum! Roasting butterkin squash wedges and the mash.
Can the mash be made the day before and rewarmed? Am roasting the veg like you but mashing or pureeing after. Don't want super smooth but not over chunky either. Thank you for any advice.

Always best fresh, but you can reheat.
I’d like to try this but what could I use instead of cider?? Can I use apple cider, or balsamic vinegar or malt vinegar or soy sauce. That’s what I have in my cupboard. Please advise as I’d love to try this recipe ASAP. Thanks.
You can use white wine, apple juice or just plain water instead of the cider. Use a little lemon or vinegar to tweak the acidity if using water. Enjoy!
Hi why do u add oil and not butter? please can i ask what oil u used? looks lovely would like to give it a try thanks shaz
Butter would burn on its own, unless you used together with another oil with a high smoke point, such as vegetable, sunflower, rapeseed.

Olive oil is fine.

@@shaz1731 You're welcome. If you want to add a little butter after the oil, you can. The oil prevents the butter from burning.
