Last night I prepared 30 kgs of each on large flat trays. No Steam, no butter, just oil, salt and pepper and honey. The trays ( thick metal,) take all the surface of an MKN oven. Heated the trays and displayed the root veg touching the whole surface. I achieved the consistency and caramelised result you show in the video. Absolutely beautiful and the best result I ever achieved in years. Thank you.
Well well, just found your channel and I've never seen parsnips and carrots done this way before! I was planning on doing something else, but will now give your method a go! Good to think that we can get them done early to the point that they just need finishing off in the oven, could make things easier. I will do it this way this year...!
Just found your channel, love that you do make ahead recipes like this and explain how to get them ready for serving. I'm going to have to give this a go.
Very late to the party well a year off here mate, but have got to say all these videos are absolutely class! Will be following these big time tommorow thanks chef 🫡
I'm using your technique at work for fine julienne rainbow carrots. We are gonna serve them cool with a bbq demiglaze chicken, eloté arranchini and an arugula salad with whiskey vinegarette
Nice video, mate! I made your gravy the other day… tastes amazing. Very different from anything I’ve had before. Looking forward to pulling it out on Christmas Day! Thanks mate 🧑🎄
Loving the recipes. The videos are really informative and going to use lots for Christmas Day dinner. If I wanted to add clementine juice to the carrots would you add with the butter during the deglazing process or when the carrots go in the oven?
Great idea mate! I would say in the pan with the butter. It will need a little longer to reduce to a glaze but I'm betting your carrots will taste better that mine! 💪🏼 Happy cooking and Happy Christmas 🎄
Just discovered your channel buddy, I’m hooked. A query on this particular recipe, could I prepare these the day before? I’m gonna do them anyway, just wondered if I can prep ahead? Love what I’ve seen of your content so far mate…gonna have to binge watch now to catch up.🙄😉😊
@@chefaaronmiddleton yeah had a great Christmas, hectic but enjoyable. Made the orange glazed ham and the parsnips and carrots, both were amazeballs. Thanks chef.😉
Both of those will be more likely to burn than maple or honey, so maybe add it later in the roasting. Pomegranate molasses sounds particularly tasty though!

Could you do the caramelisation in the pan the day before and then keep them in the fridge overnight before doing the final oven stage on Xmas day?
Am I lazy if I do these on Christmas eve and chuck them in the oven on Christmas day? 👀
No you’re a bad cook

Did you do the parsnips the day before?
@@hippofarmer no , I didn’t risk it, I did them on the day.
Chef, did you ever consider to do spoken word on a nice beat while doing your cooking show?
Can I use pomegranate molasses or dates molasses instead of maple syrup p?
Both of those will be more likely to burn than maple or honey, so maybe add it later in the roasting. Pomegranate molasses sounds particularly tasty though!
What Charles said! 😂🙌🏼🎄 ... both flavour will work, and taste absolutely stunning! Hope you enjoy and have a merry Christmas 😃
Was this after masterchef?
Are you wearing roller skates.
You already had a round bit at the top of the parsnips, but cut it off, just peel it and then cut the top off.

Amazing recipe but please stand still you made me motion sick swaying all the time.
Sorry about that.. I get excited when I cook! 😂
