      But dont you have struggles getting some groceries? its sad how many things I need to leave out in recipes because I cant get them :/ Some I cant even order or totally not affordable :(

      @@gangstakatze1613 I'm from Germany too and as long as you are in a bigger city getting the ingredients isn't a big deal. We have multiple Asian supermarkets where I can shop all these for a relative low price.

      @@gangstakatze1613 I am german but live in Texas and there is one a few minutes from my house and a huge one an hour away I visit often. Lots of things can be bought on Amazon though.

    How to store kimchi ? Refrigerate it after mskjng it ?? How long can we keep kimchi without going bad?

      You can eat your kimchi right after making it. Keep it in the fridge and start eating it. It takes about 2 weeks to ferment fresh kimchi in the fridge but you can eat it anytime. If you like to ferment the kimchi quickly, keep the kimchi jar or container on the kitchen counter for 1 or 2 days until it tastes a little sour. Then put it into the fridge and eat it until it runs out.

      @@justinbest9088 Nobody said Kimchi is from China, the food Kimchi is Korean but China has similar types of marinated/ fermented veggies that’re called totally different names. Korean are the ones who started this by claiming all marinated/fermented veggies are kimchi

      I want to add if anyone specifically said kimchi is from China that’s dumb as fuck. Marinated veggies can be found in so many different cultures and kimchi specifically is from Korea.

      @@justinbest9088 this is just taking advantage of people who can’t read Korean/Chinese. In Chinese the translation of kimchi is just the translation of “Korea” + “fermented veggies” and I’m pretty sure that is what started the whole miscommunication. And I do see arguments about because China has a longer history and Korea had been strongly influenced by Chinese culture in the past, they “stole the idea of kimchi from China”.
      However, this whole thing started by Koreans commenting on a Chinese cooking video saying that person is making Korean kimchi when that person was just making fermented veggies. Since China and Korea does exactly get along you can see that’s how everything started to get worse and both sides made stupid comments including “kimchi is Chinese”.

    I really want to try Kimchi at least once in my life, but the problem is there is always fish products to the kimchi and I can't eat it since I'm allergic to sea food in general. So is there a way to make Kimchi with no fish product?

    Maangchi introduced me to traditional Korean kimchi, which I discovered I LOVE. A few weeks ago, a friend of mine messaged me, asking if I'd be willing to teach her. So I sent her your "Traditional kimchi recipe" video, and once she had the ingredients, I walked her through it via Zoom. Last week she told me she already needed to make the full batch LOL. I think she may like it. ;)

    I love how you make yours using the whole pieces of nappa cabbage. When I try my hand at making kimchi, I want mine to look like that. It is such an attractive way to serve it. Eating with the eyes as well as nose and mouth.

    last year at the start of the pandemic,i followed your traditional kimchi recipe from your video posted 7 yrs ago. At first, it was hard, but after 3 tries, i got the hang of it and would say,am now an expert of it. i started from not so much gochugaru to now spicy kimchi coz everytime i make a batch (i made it as part of my meal everyday), i develop resistance to spicy gochugaru. I live in the Philippines,and most kimchis here are made for Filipino taste,which are less spicy and it tastes bad as if they were not fermented( lacks ginger,onion, garlic flavors),so i dislike it. i only eat legit Korean kimchis. Thank you for your recipe Maangchi, Kimchi is one of the healthiest food in the world, and one of the reasons i lost weight is because of your Kimchi Recipe!!!

    This recipe is simply THE BEST, better than all the rest. Leave for a few days on the kitchen bench to get it fermenting, then to the fridge. Great probiotics for your gut.

    Back in 2003/2004 I was only 18 yo, had no fam or friend in a foreign country (not South Korea), my Korean flatmate/s took me under their wings, they took care of me, I learned about kimchi and how they made it, it was really like a special day when all of them made kimchi, I also learned to like the taste, this was before Kpop/Kdrama booming worldwide, I remember that time when ppl asked and I said my flatmates are from South Korea only few ppl knew about the country. Everytime I eat kimchi now it reminds me of my kind Korean flatmates and the good memories, or I will eat kimchi whenever I miss them and the good memories 💗

    I am a Korean living in Seoul. Surprisingly, it is exactly the same as my old mother's kimchi recipe, who lives 500 miles away in her hometown. I am glad and grateful as a Korean for introducing Korea's unique traditional kimchi rash to people all over the world.

    Delicious! I made Kimchi yesterday just by using local citrus juice black pepper, garlic onion chilly powder, salt, sugar fish sauce. I use sweet spicy chilli ketchup as substitute for rice flour! It is delicious!

      My wife use to make waterm r long kimchi.....just the white part....no green, no red.....just the wite rind. My next favorite is "oy"-kimchi...(cucumber, with chives, moo and shredded carrot stuffed in side)

      I have a brand New sink.. its clean but I could never! I bought some XXL stainless steel bowls for when cooking for a crowd that I use. I paid under $20 each at my local Asian market.

      Kimchi never goes bad if you refrigerate it. It will keep fermenting in the refrigerator. When kimchi ferments, it tastes sour, so as time passes, the kimchi will get more sour. Press down the top of the kimchi occasionally with a spoon so that the top part of kimchi is submerged in kimchi brine.

    Because of you, I always have up to 4 jars of kimchi in my fridge! 😅
    But I wanted to ask: do you also put meat in your kimchi?
    I saw one contestant on a Korean show that used fresh pork belly, simply rolled in kimchi leaves, and I tried it: delicious! 🤤
    Used to eat 1 piece of meat each week to see how much time meat could stay good, and finished it more than 2 months later! Last time, roasted in oven, it was melting in the mouth! 🤤🤤🤤

      Fish sauce is a common condiment here in asia. You can buy fish sauce from asian markets.

    How long does it have to stay before you eat

      You can eat your kimchi right after making it. Keep it in the fridge and start eating it. It takes about 2 weeks to ferment fresh kimchi in the fridge but you can eat it anytime. If you like to ferment the kimchi quickly, keep the kimchi jar or container on the kitchen counter for 1 or 2 days until it tastes a little sour. Then put it into the fridge and eat it until it runs out.

      @@user-xq7sq9or7eoh no I never had this issue but you made me worried about it and I just checked and it’s all ruined! I was about to make kimchi. At least it’s not the most expensive ingredient in the world. I’d recommend getting a tight sealable container to store it after opening to prevent this

      it's 사찰김치 = temple kimchi
      새우젓(Salted shrimp) is commonly used but not a must, you can use only 멸치액젓(anchovy)or 까나리액젓(sand lance) or 황석어젓 or... any salted fish

    My favorite foods are Korean, Chinese, Japanese, and Italian.
    Maanchi is a treasure. A rarity!
    From the Internet and specifically UA-cam I have learned MOST Korean women have no idea how to cook traditional Korean meals like the top restaurants.
    Their fusion weirdo Korean dishes taste terrible.
    Maanchi is one of the great exceptions and her recipes are authenic.
