I remember my nana making this when I was a child. It was one of my father's favorites. She also used to make pickled watermelon rind and spiced cantaloupe. Nothing ever went to waste. Thanks for the memories. I will have to try making this.

We make our jams and jellies in half pint jars also.for the exact reason you mentioned. Got a watermelon cooling in the fridge right now and now I know what to do with the rind. I say this every time, but my goodness I love your windows!

We even have our own little food forest and a mini vineyard in our suburban home. I never thought to consider myself a homesteader.
