2 large eggs at room temperature
1 teaspoon (5mL) vanilla extract
1 cup (100g) unsweetened coconut flakes
2 tablespoons (14g) coconut flour
⅓ cup (45g) chopped walnuts
⅓ cup (45g) chopped pecans
¾ cup (120g) sugar-free chocolate chips
-Freeze for 15 minutes.
-Bake at 350°F (177°C) for 15-20 minutes until top and edges are golden brown. Let it cool completely.
Yields 15 cookies (macros per cookie)

I made a double batch and substituted pecans for hazelnuts and they came out fantastic - oh I added 2 minutes - baked 22 minutes to get them a little more browned and crispy when cooled. The ones I made tonight were with Pecan and Pili nuts and they were really good. The pili nuts adds a different flavour.

These look so delicious. I don't bake a whole lot (period) with the sweetener you, and many use, because it affects me so bad. Is there another type of sweetener that I could use In baking? Thank you!
ALLULOSE!! just know it’s about 70% as sweet as regular sugar so you may need to add a little extra by volume, depending on your sweet tooth

Hello Maria, yes you can use shredded coconut and it’s fine if you use melted coconut oil. You will chill the dough so using melted oil would be fine.❤️

Delicious. The only problem I have is that as they are baking it’s either the butter or the coconut oil leaks out and the cookie sheet is soaked. They still taste delicious but I don’t know what the problem is.
Hello Betty, it’s totally normal. As shown in the video my parchment paper was like a mess after taking it out from the oven. All the oils would be reabsorbed by the cookies after it cools down.🥰😊
