INGREDIENTS
2 cups (200g) blanched almond flour
⅓ cup (65g) granulated erythritol
zest of 1 large lemon
⅓ cup (80g) melted salted butter
1 large egg yolk
Use ⅔ of the mixture for the crust and bake at 325°F (163°C) for 12-15 minutes.
2 large egg whites
pinch of salt
1 teaspoon (5mL) lemon juice
⅔ cup (135g) granulated erythritol
1 ⅔ cups (400g) plain Greek yogurt
⅓ cup (35g) blanched almond flour
¼ teaspoon (0.5g) xanthan gum
powdered erythritol for dusting
Use the leftover dough for the crumble.
Bake at 350°F (177°C) for 30-35 minutes until top is golden brown.
Let it cool completely and refrigerate for 1 hour before serving.
Yields 16 servings (macros per serving)

I also made this cake today because I'd bought a large container of plain Greek yogurt for one purpose and had a lot left over. Plus, we have guests coming for the next few days! My plan is to offer the cake as a breakfast item, along with fruit, cereal, eggs, etc. It has a wonderfully fresh "lemony" taste I was not expecting, and I was so pleased with it! The texture of the crust and the crumbles marries well with the yogurt filling, too. It all went together very easily, and I'm sure I'll be making it again. Update: Made this yesterday and it was AWESOME! My house smells amazing! Love the lemon flavor from the crust and crumble and I was absolutely blown away with the yogurt filling. So smooth and just the right amount of sweetness. We all enjoyed a slice for the afternoon treat and indulge again after dinner. My son loved it too, now there’s only 5 bars left for today! I made it this weekend with sour cream. The zest really comes through. It never would have occurred to me to use whipped egg whites in a filling like this, but it works beautifully. I might use less sweetener next time, the taste is great and not overly sweet, but I think I can feel a sharpness from all the erythritol.

I have never baked with yogurt before and I may have had the cake in too long. Will try it again, but mine came out crumbly. I have a bad habit of over-baking keto desserts and I need to stop that! So will definitely give this another shot. My husband LOVES the flavor of it, so bright and fresh. Really easy to knock together and is the perfect cold summer treat. We want to try it with blueberries next. Do 30 minutes if you're in high altitude like me, people!
