Looks good and great timing with zucchini coming on in the garden. Prep tip: Line strainer with a tea towel, add zucchini, salt then when ready lift out tea towel and give zucchini a good squeeze. The zucchini is dryer and method is easier than using the wooden spoon.

I made this last night. My only changes were to use a vegan egg substitute, and dried parsley (half the measured amount). It turned out very well: a subtle, gently flavored, comfort-food dish, quite enjoyable!

I liked this receipe just as much as the artichoke receipe I want to try these as appetizers with the sauce on the side, instead of the usual crudite or cheese board Many thanks
I made this tonight for my sister, brother in law and me, it was soooo good..I screwed up though I added the chicken broth all at once, forgetting the directions were to add it slowly, and I used the smaller holes side of the grater, oops, but it was still super good! I will definitely make this again and will follow those directions.

One tasty vegetarian recipe is from Jamie Oliver: its pasta, with zucchini cut into pieces and grilled in the pan in olive oil, combined with fresh mint, lemon zest and grated cheese (parmesan or pecorino, but I guess manchego would also work). Another great way to use zucchini.
Yet another comida deliciosa! Can't wait to try it out with the zucchini already in the fridge. We had a superb mussel dish in northern Spain a few years ago...any ideas for us to replicate it?
Last night's dinner included these zucchini "meatballs." They were fabulous, making 16 nice sized balls. Unfortunately, there were no leftovers. We just could not stop eating them!!!

Another tweak was that I saved the water drained from the zucchini to use in the broth for the sauce.
Did you make a flax egg? I'll be trying that when I make this recipe.
What can I use as a substitute for the egg?
