Homemade Scalloped Potato Mix (Better Than Betty's) Using Dehydrated Potatoes ~ Stocking Your Pantry

Skip the box and make your own shelf stable Scalloped Potato Mix. You control the ingredients, no artificial flavors, colors or fillers. This is a delicious way to use your dehydrated potatoes.
Bulk Mix:
2 c. powdered milk
1 c. white flour
1 c. corn starch
1/2 c. dried onion flakes or 8 t. onion powder
1/2 c. dried chives or parsley flakes
2 - 3 T. seasoned salt
2 T. dried mustard powder
1 T. black or white pepper
1 T. garlic powder
(Add 1 c. powdered cheese to make Potatoes Au Gratin)
To make scalloped potatoes:
1/2 c. mix
3 c. dehydrated potatoes
1 c. cold water or milk
2 c. hot water
4 T. butter
For long term storage Scalloped Potatoes in a Jar (or other air tight container)
1/2 c. Mix
3 c. Dehydrated potatoes
Single batch:
3 c. dehydrated potatoes
1/4 c. powdered milk
2 T. flour
2 T. cornstarch
2 t. onion flakes or 1 t. onion powder
1 T. dried parsley or chives
1 t. salt
1 t. mustard powder
1 t. pepper
3 c. water
4 T. butter
Add 1/4 c. powdered cheese to make potatoes Au Gratin or add fresh shredded cheese to taste
Potatoes Stroganoff:
Add 1 lb. browned ground beef, 1 c. fresh sauteed mushrooms, 2/3 c. sour cream and 2 T. Worcestershire Sauce to above mix before baking.
To use sauce mix with fresh potatoes:
use about 1 1/2lbs of sliced fresh potatoes, 2 cups of milk or water (or combination), 1/2 c. dry mix.

I found potato’s for .99 for 5 lbs, so I grabbed 20 lbs, 5 for fresh use, and I dehydrated 15. I also made this sauce mix, I absolutely love it. I’ve bagged up several little sets for gift bags I make up for a neighbor who has been having a hard time and has nothing in her pantry. I am going to be looking for other dried food kits I can add to her pantry. If you have others I’d love suggestions! You really are a blessing and have made it easier for me to build my pantry and help others with theirs. Thank you
for scalloped potatoes: Preheat oven to 350.
Grease pan and add potatoes, DISSOLVE MIX in the cold water or milk. Pour mixture over potatoes. Add hot water, stir. Add pats of butter on top. Cover with alum foil and let sit while oven preheats. Bake 30 mins covered. Uncover and continue baking another 20 to 25 mins or until browned. Take out of oven and let sit for about 10 mins before serving.

I just bought 3 boxes of dehydrated potatoes from Sams club to vacuum seal and put in storage. I’ll have to try this recipe with them . I love the dry milk and cheeses from Hoosier Hill Farms.

I love this recipe! For all of my other lactose intolerant friends out there, I buy powdered soy milk and use that in addition to adding 1/2 cup of nutritional yeast. I also love the seasoned salt and sometimes will use Slap Yo Mama Cajun Seasoning instead in addition to using Next milk so it's creamier. So good. Thanks for sharing!

I followed your video for dehydrating potatoes last fall when potatoes were in season and I bought bulk, then made this dry mix for the scallop potatoes and had everything in the cupboard as emergency food....I finally decided to try making it and wow...this was the best scallop potatoes I've ever made. Great idea, I have some freeze dried potatoes I made from a 50 lb bag of russets, I’m going to make this sauce mixture & have some potato stroganoff tonight for dinner.
The stroganoff idea would be great with canned ground beef! 😉. I dehydrated a ton pf potato slices for long term storage. This mx is just what ai need! And here you are. 👍🏻

One of the people I subscribed to makes homemade cream of something dry mix all you add is the cream milk mushrooms bits or chicken pieces or celery. It’s the way to go like you’ve done. I’ve got to give this a try.

just got done making this. VERY GOOD! I was worried it was to liquidy but when done and let it sit 5 - 10 minutes it does thicken up nicely. I didn't have dehydrated onions so just added some fresh. I also added some Ranch dip/dressing mix (dry). Will def make again. Thank you.

Okay, this looks good. I dehydrated potatoes several years ago, and the have used the cubed ones a lot in soups and stews. Wonderful. I tried the slices with a sauce recipe from another channel, and was less than impressed. When finished it tasted like raw lumpy flour at the bottom of the casserole and the taters were not really re-hydrated to my liking, so the rest of the slices have been sitting for a while. Your ratio of flour to corn starch looks much better, and the amount of liquid seems more reasonable. I will still try a single batch before making a bulk batch, but I think I see a light at the end of the tunnel. And BTW, you could also dehydrate your own cheese for long term storage. It's really not that difficult, and even if all you do is sprinkle it on popcorn it's a winner.
I just made this recipe and I agree much better than Betty Crocker. Also I can always have this on my shelf I don’t have to buy it from the store and it’s cheaper. Thank you for the recipe.😋

i ran across a deal for a name brand sliced dehydrated potatoes that included a packet. I separated the potatoes from the packet and sealed them for longer term storage. I paid something like 79 cents per box that serves 6. It sure beat waiting on the dehydrator and the time put into prepping the potatoes.
Hello! I just found your channel and I love it! I dehydrated 10lbs of potatoes yesterday and made the bulk batch of sauce. I am taking these on a remote camping trip where refrigeration will be very difficult. We will not have access to an oven. Do you have a suggestion for making these on the stove top? We will have cast iron and camp stoves. I am also planning to take on a backpacking trip. I’m so excited to have these with us! Thank you again!
You can Vacuum your jar to remove air with a food saver lid sealer adapter that fits canning jars. Also, there is a mason jar lid that has a valve so you can remove the air and to un-lock the seal you just press the center button valve.

Thank You for your time making the video. I do wish people would use weights instead of dry measurements. Potatoes per cup are really hard as they vary the amount you can get in a cup. But thank you so much
If you use white pepper use very little because it is hot.I made my potatoes and used skim and they were so good. Better than fresh ones.

Looks delish. Now you've got me checking out dehydrators on Amazon. Question: Can you seal those jars with a jar sealer to give the mix and potatoes an even longer shelf life? Would that extend the shelf life of the dry mix past the "use by" date??? I discovered you last week and have been binge watching all your video's, esp the canning ones. You can certainly vacuum seal your jars but it doesn’t extend the shelf life bc of the powdered milk. I would still use the dry milk date as my use by date to be safe 😊

I have dehydrated vegetables this past 6 months and learned alot. I'm not comfortable in doing canning. Do you have any additional recipes with dehydrating vegetables with DIY sauce mixes, something similar to scalloped potatoes?

What was in your cast iron skillet before you added the potatoes? Some kind of herbs or spices? I thought that was in with the mix??
When you do the hamburger helper version can you cook it on the stove top instead of the oven, and if so, how long does it usually take. I'm thinking of this as my husband likes hamburger helper for a quick meal and this might be something I can do to make sure he has a healthier version with far less salt than the boxes.

Hi, I’m sorry to tell you that corned beef isn’t safe for canning 😞. According to the experts the brining process can interfere with heat penetration during canning.

Some are using dry milk power that isn’t instant. Do you know how I can find that.? I only see dry instant in walmart

I just had Betty Crocker scalloped potatoes with my dinner tonight, then I found this recipe. I bought a 5 gallon bucket of dehydrated potatoes from Augustine Farms so now I know what I can use it with. Will be trying all your recipes.Question please when I open the bucket of dehydrated potatoes can I put them into canning jars and re-vacuum sealed them in the jars.Im an elder and, it would take me forever to eat all those potatoes.thank you

If I wanted to add powdered cheese to the jar of mix so I have an au gratin mix, how much would you recommend adding. Or, how much powdered cheese would you add to the 1/2 cup of mix when making a single serving? Just dehydrated my potatoes today and excited to try this potato recipe later this week.
I’d add 1/4-1/2 c. That’s really a matter of preference so I’d start with 1/4 c and go from there
This is my very favorite Prepper Pantry meal, and I have 5 Mason jars of this wonderful meal stored on my shelves. Is it safe to add another dehydrated root vegetable to this meal? Dehydrated turnips, parsnips, peas, or even rutabagas might add some interesting variation to this dish. I'm just wondering if it is safe to combine these ingredients.

I explain in the video, I always do 1 c. Cold water or milk then 2 c. of hot water. The mix dissolves better in a cold liquid
