I was helping my niece with canning today--we each got a new Presto Precise electric canner, she is new to canning so I came home & looked up some of your videos to share with her because I was telling how easy to follow your videos are. BTW that Presto Precise is the bomb!! I'm 72 and been canning my whole life and have several stove top canners which are still prefect for big jobs but this automatic one is super for small jobs--it only holds 8 regular mouth pints (7 wide mouth) or 5 regular mouth quarts (4 wide mouth) but if that is all you need to put up at the time it is so GREAT!! Try it you will love it. The only negative thing I can say about it is: they have a made up sign/emblem on the box that implies it is USDA approved; another UA-camr called the USDA person and they said they did not approve it because they don't have funds at present to test anything. Presto was very careful in their wording and came as close to making that claim as possible without actually saying it, they actually say it meets USDA standards! It's fairly expensive at $250 from the company and more than that from Amazon but I think I'll use it enough to make it worth the money.

I found one, but not sure the channel can be trusted. Thank you in advance. By the way, just canned 12 pints of herbed chicken following your instructions.
my husband like good old cheap yellow mustard, but lots of times I come across recipe that call for dijon mustard. I am definitely going to put this on my canning list. Thanks
I made a very similar recipe and put it in my Vitamix blender. It still had a somewhat grainy texture. It looked smooth when I canned it but the final result looked grainy. Delicious either way, almost out, time for another batch!

I also was wondering if you think it would be possible to grind the mustard seed in a spice grinder before you add the vinegar/wine to soak to make the finished product smoother? I tried 5 different blending appliances and the best was my magic bullet but it was still not as smooth as I would have liked.
Love the recipe! I've been canning mustard for a few years now and have come to an impass. I can't achieve the same bite/hotness out of mustard when I heat it up (research I've done says the same, the more mustard is heated, the more bite is lost), but also can't get ahold of any canning techniques that doesn't involve heat. Any comments or suggestions on this?

I bought my steam canner after watching your videos so I guess you inspired me so much to try canning and havent stopped.I do have a question . Can i buy a rack for my steam canner and double stack pint jars? Also can I use lemon juice in my canned salsa instead of vinegar or even better yet citric acid and pressure can it. I appreciate any help you can give me. I canned salsa today with vinegar and did not care for the taste. Thank you and God Bless!!!
Hi! It is not recommended to stack jars for steam canning as it has not been tested for safe processing. You may safely substitute bottled lemon juice for vinegar in any recipe. I’m not sure about pressure canning salsa. I cannot find safe guidelines for doing so. 😊

Hi there. I’ve just made this and put it in the canner. I found the preliminary taste test to be rather bitter. Is that normal? Does it settle down after canning? Maybe I got bad seeds
I just made it today. My seeds did not soak up all the water in the bowl with lid. But we went thru process and honestly, I tried a bite and did not like it. I don't have a strong mixer either and didn't like the strong bitter flavor of lumpies. Lol. My husband said it wasn't bad. I will only use it for cooking I guess. I will wait to see if Itmellows. Ball Book should give some hints how hot this is too. Have a great day!

You could add some chipotle pepper powder safely. I’d have to research a recipe that includes honey 😉

You can add dried spices. I wouldn’t add honey bc it wasn’t tested that way. Add it when you open a jar 😊

It is bitter until it cures a bit. The longer is sits the better. It will mellow in flavor

Does this recipe mustard taste like the Grey Poupon, where it has a little kick taste(at least to my taste buds)?
It’s similar to Grey Poupon but more mild IMO

You could just sub water but the flavor will be different. The alcohol cooks off during the simmering time if that makes a difference 😊

It should thicken more the longer it sits on the shelf. I just opened another jar and it was perfect 😊
