  • Tender chicken in an Asian inspired sauce. Make it with or without the Bourbon, delicious both ways.
3 1/2 - 4 lbs. boneless chicken breast or thighs, cut into bite size pieces
    1/2 c. apple juice
2/3 c. low sodium soy sauce
    1/3 c. ketchup
    2 T. apple cider vinegar
    3/4 - 1 c. chicken stock
    1/4 c. bourbon (optional)
    1/2 c. brown sugar, packed
    1 t. red pepper flakes
    3/4 - 1 t. ground ginger
1 t. each of onion powder and garlic powder
Fill hot jars leaving 1" headspace. Debubble, wipe rims, center lid and add rings to fingertip tight.
Pressure can pints for 75 minutes, quarts for 90 minutes adjusting for altitude as follows:
    Weighted gauge Dial gauge
    0-1,000 ft 10 11
    1,001-2,000 ft 15 11
    2,001-4,000 ft 15 12
    4,001-6,000 ft 15 13
    6,001-8,000 ft 15 14
    8,001-10,000 ft 15 15
This recipe CANNOT be safely water bath or steam canned.
Allow jars to cool undisturbed 12-24 hours, remove rings, check seals, wash jars and store in a cool dark place.

When your recipe doesn't make enough jars for the canner, you can always can water to complete the load (even if you reuse lids and pour it out.

@@bethdavis6863 A few videos I have watched, the person canning, always had dried beans handy and threw in a pint or quart of dried beans to even out the batch of jars and that way they also when they were done, had a nice jar of canned beans to go along with that mean or a future meal.

Thank you for this recipe! 🤗 I just made a HUGE batch and have some tips if that's okay. This is a great recipe but when multiplying the recipe be aware that some ingredients you may not want to do that with. Such as red pepper flakes and the soy sauce. It can make it TOO hot and TOO salty. I did mine x6. Had to add more brown sugar and I also put in about a cup of fresh honey to help curb the heat. The heat really isn't all that noticeable until after you simmered your meat in it for a little while before canning it. Which means that once it's canned, even if you didn't simmer your meat in it first, it's gonna get hotter during the process. I was not able to snuff the extra saltiness. However, I think if doing more than a double recipe only do half the amount of soy and instead use packaged chicken broth for the other half. I made 2 family pkgs of boneless skinless chicken breasts and 1/2 a family pkg of thighs. It was about 13- 14 lbs. To have enough broth I x6 the recipe. It IS great recipe but maybe for the reasons I mentioned that's why it makes so little. Oh btw, I did use Jim Beam Bourbon (apple bourbon) 😀 I thought the apple would compliment it nicely and it did 😉 😄 As far as the salt goes I think when I serve this I'm gonna serve it over bland rice or potatoes and vegetables with having had no salt whatsoever added.. I believe that should balance it out.. Next batch I'm gonna do as I said in my suggestions.

      Update!
One of the quart jars didn't seal so guess what I had for dinner? 😁 Here's what I did; I cooked a Success Rice Boil in the bag Jasmine. Put the jar contents in a medium pot, threw in a handful of julienned tricolor bell peppers and a handful of onion. Heated to boiling and thickened with cornstarch. Placed steamed broccoli florets to one side of the plate and rice to the other then spooned the bourbon chicken with gravy across the middle of them. It was absolutely delicious!!! The jasmine was a perfect compliment to the chicken as was the broccoli and it didn't taste salty at all 😁

This looks So Good! And betcha a million bucks it tastes even better! You are making a lot of work for me to do pretty soon! Lol! But canning is one chore I don't mind doing! And it's not even a chore really as I quite enjoy it! Very calming unless I have two others asking why this and why that about both the process and the recipe! Lol! Have a Great weekend Pretty Girl! You and the fam stay safe and healthy!

Hey, Carol! It’s Carol! This looks really good. I can see myself eating it with rice! So, I googled bourbon chicken and Wikipedia says it originated on Bourbon Street in New Orleans. Funny how it’s at Chinese restaurants, but it is!!! Have a nice day!!

Hi Carol, thank you for all your wonderful UA-cam videos. I was wondering if it would be ok to substitute butter for the olive oil when browning up the chicken?

Got a 10 lb bag of chicken leg quarters for 4.90. I figured this was a good opportunity to learn how to debone chicken thighs. I ended up using some of the leg meat also to get to 3 1/2 lbs. Mine made 4 1/2 pints. It'll make at least 2 meals a jar, if not 3. Pretty good deal if you ask me! I'll take that big bag of bones and can some chicken broth next. Thank you for another great video!

Thanks for another delicious recipe, Carol. The sauce is outstanding--have you ever canned it alone? I'm a sauce lover and would enjoy having additional containers of this one among my diy condiments! Thanks!

No I haven’t canned it alone. I’m not sure where to get a proper processing time. For this recipe I’m using the time for processing chicken

I canned this recipe last week and we had some for dinner tonight. Delicious! Thank you.
I added a diced onion to the sauce - was that OK (safe) to do?

Clear jel is good for pie filling and in the books for years for canning not corn starch. Can be used for thickener in soup and stews,

I made this canning recipe this weekend and I wanted to ask what you like using to thicken the sauce when reheating to eat. I wasn't a fan of cornstarch, as I didn't like the way it altered the delicious sauce. Any other suggestions? Thank you so much! I love your channel!!💜💜

Here’s a quick shortcut that eliminates the oil used to brown. I place on parch paper in the oven 375 for 15” only. Easy and done in a batch. I’ve made with chicken, delicious and of course with the bourbon, and today I am doing turkey! I’ll stop back when it’s done to tell you how it is.

How many does one pint feed? One person? Two? Thanks so much, I made quite a bit of this and it is just me and my hubby. Thanks for all your videos.

Depends on how big of eaters you are and if you serve it over rice or noodles. It will usually feed two 😊

This sounds sooooo good!! I do have a question however, do you think this recipe would be safe to can with raw pack chicken? Meaning heating up the sauce then pouring over raw chicken to pressure can.

Oh my gosh that looks sooo good ; ) I'm a brand new canner (only canned 4 pints of ground beef) but I want to try this next. After I simmer the chicken and sauce for 5 minutes, can I use a slotted spoon to put the chicken in then pour the sauce in, I'm worried I won't get the chicken vs sauce proportioned right. Thanks, Lj

Hi everyone, Can I can just the broth without the chicken? What I was thinking is can the broth in small jars. I want to make dipping sauce with this. I'll add clear jel to thicken...
