    Great video as always! Just an FYI. Years ago I needed starch for some reason. Knowing potatoes had a lot of starch, I got out my juicer and ran some potatoes through it. To my surprise, the pulp that was left was shredded potatoes that looked just like hash browns. I threw some in the skillet and they were fast and perfect with the moisture already removed.
    Yes, God is good! Do what you can from where you're at, with what you have!

      @BigRedNavyChick , No, I was thinking of the starch and not the solids at that time. Of course when we got the shredded potatoes we had to try them in a dozen different ways so unfortunately I can not tell you how to keep them over but I'm sure Hiedi can

    I slice or dice them, blanch them for 3 to 4 minutes depending on cut, then pop them in cold water, salad spin them, then place on silicone sheets in my Cosori which I have had for years. I dehydrate them until crisp. They rehydrate well in soups or stews or using them for things like au gratin potatoes.

      @@poodledaddles1091 it gets the water off and helps them dry faster. I do this with all the vegetables I blanch prior to dehydrating them

    Good morning Miss Heidi, I was gifted a lot of potatoes and church the other night and I told my husband that I was going to dehydrated them. I had no idea how I was going to do it and then the 1st feed that came up on my tablet this morning was YOU. What a blessing you are! I przy you have a wonderful day!

    Hi, I dehydrate, frozen hashbrowns and frozen cubes when I find them on sale so much faster for me
    Right now I took 6 pounds of potatoes, washed them and baking soda water and scrub them poked a hole in them and put them in my instant pot and I’m cooking them on eight minutes to partially cook them. Then when they’re partially cool I run a knife across it and the skin just rolls right off. I divide those into mashed, sliced and potato pancakes and freeze or dehydrate
    Often I’ll microwave a potato for my lunch or two for our dinner….air fried potatoes are our favorite along with mashed.
    I bought 30 lbs of potatoes for $3 a bag two months ago but now they’re $4.50 for 5 lbs.
    I’m hoping potatoes go on sale around thanksgiving as last year…..
    Saw a sad scene yesterday at a local farm store. My husband was outside in the parking lot talking to an employee when another came up complaining that two people were hovering around and that they STEAL from dumpsters……it’s considered trash…..it’s being thrown away and they looked homeless…….my husband looked at the woman and said Lady you have never been hungry have you? What harm are they causing you? We believe do not judge less you be judge, or walk in another’s shoes…..
    It’s shameful what is thrown away and not given away because stores consider it a bother to do so.
    The homeless in our town can get abed to sleep in at the shelters if they’re lucky but only for the night then they must leave at 7 am and not come back till 6 pm and wait to see if there’s a bed. Most often they camp along the River banks and in the woods….yet our government consider migrants more valuable and put them up into hotels

      Do you make a hole in the center of the potato to allow the heat to penetrate better? Great idea. An apple corer comes to mind for a quick job. When I cook cut potatoes for salad, I boil them in a small amount of water, maybe 1/2 inch in the pan. There is a rich potato broth at the end which I pour into a mug, add a little bouillon powder for a great savory drink. Those little cores would add some extra richness to the boil water, making a potato soup as a byproduct.

    I shredded them into a bowl of water and future fresh ( citric acid) they came out perfectly.

      A little vinegar would also work. The way I learned how to make half raw potato dumplings is to shred the raw taters into a cloth-lined bowl of water with a squirt of vinegar. You then wring out the water with the cloth, then add the other ingredients.

    I admit....even though we had a good harvest of taters, my son wanted to try storing them like Grandpa did in a metal barrel buried in the middle of the Carriage Barn.
    Needless to say that blew my Potato Dehydrating experiment out of the water.
    But, Sam's Club came to the rescue with Idaho Hash Browns in the BIG waxed boxes On Sale, WooHoo!
    I brought 6 boxes and repackaged in Wide-Mouth Quart Canning Jars and Vacuumed Sealed them.

    Great info. I have some citrus that got ahead of me in age so I have been using them in the garden to deter bugs. I dehydrate shredded potatoes. I usually do a 2 minute blanch in boiling water then put them in the dehydrator. I also have purchased a large bag of hashbrowns in the freezer section at the store and put them in the dehydrator as soon as I get home. Fast and economical too.

    Howdy Heidi! I make hash browns O'Brien by parboil/blanching my diced taters, then I add diced green AND red dehydrated sweet peppers, and dehydrated diced onions. (you could use jalapenos for green, or Marconis for red). I then layer them in with amounts I want and generally add a 5 gram desiccant if needed for a short time to help ensure the "snap" quality of my dehydrated goods. Mark, date and store in jars.

    I do my potatoes the same way. I also wait until frozen hash browns go on sale and all you have to do is put them on the racks and dehydrate them. They come out light and perfect.

    I had good success blanching my potato slices before dehydrating and they turned out great. I did, however, make a mistake with my hash browns and totally forgot to blanch them. They were the ugliest shade of grey I have ever seen!!! YUK!! The taste was also off tasting more like raw potato so that batch got thrown out!!! I do recommend blanching potatoes for sure!!

    I did hash browns from baked potatoes. That's how I do hash browns anyway and one of the few ways I like potatoes. The dehydrated don't need to soak very long before hitting the skillet too!

    Hi Heidi!
    I make shredded hash browns but freeze rather than dehydrate.
    I peel Russet potatoes and boiled until almost tender but not totally cooked. After cooling, I hand shred mix with corn starch and press on cold sheet pan,sprayed with olive oil and freeze. Then I cut into squares like regular hash brown patties. Then I air dry to serve.

      Good idea, I'll try it for dehydrating. But just to be sure, did you mean "air Dry" or "air Fry"? D and F are next to each other on the keyboard, and could easily be mis-typed and still be right words in this context, but be quite different processes and outcomes.

    I did the hashbrown potatoes. I grated the potatoes then blanched for about 5 min. I drained them really good and blotted any excess water with a paper towel. Then I placed on trays and dehydrated till crispy. I did set the temp a lot lower because of how small they were. I actually did them at about 75° to keep from cooking them. I swapped the trays around a few times. They turned out great. After they cooled down I put into Mason jars with an oxygen absorber.

    I make the shredded taters for hash browns. I use my kitchen aid shredder attachment and it takes no time at all. Blanch and strain. They dehydrate very quickly. I occasionally make hash browns but our favorite way is hash brown casserole, like you would have at Cracker Barrel.

    Oh goodness. I processed Tomatoes last weekend and made sauce. Then dehydrated the skins, just put them in a jar..Thank you ! I had clue to vacuum seal the powder!!! 😲 going to do that right now!!!

      They did that to me a few years ago. I been planting my potatoes in plastic totes/planters. In the enclosed garden I used fabric pots and potato grow bags. Not a single potato was touched this year.

    Regarding hash browns, during lockdown the farmers in neighboringv Idaho pulled into Spokane with a tractor trailer of potatoes they were giving away because they had lost many of their commercual outlets and peooke were haveing trouble finding food. My son brought me about 50 pounds. I canned some, dehydrated most and froze some. I only had a fine shredder at the time, so the dehydrated shreds didn't work out very well. Next time I dehydrate shredds I will definately use a thicker shred. The slices and dices were great!

    i do like dehydrated shredded potato .. not for hash browns but for potato pancakes ... i admittedly do not dehydrate myself (yet) but i do buy idaho brand dehydrated shred in bulk and then vacume seal them to keep them safe and sound ....

    I’ve purchased the pre shedded frozen hash brown potato’s and come home and put them straight in the dehydrator. Works beautifully and rehydrates well.

    I haven't tried this myself yet, but heard that you can make french fries (and other fried potatoes) more healthy by reducing the amount of acrylamide forming by lacto-fermenting the chipped pieces a day or two. The fermented fries should dehydrate OK, maybe par-boil first.

    I always vacuum seal my dried veggies and herbs to assure freshness. I also add an oxygen absorber per jar.

    Great information as always! I sure hope someone chimes in about hash browns. Since we got our flat top grill (outside) we are loving the hash browns made on it. Note - use ghee for an excellent flavor! I currently grate raw potatoes and flash freeze them, but would be interested in trying to dehydrate them. I'm thinking about grating raw and soaking a bit in cold water to remove starch. Then salad spin to dry and then bake in the oven and finally dehydrate.
    Also, Proverbs 6:6-8 is one of my favorites! God bless!!

      Would HIGHLY recommend blanching/cooking/parboiling the potatoes, or you will be greeted with the black/grey potatoes. Did that on my first 10 pounds, by NOT precooking them...good luck.

      @@lynnheinlein4296 Actually, the key for me was to soak rinse them VERY WELL to avoid the black/gray issue. I've made the mistake not soaking them once and yes, ended up with the darker potatoes.

    Hi, I'm from the UK 🇬🇧 and would love to make your husbands sealer jars. Is there a instructional video or a way I can buy an instruction leaflet for it. In the UK we only use bought or Reusable jars from shops so the US ones dont fit our jar lids. Thank you in advance.

    I baked several potatoes, sliced and dehydrated. When I attempted to rehydrate them the texture was not good. I even tried cooking with poor results. Any advice is appreciated.

      No, I have not, I was going to this year but decided to not pressure can much of anything to enable me to put up more things as my shelf space is getting very sparse

    I tried to dyhrate shredded potatoes and it was a flop. I love shredded hashbrowns. Maybe I will attempt it again.
    I love drying herbs and items i forage for. I like to vaccum seal all the jars unless it is something I am using alot of.
    A few weeks ago, I opened a can of tomato sauce that had expired awhile back. It looked fine, so used it. Our system just requires expiration dates, but common sense can tell you if it is safe to use.

    I just bought a Nesco dehydrator at a thrift store. Bit it's all plastic. Do you think it will affect my food? I haven't used it yet.

      I try to use the cotton fabric whenever possible as things will dry faster and I do not worry about turning the heat up higher with those. I use the silicone sheets for anything liquid or drippy like meats can sometimes be but yes, you can use the silicone if you prefer

    I did hash brown dehydrated potatoes. Blanched them only a couple minutes then shocked them in cold water and put them on a towel to dry then in my dehydrator at 120 for the first 6 hrs and reduced the heat to 115 . I’m not sure that is necessary to reduce the heat but that is what I did .
    We loved them and I use them in soups for a finer potatoes . ❤❤ I am going to try using baked potatoes next time. Following your recipe to dehydrate potato’s ❤❤

    My grandson is crazy about sell by and use by dates. He sneaks in and cleans out my fridge to get rid of everything with expired dates. Even jelly. I’ve tried to explain it to him n he thinks I’m going to kill myself. I told him we didn’t have use by dates growing up n we had to learn how to tell if something is bad. I buy organic milk which doesn’t spoil easily. He dumps it every time. GEE WHIZ. Drives me nuts n cost a fortune.

      Find articles on how many foods can be kept past expiration dates. My daughter in law is the same. She wastes so much food!!

      There are nutrients in the skin, yes but I would not say most but those who would like to leave the skins on certainly can.

    Wondering about dehydrating roux made from clarified butter so the powder would be shelf stable? So just making the clarified butter and flour part first, dehydrate, store, rehydrate with broth when ready to use?

      Would ghee work as well as clarified butter? Ghee is butter heated to boiling point to let all the water (about 20%) cook out and the milk solids sink to the bottom so you end up with pure butter fat (plenty of videos to show how to do it). You could dry the flour just to remove any residue of moisture, mix into the ghee and put the paste into a jar, then vacuum seal to remove oxygen, the main enemy of fat.

    How about cooling by turning temp down to lowest setting then take out. Less time outside before canning up.

      No, especially if you vacuum seal which prevents rancidity in fats. I vacuum seal all kinds of high fat foods to prevent rancidity and preserve freshness such as nuts, meats with fat, and more

    Archeological finds are always showing how preserved foods last a very long time and are still edible if not necessarily in the best condition. It's not uncommon to find massive balls of bog butter more than 2000 years old in Ireland. It is considered edible though it is not advised to eat it. It's more of a cheese. Heck, yak cheese is dried on the roofs of Mongolian yurts and carried around and stored in bags over the year. Of course, the climate makes it possible to do that, but still, I think we are too sanitized as a culture.
