I was glad to see this video come up recommended for me. I was thinking about it because my friend sent me some of his maple syrup. So I made this today and my family and friends loved it. I't was quick and easy enough to have 3 skillets going at once Thanks Jack. I've wrote down many of your dishes on recipe cards and put them in my Mom's recipe box. I think she would have liked me doing that especially since my Grandpa had restaurants and she grew up working in them. But my Mom couldn't cook unless she made enough for an army. My Great and Great Great Grandpas cooked for logging camps and their recipes are for huge amounts also. Mostly the meats they used were wild game the loggers brought in.

Yes. It's too sweet. The onion/sweet potato pancake is like a latke and would be good with something savory or fruity. The maple syrup on the chicken is fine in a small quantity (as is the bourbon, in a larger quantity :-) ) but with the brown sugar, too? And then at the end he pours the cooked syrup all over it. It might as well be pastry.

Your concern is real. Commercial kitchens like the one you see here should be designed from fire-proof materials, like the iron stove (no paint!) and stainless steel. If you want to flame a dish the way Daddy Jack does you'd be better off using your BBQ grill outside. If you have to do it indoors, have a fire extinguisher handy.
I know when he poured that bourbon in and I saw the smoke and the fire in the steam I just wanted to smell it all mixed in with the butter and the sugar oh my gosh
Yup very burnt. He's heat is always on too high and burns almost everything. Burnt leftover scraps on pan are toxic in fact anything burnt is toxic. I am a chef believe when I say it's burnt.
