He reminds me of Dave Lancto, owner of Pollock Street Deli, New Bern, NC. He taught me just like this guy. I started off washing dishes and ended up running the kitchen. Some of my best culinary memories back in the 90's

I am not a chef. But I cook everyday. I can tell without any fear of being incorrect that this guy can cook. The boxed pasta and the thing about the portioning out the tray would surely make Ramsay cry, but I don't care. The point is that the guy showed us how to make a really good sauce.

Its a simple, American classic, but its Macaroni, a bechamel, and A CRAP LOAD of cheese. Very simple. Bake it till its golden brown on top, and boom, awesomeness on a plate.

I'm posting this 9 years later so I don't know who will read this, but this man knows lobster mac and cheese. I don't know much about Connecticut or New England, but they do know how to cook this dish.
I think one of the best parts of this video is @8:58 when he just casually uses his spoon to pick up the lid and place it on the pot. That's the kind of thing you only learn from practicing your trade and cooking in the same kitchen for years

This is just to echo and add gratitude for a Chef. Forcing the white sauce to pink is pure genius, Chef Daddy Jack. I do have a rather difficult question for Chefs that may not be answered for a long time. In a beautiful dish like this, what if a Diner asks for seconds? I think in some kitchens, some are offended if you don't ask for and finish seconds. It's a tough question I think, to serve again if requested. I would answer yes, to serve more wine for time for the Kitchen to prepare to send out the second helping. If the Diner finished first and second, but asked for a third, to finish it, I don't know. But at any rate, if I can ever get up to New London, I see there's a place for really good food. I wish you all the best.
Everybody gives American cheese such a hard time, but I doubt that they know much about actual American cheese. The Kraft singles and squeezy cheese isn't American cheese. It's the infamous "cheese food." I can confirm that American cheese gives things a good flavor. It has a good salty, strong, cheesy flavor.
I'm sure there are some home cooks watching this and appreciating it, But speaking as a professional chef this is the type of cooking that is a lost art, Bare hands no hair nets, no measurments.. Just decades of experience, Yes cooking can be taught But this is a style you will rarely see and unfortunately is going extinct.
