Pickled Okra Recipe
Ingredients:
3 1/2 pounds small okra pods
1/3 cup pickling salt
3 cups water
3 cups vinegar
Garlic cloves (1-2 for each jar)
Red cayenne peppers (1-2 for each jar)
Celery seeds
Mustard seeds
Dried Dill
Turmeric
Ball Pickle Crisp
Instructions
1. Wash okra pods and hot red peppers under cold running water: drain.
2. Trim stem ends off okra pods, being careful not to cut pods open.
3. Cut hot red peppers in half or cut the ends so the vinegar can seep into the pods.
4. Peel garlic.
5. Combine salt and vinegar in a pot and bring to a boil.
6. In a hot canning jar, add 1/2 teaspoon of each - celery seeds, mustard seeds, dried dill, turmeric and 1/8 teaspoon of Ball Pickle Crisp.
7. Pack okra pods into hot jars.
8. Ladle hot pickling brine over the okra leaving 1/2 inch headspace. Remove air bubbles. Clean jar rim. Center lid on jar and adjust band to fingertip-tight.
9. Place jars on the rack elevated over simmering water (180*F) in boiling-water canner. Repeat until all jars are filled. Process by lowering the rack into the simmering water. Water must cover jars by 1 inch. Adjust heat to medium-high, cover canner and bring water to a rolling boil. Process pint jars 10-15 minutes. Turn off heat and remove the cover. Let jars cool 5 minutes in the canner. Remove jars from canner. Do not retighten bands if loose. Cool 12 hours. Check seals. Label and store jars.
Love how you opened with the finished pickle! This enticed me to watch the rest! When i heard that crunch!!! I was hooked!
Thank you Sarah and thanks for watching.
Most thorough detailed and pleasant video presentation. Can’t wait to make my own. Thank you!
Glad it was helpful!
Love pickled okra with fried buffalo and catfish! Good eating‼️
I love pickle Okra, pickle beets etc.
Thank you for watching my videos and especially for leaving a comment. That helps me out a lot to get my channel moved up on the algorithm.
This is done the right way
Thank you so much for watching.
Absolutely love pickled okra. I live in Idaho & it's so hard to find in markets & farmer markets, so trying to grow my own this year.
Best of luck!
I just discovered your video and I am so glad I did! I am addicted to crispy pickled okra and wanted to try it myself.
I planted several okra plants and now I’m cutting it daily!
Anyway, your instructions were perfect for me.
I opened my first jar to make sure they tasted like I want and they did! Perfect!!
Thank you!!
This is it, folks! This is how you do it!
Thank you!
I love pickle and yours sounded really crisp. I like that grow over next year so that I can make some.
My mouth started watering. Now I want some pickled okra!!! When I was little I could eat a whole jar
Great instructional video.
Thank you!
Growing okra, here to learn. Thanks!
So nice of you
Thank you. I just picked some small okra and will try your method. I like that I can keep it on the shelf for maybe up to a year. Thanks.
Glad you enjoyed it. Have fun making them.
Thank you, this is the best video I've seen to pickle okra. I love it fried..
New subscriber and fan.
Looks great. I canned okra pickles last year with a recipe that turned out awful. Used apple cider vinegar and pickling spices...takes my breath away to try to eat.
Please try this recipe and let me know how it turns out. I did several jars this week and they are crunchy and delicious.
@SadiesKitchen if only our okra plants were doing well...this garden is not feeling good so I don't know what I'll have to work with
Wow! I’ve searched so many pre 30:54 sentations on UA-cam on how to pickle okra. I find yours to be one of the best. Your calmness and thoroughness really relaxed me and now I am ready to go! Thank you so much!! ❤
❤❤❤!
Ms Sadie, can you pickle red okra and get the same taste? Im growing okra, green spineless and red okra. I can't wait to try your recipe for pickling for some friend-giving!!!
Absolutely, yes you can. I had 4 jars and wish I could show them to you but my husband and daughter ate all of them. They were delicious and crunchy. Go for it!
I love pickled okra. Don't think I can do this though.
Thank you for watching my videos and especially for leaving a comment. That helps me out a lot to get my channel moved up on the algorithm.
You didn't include the brine measurements? Or I didn't see it! Thanks for sharing.
You will find the recipe in the description.
Tap the word “more”. The recipe should come up. If you still can’t get it, I can email it to you. Thanks for watching.
How long do they stay in the water bath?
I didn’t leave them any more than 10 minutes. If you leave them longer, okra will start to cook really fast and you don’t want slimmy pickles.
Beautiful canned pickled okra
Your calm voice and professional presentation makes me want to do this and feel that I can do this. Thank you!
Great video! Question! I noticed your brine looks brown, Did you use apple cider vinegar?
Yes I did
Yes, apple cider but you can use either one.
Can you save the left over brine for later use?
I would not use the leftover brine to preserve a new batch. However, you may wish to use it to marinade meats or make homemade salad dressings. Thank you for watching.
@@SadiesKitchen thank you
Aren't those jars massively cooling off the entire you are time you are adding ingredients? How do you keep them hot for the canning process?
You want be able to keep the jars hot the entire time. Make sure you are not putting hot liquid in a cold jar. It’s okay for them to cool some. The main goal is to make sure the jars are sanitized. Thank you for watching my video. I appreciate you so much.
@@SadiesKitchen Thanks for the feedback!
Can I use frozen okras for this recipe?
No, I would not recommend using frozen okra. I think it may turn out to be slimmy.
HI. WHEN YOU OPEN A JAR DO YOU NEED TO REFRIGERATE IT
Yes, refrigerate. The colder, the crunchier.
Thank you for watching.
THANK YOU FOR YOUR HELP @@SadiesKitchen
Why they turned yellow? They supposed to be green
How much turmeric did you use?
Taste better than they look....
Thank you for your unwavering support.
my mouth is literally watering, i'm a fiend for all kind of pickles...I'm a fan of vinegar and/or fermented. I only recently started growing Okra, I have just enough to make one jar of quick pickled okra...so i'm looking around for recipes. Thanks for the info~
Go to your local farmers market. The recipe is under the video. Tap the tiny (v) which is the description button to the right. The recipe will pop up.
Beautiful cans of pickle okra. Your calm, but professional presentation makes me feel like I can do this and want to do this. Thank you !
Thank you so much.
Thank you for this video! I am making this first thing tomorrow morning and excited about it!!
That’s awesome. Let me know how it turns out. I am making strawberry and raspberry jam Monday morning. Costco had an abundance and had a one day mark-down for $2 a package. Wow! What a deal.
It's recommended that turmeric be paired w/black pepper, as the piperine helps gut absorption of turmeric. Also, I love your demeanor & calm, informative teaching style in this video! I love to see the old school methods kept & revised as needed. Much appreciated!
Very good video, learned much, thank you!
I have an 1 acre garden. I have never been able to make crunchy, pickled okra. I am trying this recipe this year. Yours looks delicious and sounds very crunchy.
It works. Enjoy the crunch!
Love it!!!! It makes for a great snack
I love okra! Boiled with butter, fried, pickled, gumbo, homemade pork stew or vegetable soup, etc. Thank you so much for this wonderful video. ❤
Thank you so much and thanks for watching.
What is the pickled okra brine
I love pickled Okra but mild. I put my spices on the bottom. I also use chop sticks to help debubble. Good video! I was looking for a teaching video to send to my sister. She's never canned. Thank you! ❤
I am happy that you enjoyed it. I am a retired teacher and have enjoyed canning since I was 16. It’s so rewarding and therapeutic. Thank you for sharing.
Love pickled okra
Yum
@SADIES KITCHEN what's the shelf life for pickling okra?
Hello my friend. As long as your jars sealed you are safe to keep your okra for years. The vinegar also ensures a longer shelf life. I have kept okra up to 3 years and it’s still perfectly good.
The okra has so much air inside it, I think? Since I added the Brian, the bubbles will not stop coming out at all. It keeps coming out of the okra.
I think you cut the stem end down too low. Sorry for just now responding.
@@SadiesKitchen is it still safe to eat? I have them jarred still unopened
Pickled okra is my family's favorite snack on our boating days.
I'm doing this this week I got some okra from imperial in wapatow Washington!
@@chriscook9695 Great. Let me know how it turns out. My best to you and thank you for watching.
I've never tried pickled okra before but I do plan on trying this recipe so I can!
You are in for a treat!
Pickled Okra I love it !
Can you show me a way to make green tomato pickles please? Can’t wait to make my own pickled okra❤
Yes, I can. Go to my Channel and watch Episode #28.
I love pickle okra
Good video. Putting spices & peppers on the bottom is how I do mine. If mine float,I always add small Okra or onions. I never bathe more than 10 mins.😊
Thank you and thank you so much for watching. I think I will try onion next time. That sound delicious.
Another AWESOME video. We didn’t make pickled okra growing up, only blanched it to freeze. My dad and I could eat it prepared in any form.😊 Enjoying Mr. Productions technical skills.👏🏾👏🏾👏🏾
I have a jar for you and one for your Dad.
You are so sweet talking with your followers.
Thank you Kathy. What an awesome compliment! Please subscribe to my channel. It has been a struggle to get followers.

I loved how you “Reflect “ concerning what you could have done after the results of your pickled okra. It reminds me of Nation Board Certification process. When I went through National Boards, I oftentimes had to reflect on my lessons after teaching mug students. What went well, what could I have done to make the lessons for my students experience better etc. I love your video! Now, I watch to view any other videos you have on caning jelly. Thank you!
Thank you so much. Now, you try doing one thing.
Go to your local farmers market. The recipe is under the video. Tap the tiny (v) which is the description button to the right. The recipe will pop up.
How long to you let them set before eating your results? ❤️
I left these for one week because I was so impatient and wanted to taste them before I did a second batch. They were so good. But, try to wait for 4-6 weeks for real.
It's better to prepare it in a faster speed and write the ingredients with the measurements . What type of vinegar you are using? Do you have to boil vinegar first?
How long do you blanch the garlic?
Sorry! Just saw this. No more than 10 minutes.
What book was that
Ball Cookbook of Home Preservation! Not sure how I missed your text.
Ball
What is the name of the canning book 📙
Ball Book of Preservation. I was trying to send a picture but I see that I can’t. I show the book at the very beginning of the video.
Awesome- love this video and need to purchase this book! ❤️😊. Thanks for the step-by-step process. Now, I’m ready to get caning.
Yes, go to Amazon and purchase the book and have a ball canning. It’s very therapeutic.
This is the best video I have ever seen on pickled okra! Thank you! Is the picked crisp the same as Alum?
Alum has little crispness effect on quick-process pickles like this recipe. I use alum on my cucumber pickles and it has to sit for 7 days and then rinse.
Calcium chloride is marketed as “Pickle Crisp“, “Xtra Crunch“, or simply “calcium chloride“ and it does not take very much.
They both will create crisp pickles but using pickle crisp is best with okra.
Thank you so much for watching and for your kindness.
