VANILLA FLAVOR
Ingredients:
1 qt. Vodka of your choice (yes, you can use rum)
10 Vanilla Beans - I ordered Madagascar from Amazon
Directions:
1. Wash beans and make sure whatever container you are using is clean and sanitized.
2. Slit about five of the beans with a knife and leave the remainder of the beans whole. If you don’t want to see specks of vanilla bean in your flavor, place all beans in the bottle of vodka whole.
3. Screw top on tight and shake well.
4. Tuck away in a dark space and shake weekly. No problem if you forget. Just shake the next time you remember.
5. Note: I make a jar of vanilla every year. While I am using one, the newest bottle is aging. I used after a year but you may wish to start using sooner.
WHISKEY GLAZED PECANS
Ingredients:
1 quart of unbroken halved pecans
1 cup sugar
1 teaspoon of Cinnamon
1 teaspoon Allspice
2 teaspoons vanilla
2 Tablespoons water
1/3 cup of whiskey, bourbon or rum.
Directions:
1. You can order the glazed nut roaster from Amazon. They have several different name brands. I got mine years ago from a hardware store. There will be directions and recipes that will come along with whatever roaster you select.
2. Heat the roaster and place the nuts in the cavity.
3. Practice moving the nuts around. You may have to use a spoon to assist at first as seen in the video.
4. Mix the spices in a bowl along with the granulated sugar.
5. Add the sugar mixture to the nuts and start roasting (turning).
6. After turning a few times, add the water and liquor.
7. Keep turning until all liquids have evaporated.
8. You will start to see the nuts glaze.
9. Remove nuts to a cookie sheet to cool when no liquids are visible.

    Do I need an actual water bath pot? Can I just use one of the deep pots I have with a flat rack to keep the jars off the bottom? I want to pickle okra, and I have everything except the special water bath.

      @@grod9950 I hope I am not too late. You do not need a water bath canner. You can use a stock pot. Just make sure there is something in between the jar and the bottom of the pot like a towel or a rack. Wishing my best for you and your canning project.

    It's recommended that turmeric be paired w/black pepper, as the piperine helps gut absorption of turmeric. Also, I love your demeanor & calm, informative teaching style in this video! I love to see the old school methods kept & revised as needed. Much appreciated!

    "...slows down the aging process." Say no more! If that's true, I'll definitely be buying more blueberries! Lol. That looks great. I'm so tired of all these recipes that call for cobbler to be made with a cake-like mixture rather than pie crust. If I want to make blueberries with something cake-like, I'll BAKE A CAKE, you know what I mean? Yours looks much better!

    Aren't those jars massively cooling off the entire you are time you are adding ingredients? How do you keep them hot for the canning process?

      You want be able to keep the jars hot the entire time. Make sure you are not putting hot liquid in a cold jar. It’s okay for them to cool some. The main goal is to make sure the jars are sanitized. Thank you for watching my video. I appreciate you so much.

      Hello my friend. As long as your jars sealed you are safe to keep your okra for years. The vinegar also ensures a longer shelf life. I have kept okra up to 3 years and it’s still perfectly good.

      I would not use the leftover brine to preserve a new batch. However, you may wish to use it to marinade meats or make homemade salad dressings. Thank you for watching.

    pickle crisp contains calcium chloride which is not very good for you. Too much can cause serious problems,--google it.

      Alum has little crispness effect on quick-process pickles like this recipe. I use alum on my cucumber pickles and it has to sit for 7 days and then rinse. Calcium chloride is marketed as “Pickle Crisp“, “Xtra Crunch“, or simply “calcium chloride“ and it does not take very much. They both will create crisp pickles but using pickle crisp is best with okra.

    The okra has so much air inside it, I think? Since I added the Brian, the bubbles will not stop coming out at all. It keeps coming out of the okra.

      No, I would not recommend using frozen okra. I think it may turn out to be slimmy.

      That’s awesome. Let me know how it turns out. I am making strawberry and raspberry jam Monday morning. Costco had an abundance and had a one day mark-down for $2 a package. Wow! What a deal.
