Hi chef 👋, not really that much of a cake expert with a sensitive palate, I came across different red velvet flavored powder brands for my beverage business, so how is a red velvet flavor cake really SUPPOSE TO TASTE LIKE? I know its a variation of a chocolate cake, but without any cream cheese component added, should the chocolatey flavor be more pronounced or it should only be a hint of it? Should the color be bright red? Or darkest hue of red?
Chef, I followed this to the letter and the 160C for 15mins didn’t work. The outside looked nice but the middle was not moist, it was still raw and watery. I tried another batch. This time cranking the heat up to 175C for max 18mins. That was what your website says. It was perfect. Cooked and moist.
