Hello - if buttermilk is not available, for every 1 cup of buttermilk needed, substitute with 1 tbsp white vinegar or lemon juice plus enough regular milk to make 1 cup. Hope this helps! 😊
Hello kurt, can you please make pandan cake with cream cheese frosting next time? Your ube red ribbon cake is the best. Everyone loves it! Thanks for sharing your talent. God bless😊😍
Hi Annalyn. If cake flour is not available, measure 2.5 cups of all purpose flour into a bowl, then remove 5 tbsp. Then add in 5 tbsp of cornstarch. Sift this together. And it will act similar to 2.5 cups of cake flour. Hope this helps! :)
Hello, thanks for your comment! I'm happy to hear your ube roll turned out well. Please let me know how your Red Velvet Cake turns out. Lots of love from NYC ❤️😊
Hi Nabil - thanks for your comment! Glad you like my recipe videos. If buttermilk is not available, for each cup of buttermilk needed, you can use 1 tablespoon of white vinegar or lemon juice plus enough regular milk to measure 1 cup. Stir, then let stand for 5 minutes. You can also use 1 cup of plain yogurt or 1-3/4 teaspoons cream of tartar plus 1 cup regular milk. Hope this helps!
Hi Cam. If cake flour is not available, you can substitute with all purpose flour and cornstarch: for every 1 cup of cake flour needed, add 1 cup of AP flour, subtract 2 tbsp, then add 2 tbsp of cornstarch, and sift this together. This will act similar to cake flour. Cake flour has a lower protein content compared to AP flour - it creates a more tender texture, finer crumbs, and better rise, which are ideal for red velvet cakes like this. And substituting with AP flour + cornstarch combo imitates that. Hope this helps! :)
Hello kurt, Im going to make ur red velvet cake tomorrow. Just want to ask if I used 4 cups of powdered sugar for the frosting, is it very sweet? It seems like 4 cups of powdered sugar is a lot. Thank you so much😚
Hi Nello. Red Velvet cakes are traditionally made with cream cheese frosting, which tend to be sweet. That said, you may make any changes that you see fit, any adjustments that will make this dish more enjoyable for you :)
Hi there, thanks for the recipe. How long should I bake for 6 inch and 8 inch cake pans?. Can i use same ingredients measurement. Same as the ube overload cake?. Thank you
Pei Chiu Hi Pei, thanks for your question! For 6-inch pans, I’d say check with a toothpick around 18 min, and if still not done, put it back in oven and keep checking every 5 min. For 8-inch pan, I’d start checking around 24 min. You can use same ingredient measurements for 8-inch, but you might have to spread between 3 pans for the 6-inch. Hope this helps! 😊
Can i used all purpose flour....instead of cake flour.....and for frosting...can i use all purpose cream...instead of whipping cream or heavy cream? Thanks

Made this yesterday for my friend and she loves it.She will order again for their xmas party. Thank you so much for this recipe. Can I make this as cupcake as well with same recipe?thanks in advance x
Hello - thanks for your comment! I'm glad you like this recipe and that your Red Velvet Cake turned out well. Yes, you can make cupcakes using this recipe. The cooking time will be about 15 to 20 minutes at 350 degrees Fahrenheit for cupcakes. I'd say test it at 15 minutes with a toothpick. If it's not yet cooked keep checking every 2 minutes. Hope this helps! :)
Hello Kurt, I like to make this recipe. It really looks delicious and I appreciate how you demonstrated how to make it. I have some questions. For the frosting is it really necessary to add 2 tbsp of flour? just asking this dahil hindi siya dumaan sa pagluto. When it comes to flour like when I make polvoron ay niluluto kong mabuti to avoid stomach problem. For the baking pan, I can't find 9" what I got is 8" I just purchased it cause I really need to bake this cake next week. Can I use it? Thank you so much for sharing. 😊❤️and God bless🙏 .
Hi Teresita - the raw all-purpose flour in the frosting is to thicken it and make it more stable. Just a little bit of flour (or cornstarch) in the frosting makes it a little stiffer and smoother, and helps it hold (not melt) at room temperature. But don’t add too much, otherwise the texture will become too grainy. Generally, it is not safe to eat raw flour or cornstarch etc. But with this very small amount (2 tbsp) it should be safe. And it's optional - so if you prefer not to put it in, you can leave it out, and the frosting should still work. And 8" pans should work for this recipe. Hope this helps! 😊
Hi kurt i just done making the recipe of your red velvet overload cake for my niece bday, but i just made my own design i will send u a picture if i get a chance with my niece eating the cake....love love love ty kurt and God Bless u more
Hi Catherine, thanks for your question! Yes, you can half the recipe and make a smaller cake. I'd recommend using 6 inch round cake pans, and literally dividing all the wet and dry ingredients by 2. That should make a batter that fits well into a 6-inch pan. I haven't tried it myself, but I'd recommend baking at the same temperature (350 degrees Fahrenheit) and checking with a toothpick around 18 minutes, and if it's still not done, put it back in the oven and keep checking every 5 minutes. Hope this helps! :)
Yes, you can definitely make red velvet cupcakes with this recipe. I haven't personally tried it, but I'd estimate this batter would make about 24 - 30 cupcakes, depending on how high you fill the cupcake liner. Hope this helps! :)
I do appreciate this wonderful cake recipe, your tutorial method is so easy to understand....and well explained...ty kurt God Bless u may you have more and more subscribers.....
Hi Akai - if buttermilk is not available, for each cup of buttermilk needed, you can use 1 tablespoon of white vinegar or lemon juice plus enough regular milk to measure 1 cup. Hi Kurt.. i am looking for a red velvet cake till i saw your tutorial.. great explanation.. hipe you could also make a version of red ribbon’s lecheflan roll cake..

Stir, then let stand for 5 minutes. You can also use 1 cup of plain yogurt or 1-3/4 teaspoons cream of tartar plus 1 cup fresh milk. Hope this helps!
Thank you so much for giving time to answer my questionz, ive tried already ur ube overload with halaya and becomes our favorite specially my daughter, caramel salted cake really good..can't taste lke this with other cake..looks so sweet but....if you taste it...exact amount of sweetnest... and i' ve tried the mocha..the sponge is taste good but ive failed in frosting...i will try it again.....thank you so much for sharing ur recipes,my apology for asking some ingredients which is not suitable for my badget sometimes....i am just a begginer...Godbless you both..😊😘

You can also use 1 cup of plain yogurt or 1-3/4 teaspoons cream of tartar plus 1 cup milk. The recipe needs the acidity from both buttermilk and vinegar. If you're substituting buttermilk with milk + vinegar, you still need the 1 Tbsp vinegar added at the 1:53 mark. Hope this helps! :)
Hope this helps! 😊

Hello again! I just made this and it’s super moist and I love it! I just have a question, why is that when you beat the egg whites you didn’t add sugar or cream of tartar? What is the difference?
Hi Taira, I'm glad your Red Velvet Cake turned out well! The sugar + cream of tartar technique used in the ube / mango / choco mocha cakes are for a chiffon cake. For chiffon cakes, the structure of the cake is created by the air bubbles trapped into the egg whites when you whip it into the meringue mixture. The air bubbles are what leaven the cake when it bakes. Cream of tartar and sugar helps to stabilize the egg whites, so that they whip up and gain volume. This Red Velvet Cake is technically not a chiffon cake. Red Velvet Cakes get most of the aeration in the batter from the acidic ingredients (buttermilk and vinegar) reacting with the bicarbonate in the baking soda / baking powder to create bubbles. In this recipe, I whip up the egg whites separately just to add a little more lightness to the cake as an extra boost. But don't use cream of tartar since the buttermilk/vinegar + baking soda/powder do most of the heavy lifting. Hope this answers your question :)
CookingwithKurt thank you for the detailed explanation, it makes sense, I made this cake and it’s soooo moist! It’s sooooo good! This is my 2nd cake from your recipe and I Love it!!
Hi kurt your ube overload is amazing. Now i'm gonna try this but can I use this to make a semi naked cake. Does cream cheese frosting stable for hot weather?
Hi Roxanne - thanks for your comment! Glad your Ube Cake turned out well. Cream cheese frosting is not the most stable in hot weather. Hope this helps! :)

Hi Gelywin - yes, you can use this batter to make cupcakes 😊
Hi,kurt I like your video’s your cakes 🍰 is yummmm please tell me what is buttermilk can I made him at hom.
Guaooo, que rico debe estar , te dire como me quedara a mi , hojala se paresca jajaja 😂❤ gracias disfruten esa delicia .

Hey, Kurt! Love your videos and recipes. Easy to follow. Question: Can I use all purpose flour instead of cake flour?
Thank you! More power to u, beautiful well explained vides 😊
Pei Chiu Thank you!! 😄🙏🏽❤️
Can i used all purpose flour....instead of cake flour.....and for frosting...can i use all purpose cream...instead of whipping cream or heavy cream? Thanks

Yes you can use all-purpose cream in the frosting.
Hope this helps! :)
Can I bake in one pan instead of two? I have 10inch baking pan at home☺️ thanks
Hi Hazel, I don’t think the batter will fit in one 10” pan. I’d recommend using two 9” pans like in the recipe. Hope this helps! 😊
Yass another cake recipe!! 🤤 Tiramisu please!

Hi kurt i just done making the recipe of your red velvet overload cake for my niece bday, but i just made my own design i will send u a picture if i get a chance with my niece eating the cake....love love love ty kurt and God Bless u more
Hello! I'm glad your Red Velvet Cake turned out well! I'm looking forward to seeing the picture you send! :)
Is it possible to half the recipe? if yes how many mins should we bake it and the fahrenheit?
Hi Catherine, thanks for your question! Yes, you can half the recipe and make a smaller cake. I'd recommend using 6 inch round cake pans, and literally dividing all the wet and dry ingredients by 2. That should make a batter that fits well into a 6-inch pan. I haven't tried it myself, but I'd recommend baking at the same temperature (350 degrees Fahrenheit) and checking with a toothpick around 18 minutes, and if it's still not done, put it back in the oven and keep checking every 5 minutes. Hope this helps! :)
Thank you so much! Will try and make the cake using this recipe next week!😊

Hello - yes, you may make any changes you like, any adjustments you see fit to make this cake more enjoyable for you 😊
Can I make a red velvet cupcake with this recipe? How many do you think it would produce?
Yes, you can definitely make red velvet cupcakes with this recipe. I haven't personally tried it, but I'd estimate this batter would make about 24 - 30 cupcakes, depending on how high you fill the cupcake liner. Hope this helps! :)
I do appreciate this wonderful cake recipe, your tutorial method is so easy to understand....and well explained...ty kurt God Bless u may you have more and more subscribers.....

Hi Kurt what can you substitute for buttermilk if it’s not available in our place, thanks!
Hi Akai - if buttermilk is not available, for each cup of buttermilk needed, you can use 1 tablespoon of white vinegar or lemon juice plus enough regular milk to measure 1 cup. Stir, then let stand for 5 minutes. You can also use 1 cup of plain yogurt or 1-3/4 teaspoons cream of tartar plus 1 cup regular milk. Hope this helps!

Thank you so much for giving time to answer my questionz, ive tried already ur ube overload with halaya and becomes our favorite specially my daughter, caramel salted cake really good..can't taste lke this with other cake..looks so sweet but....if you taste it...exact amount of sweetnest... and i' ve tried the mocha..the sponge is taste good but ive failed in frosting...i will try it again.....thank you so much for sharing ur recipes,my apology for asking some ingredients which is not suitable for my badget sometimes....i am just a begginer...Godbless you both..😊😘
Hii can i ask po kung isusubstitute ko po yung buttermilk ng (milk + vinegar) tatanggalin ko na po ba yung white vinegar sa (1:53mins) procedure?
If buttermilk is not available, for each cup of buttermilk needed, you can use 1 tablespoon of white vinegar or lemon juice plus enough milk to measure 1 cup. Stir, then let stand for 5 minutes.
Any substitute for 2tbsps of all purpose flour in frosting?
The raw all-purpose flour in the frosting is to thicken it and make it more stable.
