friends4ev3 no the bones are not a decoration, it’s kind of Chinese snacks indeed . Imagine the stunning smell of fried fish bone and the crunchy texture with the salty flavour . It’s like an evolved version of fries which is beneficial to our health too .

You can actually eat the fish bones if you fry them right
Not only the bones get delightfully crispy, but there are some gelatinous areas of the fins that really are delicious. They smack!

I remember having chicken chop suey when I was a child in Fiji. It had bok choy, black beans, carrots, onions, and mushrooms as far as I can remember. I tried making it at home but it didn’t turn out as I hoped it would.

Susan MinhTrang Nguyen trust me it's not oil at all unlike fried potatoes that absorb oil. Deep fry is just a cooking method to cook the fish tender with a crispy crust. But fish itself hardly contains oil so the dish taste juicy and crispy. Would recommend to have a try

Actually it's not deep fried as in with a crispy skin or cover. Did you see in the end, he used chopsticks to halve the fish. This time, he used high temperature oil to do a quick cook. Cannot sauté it, too slow and will stick. Boiling in water is also slow and taste bland. 150 deg c vs 98?
