I've been making mapo tofu for more than forty years. For more than 20 years I used a recipe I learned from a TV cooking show when I lived in Japan. Not very authentic, but tasty. I've tried many different recipes in the last 15-20 years and the recipe in this video is one of the best - if not the best! Thanks!

Mabo Tofu (Japanese spelling of mapo) 4 tbsp oil 2 small slices ginger, chopped fine or grated 2 cloves garlic, chopped fine or grated 6 scallions minced 8 oz ground pork 2 tsp doubanjiang 3 tbsp light soy sauce 1 tbsp dark soy sauce 2 tbsp sherry or mirin 1 1/3 cups chicken stock 1/4 tsp sugar 4 tbsp tomato ketchup 2 tsp corn starch with 4 tbsp water 1 block of tofu cut into small cubes 1 tsp sesame oil Stir fry the first six ingredients. Mix the next seven ingredients in a measuring cup or bowl. Add the liquids to the wok and heat til it comes to a boil. Add the corn starch slurry a little at a time so it doesn't become too thick. Add the tofu and heat through. Remove the wok from the heat and stir in the sesame oil. It's certainly not an authentic Sichuan recipe, but it tastes good!

Ma Po Tofu is one of my favorite dishes but I never add black vinegar or oyster sauce, instead I use chopped fermented black beans. And when buying Doubanjiang, make sure to buy the Pixian style Doubanjiang, not the widely available one from Lee Kum Kee! Before serving I add some chopped cilantro and some sesame oil...
I tried this. But i don't use alcohol because I am muslim. I don't have black vinegar, I replace with rice vinegar. I also don't have chilli oil. But it taste delicious. I am going to make it again. The spicy taste is addictive.
Just so you know, authentic mapo tofu doesn’t use any vinegar. But it’s okay to do what you want/like. Just wanted to mention in case you don’t have it some other time. It’s okay without it.😊

This was amazing. I totally butchered the silken tofu, but I will get better. The flavor is still there!I used impossible meat and also subbed the peppercorn for some ground black pepper and red chili peppers.

I just tried this recipe today and it was a success overall, great flavor. 👍 There are a couple of adjustments that I’d make though. First is the type of tofu. Silken tofu for this is really much too soft. Just regular soft tofu works better and yields better flavor. Also, two cups of stock is a little too much liquid for this recipe. I even used a bit more than 1/2 lbs of pork mince and after incorporating the corn starch mixture, the end result was still too soupy. 😅
You probably could (don’t quote me, but it seems a bit similar; just black vinegar might be a little less pungent). But authentic mapo tofu doesn’t have any vinegar, so you could also just skip it. Sorry; I know I’m 3 years late, but just wanted to mention in case you still wondered.

Idk if you’re local Safeway carrys it but their organic brand has a silken tofu close to the produce section by all their salad dressings!
