    Today I am making a comforting pot of Green Chicken pozole.
    For a spicier version add some jalapenos or serrano peppers in the puree. This is a very simple and delicious recipe that is bright, fresh and warm all at the same time.

    INGREDIENTS
    14 cups (3.3 L) water (to boil chicken and create broth)
    3 lbs (1.36 kg) chicken (I used 2 lbs skinless legs and 1 lb chicken breast)
    1 lb (454 g) tomatillos (or green tomatoes)
    1 large onion
    4 cloves garlic
    2 dried bay leaves
    2 chicken bouillon cubes
    1 Tbsp Mexican oregano
    salt and pepper to taste
    2 poblano peppers
    1/3 cup (50 g) pumpkin seeds toasted
    1 handful of fresh cilantro
    1 big handful baby spinach
    3 - 30 OZ cans of hominy (drained and rinsed)
    *optional Add 1 to 2 jalapenos for a spicy pozole
    8 quart pot
    INSTRUCTIONS
    In a large pot add water, chicken, onion, garlic, dried bay leaves, chicken bouillon, salt, pepper, Mexican oregano and bring to a simmering boil and cook for 35 to 40 minutes
    NOTE: Cook time may very if chicken is not properly thawed
    Once chicken is cooked, remove from pot, shred and set aside for later use
    Discard bay leaves
    Strain pot of chicken broth and reserve broth for later use
    Place contents from strainer into the bender along with toasted pumpkin seeds, roasted and cleaned poblano peppers, a handful of cilantro, handful of spinach, 1 cup of reserved chicken broth and puree until smooth
    In a preheated large pot add puree and simmer for 3 minutes then add remaining reserved chicken broth
    Now add drained and rinsed hominy and cook for 25 minutes
    Next add shredded chicken and taste for salt
    Add salt to taste if needed
    Continue to simmer for 10 to 15 minutes and serve
    Top with shredded cabbage, fresh squeezed lime, thinly sliced cherry radishes and chopped fresh onion
    This recipe serves at least 8 to 10 single servings

    The truth is I've been watching you for a very long time couple years and I just still can't get my food to look like yours I don't know what I'm doing wrong but my wife seems to like my food but I don't like my food cuz every time I make it it doesn't look like yours it isn't taste like I would feel like it would taste like like I'm doing something wrong and I don't know what I'm doing wrong but I want to learn how to cook for my kids taking my wife said cuz I love to cook it's very therapeutic I haven't read another comments I don't know what nobody's saying but I know for a fact that I've been watching you for like good 2 years and I've commented to you also I'm sure you're not going to see this comment but I would love to learn how to cook like you like step by step I'm kind of slow so I like I try to like Push pause on your videos but it's just doesn't still come out the same way even when you say time or taste on your own you know I don't know thank you for making these videos though today I'm supposed to make some posole green posole I hope I'm making like this and I'm talking to my phone so if things are missed spelled I'm sorry have a great day thank you for everything love you

    Thank you so much for the pumpkin seed tip!! I ended up frying pumpkin seeds and just a little bit of coriander seeds in oil and then blending it into the chiles to make pozole rojo and I swear the compliments i got were non stop!

    I wanted to thank you for your awesome recipes. This pozole recipe along with the champurrado (galletas maría) hack saved our socially distanced christmas. Usually my mom and aunts make all the food and now I can make them too. We couldn't be with our family but the food was better than ever! THANK YOU!

    I love pozole and I only recently learned a new trick... It's from Rick Martinez, but I think he said it was Chris Morocco's idea. Toast the hominy on a baking sheet. I forget his times and temp, but I've done it twice now and it's amazing. Just drain the hominy well. Lay it out in an even layer. Spritz with PAM. Roast at 400 or so and toss occasionally until they're golden and smell like corn chips. I ate a whole pot in two days...

      Yay! Honestly the green one is my favorite. I froze the green pozole from this video in my deep freezer and we just had it as left overs last night. It was still good. 😁

    That looks so good. I’m going to have to try it. I’m surprised about the pumpkin seeds and spinach. I don’t believe those are usual Mexican ingredients but I’m so intrigued. I actually am making a red Pozole this weekend, but I’m totally going to make this one next time. My auntie makes chicken Pozole and it’s good. My mom makes the red one with pork and it’s my favorite but your recipe has me wanting to test this out. I’ll have to get back to you when I do. Thanks for putting this up on your channel.
