    INGREDIENTS
    4 1/2 to 5 cups (1 L to 1.2 L ) beef broth or water
4 lbs (1.81 kg) boneless chuck roast beef
    1 small onion
    3 to 4 cloves garlic
1 beef bouillon cube (or 2 tsp salt)
    1 dried bay leaf
8 dried guajillo chiles (stems and seeds removed)
2 dried Pasilla chiles (stems and seeds removed)
2 dried ancho chiles (stems and seeds removed)
    2 cloves garlic
4 cups (475 g) instant corn flour (I used Maseca brand)
    2 1/2 tsp baking powder
    1 1/4 cup (275 g) lard or shortening
    salt to taste
2 Tbsp oil (to simmer puree)
    35 to 40 corn husks
12 to 16 quart steamer pot
    INSTRUCTIONS
*Note: Use the method of your choice to cook beef until tender
-In a 4.5 crock pot add beef, bouillon cube, dried bay leaf, onion, garlic, 2 cup water, cover with lid, set to high and cook for 6 hours or until beef is tender
    - Once beef is cooked, remove onion, set aside and reserve
    - Remove beef from crock pot, shred or chop to desired texture
    - Strain out any liquid from crock pot and reserve
    CHILE PUREE
    - remove stems, seeds and rinse the dried chiles
    - place in a small pot, cover with water, bring to a boil, remove from heat and steep until soft and pliable
    - Once chiles are soft, remove from boiling liquid and place in to a blender along with 1 2/3 cup of beef broth or water, 2 cloves of garlic, reserved onion from crock pot and puree well
    - Strain puree for any bits that did not puree
    - Reserve 1/3 cup of chile puree to add to masa dough
    MEAT FILLING
    - In a preheated skillet add 2 Tbsp oil, strained chili puree, salt to taste and simmer for 3 minutes over a medium heat
    - Now add chopped beef to simmering chili puree and continue to combine and simmer for another 3 to 5 minutes
    - Now set aside until ready to assemble tamales
    MASA PREPARATION
    - In a large bowl add instant corn flour, baking powder, salt to taste and combine well
    - Now add lard or shortening, 1/3 cup of chile puree and combine well
    - Next start by adding 2 cups of warm beef broth or water and mix well
    - Now add an additional 1 to 1 1/2 cups of broth or water until masa dough is the texture of play dough and can squeeze through your fingers easily
NOTE: Keep extra warm water or broth on the sided just in case masa dough starts to dry out
    TAMAL ASSEMBLY
    - Take your softened presoaked corn husk and spread from the center 3 to 4 Tbsp of masa dough on the corn husk leaving a one inch space from the top of the husk
    - Next add meat filling and enclose the tamal
    - Now fold the bottom part of the husk up and continue the process
    COOK TAMALES
    - In a 16 quart steamer pot add 2 1/4 liters of water to the pot then place the steamer plate in
    - Place a small heat proof ceramic or stone bowl upside down in the center and start stacking all of your tamales around the bowl
*NOTE: the cook time will vary depending how tightly you pack the pot
    - Now place extra corn husks on top to cover tamales, a cloth and cover with the lid
    - Bring the water to a boil first, lower the heat to a medium heat and cook for 1 hour to 1 hour and a half or once a tamal comes out easily from the corn husk
    - Remove all the tamales from the pot and allow to set for at least 20 minutes then serve
    - This recipe makes at least 30 tamales

2 years ago in December I made 7 dozen tamales by myself. I had researched and researched on the internet on various recipes as this was the first time I had ever made them. I used my Instant Pot and I cooked the chiles in with the beef which kills two birds with one stone and infuses the meat w/ the chiles while cooking as well. I used unprepared masa and I learned a trick, I used Crisco, since we don't eat pork, and learned to use my blender and whip up the shortening to make it light and fluffy then mix it in the masa along with the beef/chile broth. I learned to drop a little bit of the masa in a glass of water and if it sinks it needs more shortening but if the drop of masa floats in the water then it's ready to use. I got one of those tamale spreaders and it's a HUGE helper! After I got all the tamales made, I also include a slice of potato and green olives in them, I posted it on FB, it was really late at night, and one of my Mexican friends commented she was "coming over" and she really did! She raved about my tamales. I also gave some to my niece who is 1/2 Mexican and she loved them so I must have done something right. They were so delicious, better than any Mexican restaurant here in town and I live 10 miles from the border!

Where I live corn husk are really hard to find. So when I find them I freeze them in my deep freezer and when I get ready to use them I just boil them in water on the stove and they turn out perfect. I just wanted to share that little tip.

    • @doloresleyva8810
      @doloresleyva8810 Рік тому +9

Another tip and yes it sounds crazy but if you have no corn husks at all, like some areas they don't have any. You can use Aluminum foil YES lol in place of the corn husk. Spread in the middle of the foil and fold long sides first and fold ends like a little package to seal tight. I found myself dying to make tamales one time and of course I had no husks, so I tried the foil method and for the few I made the foil was fine and I was able to stand up and stack them (the foil kept the tamale together) they cooked at the same time as with husk and did NOT taste like foil. It really worked for the few tamales I was craving so bad for!

I'm 67 years old, so you can say I'm a seasoned cook. I made these and they were fantastic. I had to order the peppers from Amazon since the local stores didn't carry any dried peppers. I braised my roast which only 3 hours, and the rest went as planned. Hubby tied the husks and the rest was history. ;) I had a bit of puree left, so I added a few seasonings, a smidge of tomato puree and cider vinegar and made a flavorful hot sauce. It all was so delicious. Thanks you. I will make these again and again.

growing up in the 60's we used to hang at the neighbors house all of the time. Jaunita is her name. We all jumped in on the cooking and prep work. we made tamale's torts, flower and corn and everything in between. She would cook all day for the whole neighborhood. If you were ever hungry you knew where you could go for a good meal. and it was FREE! I'm 67 and my wife and I still make a bunch of the ole stuff Jaunita taught me to make. A lot of it is very time consuming but always well worth it. Thank you for sharing your recipie.

I never knew my grandparents on my dad’s side as he lost them in a tragic accident when he was 8 years old. I can tell my dad has fond memories of his parents. He says his mom was an excellent cook and his dad handmade everyone of his toys. He said he had gotten his first BB gun that year and brought it to school for show and tell. Times have changed so much. I’m looking forward to bringing some good memories back and I can tell by watching this video that your tamales are made with love! Thank you !!!

Thank you!!! All the other recipes were for really wet masa, which I can't stand, and the masa you made is just the right consistency. I like to make dough balls, so I'll use a little less water etc, but you hit the nail on the head with this. You should also, (just because) do a video for the whole bag of maseca tamal. (4.4 lb bag) That way we don't have to double, or triple up, on the ingredients. There's no real descriptions anywhere else that I've found for masa, as good as yours. 💯

I had a Mexican friend in gradeschool who had the sweetest abuela. She let me cook with her in the kitchen. She spoke little english and I knew zero Spanish. I watched and copied. It was a family recipe so I never was given a copy which was understandable. I don't recall the recipe or all the steps. I've been searching for her recipe for years. It has been a while since I've helped her and I don't have a video of her giving step by step instructions. So I came to UA-cam for help and stumbled across your video. And I'm so happy I did! Other than not salting them enough, my tamales came out perfect. Even my Mom, who I consider a pro at making them, was very impressed with them and even asked how I made the masa.
