  • Bolinhas or Bolinas are delicious Goan cookies made from coconut and semolina/rava. Unlike other cookies there is no flour used in this recipe. They are crisp on the outside and soft on the inside.
    Bake and enjoy these delicious tea time cookies with a cup of tea or coffee. They are made throughout the year but no Christmas platter (Kuswar) would be complete without these traditional cookies.
    Ingredients:
    1 cup (200 g) fine rava/semolina
    2 cups (200 g) desiccated coconut powder
    3/4 cup (200 g) castor sugar (powdered)
    8 egg yolks
    1 tbsp (15 g) butter
    2 tbsp (30 ml) milk
    2 pinches of salt
    1.5 tsp elaichi/cardamom powder

    Normally people don't like to share their recipes online as it is copied by other's. But I would like to say you are a very kind hearted person who shared such a lovely recipe . Believe me I tried so many recipes that were on you tube and I was fed up. When I saw your recipe I said this is the last one I will try and to my surprise yours was the best recipe. The bolina came out the same as u have shown. I made the recipe 3 times and loved it so much. Thank u so much and God bless you for sharing the real recipe.

    How long to keep after mixing n the oven temperature

      You need to keep it for 6-8 hrs or overnight to rest and bake at 160° C for 15-20 mins or till done.

      We have used desiccated coconut here.
      If you're referring to coconut flour, it won't work.

      We would recommend using desiccated coconut for this recipe as with fresh coconut the approach would be different due to the moisture content.

      Yes you can. But grind it a bit in the mixer before you add it to the bolinha mixture. Grind without adding water, just to make it fine.. use the dry mixer if possible .

      Upper or lower rod

      @@aranshadsilva4571 as mentioned in the video (at the end in the tips section), preheat for 10 mins (both the rods/heating element on), then place the tray in the centre rack. Bake (lower rod) for 15-20 mins till done (ours was done in 15 mins). Then on broil mode (upper rod) till the top is golden brown (about 2 mins or so. Pre-heating and baking at 160° C. These are approximate timings as every oven is different. Hope this helps.

    SOS .....can U help me save a Coconut fudge which I cooked past the setting stage ? It has become crumbly .. cannot cut in smooth squares. Will it help if I add some hot water and re heat it?

      Hi Regina, which recipe have you used?
      If it is this recipe ua-cam.com/video/-mbJHoWDsCI/v-deo.html
      It should have not hardened so much.
      Incase you followed some other recipe then will not be able to help much.
      Would suggest grinding it in a dry grinder and adding some milk or coconut milk (would not recommend water) and cooking it again. Hope this helps.
