Never ever used a heat meter and it came out just fine. I think the key is in the measuring. 1:1 is the ratio… everything else is optional along with the coloring. It’s hard to mess up coconut and sugar once you get going taste wise.
Hi Trisha. Mine didn’t set all. It was too dry to set and I got sweet crumbly flakes . It tastes good though. What did I do wrong and what can I use the sweet coconut crumbs for? Hate to waste it:(
Hi Linda, The sugar syrup was taken too far. Did you use a candy thermometer? Also don't keep it on the stove for too long after adding the coconut. As soon as everything is mixed well, take it off the heat. Sprinkle the crumbles over dessert of your choice. It'll go well with ice cream. Especially something tropical flavoured like mango - passionfruit or even with a cherry / chocolate.

I have so many fond memories of my grandma making this every Christmas, however I made it just now but it’s not forming, still like powder, so should I add more sugar and water?
@@bmj3159 The weight / volume of each of these is very different. Both measurements are correct. You can use either one. I think the sugar syrup was taken too far. Did you use a candy thermometer? Also don't keep it on the stove for too long after adding the coconut. As soon as everything is mixed well, take it off the heat. I'm not sure if adding more of a sugar syrup will help. Maybe use it as an icecream / dessert topping?
Hi Leena. This has a very short shelf life, around 2-4 days depending on the weather (heat and humidity etc.) at room temperature. Refrigerated, it will last a few more days. In either case, store it in a dry, air-tight container. Hope this helps. 😊

For fresh coconut do you have to cook it for longer or like you did it for desiccated coconut

We can use fresh coconut.
In India we do use fresh grated coconut for this recipe.
Mostly it's natural color .
