Goan Bolinhas | Semolina & Coconut Cookies | No Baking Powder Recipe | Christmas Specials

  • Bolinhas are sweet, crumbly little 'cookies' that are usually enjoyed as a tea-time treat. They have a reasonably hard exterior and a firm, dense interior thanks to the semolina and coconut it contains. This recipe is devoid of baking powder/soda and relies on the potential of the eggs to attain the rise. I must say this about Bolinhas: more rustic its appearance, greater the appeal!

    Ingredients:
    250 grams or 2&1/2 cups of grated, fresh Coconut
    250 grams or 1&1/4 cups of Semolina
    250 grams or 1&1/4 cup of granulated Sugar
    60 grams or 4 Tablespoons of Salted Butter, room temperature
    3 Eggs, separated
    1/2 teaspoon Cardamom powder
    2 pinches of Salt
    Edited notes:
    -Reduce butter to 1 tablespoon (15 grams) and the coconut to about 1& 1/2 cups (approx. 150 grams) if you prefer harder bolinhas.
    -Refrigeration helps stiffen the mixture into a dough; gradually it will get soft and sticky as it warms back to room temperature so it will help if you work quickly. If it gets sticky during manipulation, refrigerate for a while.
    -Place the rolled up bolinhas at about 1 inch distance from each other on the tray; they will increase in size as they are baked.
    -Bake in a preheated oven at 180 degrees Celsius for 30-35 minutes or till the tops are a deep golden brown.
    -Once baked, allow them to cool upon a rack at room temperature.

    Hi Florency, tried your recipe today. These are my favourites from Goa. I made them with apprehensions of how would the sugar melt, and if the dough was too sticky.. but it turned out perfect in taste and texture. However, it took 45 mins in my oven. Thanks for the wonderful recipe. ❤️

      Yes, you can use dessicated coconut ground with little water/milk (about half a cup).

      I use the egg whites since I skip the baking powder. The yolks help hold the ingredients, the whites, well-beaten, help them cookies rise✨

    After refrigerating the dough became very sticky and was little liquids at the side and when put to bake insted of rising it became flat and got burnt down making some very hard to remove from butter papper. Please help me understand why and what can be done

      Next time, to bring about the colour you could try grilling the bolinhas for a minute or two, but be careful to not overdo it- they could get too dark. To be safe, grill on the middle rack (not too close to the grilling rods). Keep up your baking, Fatima! God bless ✨

      These bolinhas are quite soft, only with a crust that is comparatively hard. Adding more butter may not help, but make it ooze oils while baking.

      For bolinhas, 6 hours refrigeration is sufficient. This is not to ferment the dough, only to stiffen it so that it's easy to shape into required form.

      Yes, Benny, it will be dry, but since the initial dough (before refrigeration) is sticky and wet, the dessicated coconut may soak that and bring stability eventually. But, yes, there's a possibility of it turning comparatively hard. Grinding with milk (not too much) will give richer bolinhas.

      @@FlorencyDias , thank you for taking the time to answer my query. I did use a little bit of milk just to give moisture to the coconut (did not grind) and they did turn more white and hardly browned on the top (bottom was nice and brown). On another note, they were nice and crunchy on the outside and soft inside and I was happy except that I wished they were more brown. But after I stored them in an air-tight container, the next day they were not crunchy but more like sticky outside (I have experienced this in the past when I kept in the fridge, but this time I kept out on the counter), wonder why it happened so, do reply when you have the time.

      I came by this quite late, my apologies. Thrilled to read that you tried it, and 2 problems you've encountered - less browning and going soft- seem related; one leading to the other. Since the top didn't brown enough, it allowed for the seepage of moisture to soften it. If your oven is an OTG, grilling the bolinhas (top heating element) for a minute or two may give it more colour and ensure a longer, crisp exterior. But pay careful attention to not burn them at this stage because they brown very quickly when grilled.
