  • Bolinhas are sweet semolina and coconut cookies made in Goa. They are the humblest of all the Christmas sweets and are prepared and had throughout the year as a tea snack too. They have somehow managed to make a place of pride in the traditional Christmas platter. You just have to bite into these divine cookies to experience a burst of coconut flavour.
    This Christmas discover the joy of making your very own Bolinhas and believe me you would want to always have freshly baked homemade ones. Bolinhas are addictive too! once you bite into this piece of heaven you just cannot do with just a couple of them!
    So pull out your baking trays, get your ingredients together and bake these sweet, crumbly traditional goodies this Christmas!

    Makes : 30 to 35 Bolinhas
    Ingredients:
    Salted Butter - 2 tbsp room temperature
    Grated fresh coconut - 250 grams or 2&1/2 cups
    Semolina/ Rawa - 250 grams or 1&1/4 cups
    Granulated Sugar- 250 grams or 1&1/4 cup
    Egg yolks - 2
    Nutmeg powder - less than 1/4 tsp
    Salt - 1/4 tsp
    Oil - as required
    Notes -
    1. You may also use cardamom powder or vanillas essence. Depends on your preference.
    2. Be careful while adding in the salt as the butter used contained salt.

    Can we add dry coconut? Some Bologna’s taste of dry coconut why is that?

      Taste changes of the bolinhas as time passes by. You can try using dessicated coconut as well.
