Crispy Hot Wings cooked on Charcoal Grill
WHAT MALCOM USED IN THIS RECIPE:
- Weber Kettle Grill - weberinc.sjv.i...
- Vortex - bit.ly/H2QVortex
- Killer Hogs's The BBQ Rub - bit.ly/TheBBQRub
- Killer Hogs Hot Sauce - bit.ly/KHHotSauce
- Tumbleweeds Fire Starter bit.ly/H2QFire...
- BBQ Gloves - bit.ly/H2Q_BBQ...
If you’re a fan of crispy hot wings but you want to avoid frying them, then you’ll want to try this technique. I combined corn starch with my bbq rub to create a light breading that turns the outside of the wings into a light crust.
It’s a simple technique that produces a crunchy wing on the grill. I set up my weber kettle with a charcoal vortex for high heat in an indirect environment. The vortex is a great accessory for any charcoal grill.
Place corn starch and Killer Hogs's The BBQ Rub in a ziplock bag, add chicken wings, and toss to coat. Place the wings on a wire rack to air dry while the grill gets hot. It took about 30 minutes for the wings to fully cook. Just turn them every 10 minutes or so for even cooking.
To compare the results I cooked some additional wings seasoned with just the rub. Both wings were really good but the crispy wings were more like a traditional hot wing. Once tossed in a Spicy Garlic Wing Sauce (recipe below), they went to another level. The crunch came through but you could pick up the flavor from the grill. You could use any wing sauce or serve them straight from the grill; let me know how they turn out after you give it a try.
Crispy Grilled Hot Wings
- 4lbs Whole Chicken Wings or Party Wings
- 1/2 cup Corn Starch
- 2 Tablespoons Killer Hogs The BBQ Rub
12oz Spicy Garlic Sauce *recipe to follow
Directions:
1. Separate whole wings into pieces by cutting through the joint with a sharp knife; also remove the wing tips from the flat portion. (skip this step if using party wings).
2. Pour corn starch and The BBQ Rub into a gallon size ziplock bag. Add wing sections and toss to coat.
3. Place wings on a wire rack to air dry and season with a little extra dry rub.
4. Set up weber kettle with a charcoal vortex accessory to create indirect high heat. (similar type grills will work with the vortex).
5. Fill the vortex with charcoal and light a fire starter to get the coals hot. After 20 minutes the grill should be ready to cook.
6. Place the cooking grate over the hot coals and arrange the wings around the outside close to the edge of the grill (not over the coals!). Place 1 piece of wood over the coals for smoke flavor.
7. Cover the grill with the lid making sure all vents are open 100%. Cook the wings for 10 minutes and flip. Continue cooking and flipping the wings as needed until the outside is brown and crunchy. Total cook time was about 30-35 minutes.
8. Toss the wings in Spicy Garlic sauce (or your favorite wing sauce) and serve.
Spicy Garlic Wing Sauce Recipe
- 6oz Killer Hogs Hot Sauce
- 1 stick Butter
- 1 Tablespoon Granulated Garlic
- 1 Tablespoon Honey
- 1 teaspoon Granulated Onion
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Corn Starch
- 1 teaspoon Water
In a small pot over medium heat melt butter. Add hot sauce, garlic, honey, onion, & Worcestershire. Stir to combine and bring to a simmer. In a separate small bowl combine corn starch and water into a slurry.
Slowly add corn starch mixture to sauce while continuously stirring. Allow sauce to come to a slight boil and remove from heat. Sauce will thicken as it cools. Use immediately on wings or store in an airtight container for up to a week in the refrigerator.

Malcolm has never steered me wrong. I've made a ton of stuff I've seen from his videos, and all of it came out fantastic. I try to support him by buying his rubs/seasonings.

Malcolm is the brother you always wanted to have as it pertains to his coolness, grill skills, and just amazing chill mode. Great work Malcolm
I grilled these up both ways for tonight’s dinner. These were the best wings I’ve ever had! Hubby and I tore them up!!! Thanks for sharing this incredible recipe!!! The cornstarch really did disappear & had those wings crunchy like they were fried! We liked them both about equal. THANK YOU!!!
Malcom you have allowed me to enter a realm of my life that I never imagined. Cooking was never on my mind but with your videos, passion, and recipes I looooove to Bbq. I have even used your methods in the oilfield winning over many clients cooking while running in and out of the hole. I have found a local butcher that carry’s your products. Dammit Malcom now I've got to go pick up some wings

I don’t know why but hearing you talk about food is so relaxing. I got you on my Apple TV auto playing your videos throughout the day as I work from home. Thanks my guy.
I always do the cornstarch my wings with plenty of seasoning. I make my own pineapple buffalo sauce, just equal parts Frank's red hot and unsalted butter, a little crushed pineapple and the juice from the can made into a slurry with some cornstarch. It's also awesome on shrimp!
Oh man that sauce sounds good
Sounds delicious I may try
Do you just mix it or heat it little bit
I always recommend this channel to my vegan friends.

I just did the cornstarch wings on my Weber Q with a some of Frank's Red hot on before serving and they came out really good. My wife is now (encourages me) letting me (my wife let me change it;-) watch UA-cam more. Thanks Joe
I grill them this way then heat up some Frank's with honey and butter. Toss the wings in that then back on the heat to caramelize. Delicious.
@@Jarrod7755 I just made wings and took your suggestion. It was really good.

If your wife "let's" you do anything in life, grilled wings are the least of your worries homeboy lol
Thanks very much for posting! I used the corn starch on my wings for the 2022 Super bowl. My test with the two types worked well and provided enough evidence to use corn starch HOWEVER if the wings are not going to be eaten immediately, then this might not be the best version. Once the wings sit in the sauce (> one hour), the coating tends to slid off. Still were delicious and our guest enjoyed them immensely but i would make with corn starch only if going to be consumed immediately.
I agree he seems to be an awesome human just great energy coming from this man and he has helped me be a better cook! Love this channel
I guess you could call this a "wing-wing" situation.
😂😂🤣

Bro, that cornstarch is whats up! I made mine with Franks Red Hot Sauce and threw together some garlic parmesan for the wife, and Im in her graces for a WHILE!!
Get some
Briann Nelson what round about temp was your grill at?
@@jeepzcb09 maybe 375..
Ran this recipe last night. I think you need about 1/2 a cup of cornflour (cornstarch) per kg (approx 2lb) of wings. And definitely shake off the excess as much as you can. Don't be cheap with the seasoning, you need a lot with the cornstarch. Mine took a little longer, it is amazing how much the ambient outside temp affects the grill temp. It was barely 6 deg C (40F) when i cooked these and i struggled to get the pit past 200C (400F) with a vortex full of Heat Beads and a chunk of Pecan. Definitely a winner, and pretty easy to do. Love your work Malcolm, you're a legend!!!
I absolutely LOVE your channel, Malcom! You've shown me how to grill beef tenderloin, brisket, sliced pork and now chicken wings. Can't wait to try this one on the Weber. Please keep up the great work.
Watched this video once and then tried the corn starch way with a little extra seasoning and my wife loved them. I tossed mine in a sauce about 3/4 the way through and after that last quarter on the grill they were perfect. I know the video is years old by this post but the method holds. Thank you sir.
I bought this as my first propane grill. It's been a fun, learning experience ua-cam.com/users/postUgkxCx5fHawkK9OoV-ojFrY8JLnZrFwAmvUt . I think it's a bit too pricey after looking at other grills, but it wasn't hard to put together and it works really well. I love the side burner option for heating food during a power outage. I have an electric stove and live in the South (Hurricane season), so this was a bonus. I also bought a cover for it and it has protected it nicely (the Char Broil All-Season Grill Cover 3-4 Burner: Large). Every few grill sessions, I take the rack (or grate) and burner covers off and clean them with a non-abrasive scrubby and mild soap. I wipe the excess off of the bottom as well, taking care to avoid the gas and pilot lines.
Chickens up in heaven be like,
“Fuck yea. I died for this 😎”
This method is superb. Never fails me. Corn starch coating also seems to prevent burning.
I was thinking the same thing.
Try spraying the the cornstarch wings with some canola oil for an even crisper wing. I normally spray and then flip. Your AP rub is excellent for the breaded wings. The bbq rub doesn't have enough salt content for the breaded.
Thata a solid idea.
Might as well use motor oil
It's hard to describe, but these videos are super therapeutic for me. Thanks, Malcom! And thanks to my friend Brett for introducing me to this channel!
I’ve been baking my wings with corn Starch... my family Loves Them. I’ll definitely try grilling with the corn starch also
Been doing the crispy wings for a while now. I spice the cornstarch liberally then toss them in the wing sauce and put them back on the grill and set the sauce. Really enjoy your channel and recipes.

I’ve used the vortex for years. Tried corn starch and wow! Better than fried and way better got you.
Hands down, your rub yields the BEST color of ALL rubs.
Vortex + Weber..the ultimate combination!! I throw cornstarch on my wings every single time and love the crispiness. Well done sir
Thanks Malcom! Tried both types with your Spicy Garlic Wing Sauce. Ate wings until I almost burst. Your recopies are the best.
" lets go ahead and compare this perfectly grilled crispy wing to this perfectly grilled seasoned wing...Wow, I cant tell the difference! " LOL ahh now off to the grocery store for wings and wood

I wouldn’t make it through the video!
I never thought corn starch would elevate my BBQ to a whole new level! Much love!
I have found that if you mix the hot sauce with the wings, the crispiness disappears after 5 minutes or so. I prefer to DIP my crunchy wing into the sauce then eat it, it maintains the crisp with the added flavor of the sauce.
SHAME ON YOU FOR LETTING WINGS SIT AROUND FOR 5 MINUTES!!!!!!!
😜😜😜
If I add sauce I throw them back in the grill for about 2 minutes... seals the sauce
Bob Furlong let the wings cool down a bit before mixing them in the sauce, also cook them a little more crispier than when you may think they are done. You will not be disappointed
I love how he toses the wings and when they come out. This guy a genius

I saw him use that vortex on the Nashville hot chicken episode, and I don't have a vortex but some bricks in a triangle do the job fine for me. I wouldn't cook chicken any other way.

Malcom, I know this video is from a couple of years ago but I just stumbled upon it a couple of days ago. As luck would have it, I have a Weber Kettle and a vortex. We used your cooking technique and my wife and I were totally blown away. I believe these were the best wings I've ever had. We had two bags of Bob's Red Mill potato starch and I used that in place of corn starch. Add a little Cajun Shake and the rest is history. Thank you so much for all you do!

Dammit now I have to make wings! never thought about the cornstarch method.
I have been using the cornstarch method the past year, and there is no going back. It is sooooo good and crunchy.
I've been doing the cornstarch for a couple years and I don't order wings at restaurants anymore.
He is the KING OF BBQ MALCOM THE GREAT AKA THE GOAT

Malcom: yes
I just watched this today, had to run for some wings and didn’t find any, made drumsticks and quarters instead and came out equally awesome, thanks Malcolm!
Finally someone who knows the drums are better than the flats
So I made these tonight, gata say I did 36 of them and only got 2. You sir gave me a great recipe I will cherish!
Another good tip is leaving the wings uncovered in the fridge to dry out the skin.
You don't really need to do that with the vortex. One thing I will add that I think malcolm didn't do is use a charcoal chimney to get your coals going then pour them in the vortex. I've done it both ways and the chimney is better.
Add a little baking powder
While technology is always a two edge sword I love the fact that I can learn from this man and many other the way to grill chicken wings for absolutely free! The sharing of information on the internet is spectacular!
using baking powder in your rub also creates ridiculous crunchy skin. i usually go 1:3 bp to salt as a guide
100%! Baking powder is key! Here’s my little tip. Buy your wings a day before and put them in the fridge uncovered to dehydrate slightly overnight. Toss them in a little baking powder & seasoning, then into the kitchen oven at 110°c/230°f for an hour to render. Meanwhile have your grill / smoker blazing outside at 220°c/430°f and get them in there for 30-40mins to finish. I only ever toss in hot sauce as I eat them, never before, ruins that Insane crisp!
@@mattjns did we just become best friends? Because THAT IS AN AMAZING IDEA!! I can't wait for grilling season to start!

Great video and interesting experiment. Thought I'd share preferred method for wings. I have found that using the Weber Mesh Rotisserie basket and with the Rotisserie kit for the Weber gives superb results for wings. Just cut them up like you did in your video, throw into a large bowl, season with salt & pepper with some rub if you like. The add some cooking oil of whatever type you prefer and give them a good mix. Tip into the mesh basket, insert the rotisserie skewer/rod and place on the grill. Close lid and switch on motor. They should take about 30 mins and the great thing is that you don't have to keep turning them. Tip them out into a clean bowl and add your favourite hot sauce.
