    Old School BBQ Chicken

    Old School BBQ Chicken Ingredients:
    - 8pc chicken skin on, bone in
    - 2 cups water
    - 1 bottle Wickers BBQ Marinade
    - 1 lemon sliced
    - 1/4 cup Malcom's Bird Brine
    - 1/2 cup Killer Hogs Hot Rub (divide into 2 portions)
    - 1 cup Killer Hogs The BBQ Sauce
    - 1 cup Killer Hogs Vinegar Sauce
    - 2oz Killer Hogs Hot Sauce
    Directions:
    1. Place the chicken pieces in a large zip top bag and pour in the Wickers marinade. Add 1/4 cup Bird Brine and 1/4 cup of Hot Rub to the water and stir well. Pour this mixture over the chicken and squeeze the lemon slices then drop in the bag. Make sure all pieces of chicken are covered and close the bag squeezing as much air out as possible. Place bag in the refrigerator for 4-6 hours at least.
    2. Remove the chicken pieces from the brine and place on a raised wire rack to air dry for 30 minutes. Season with Hot Rub on all sides.
    3. Prepare a charcoal grill for indirect cooking using a 2 zone method - Hot side and Cool side. Adjust the air vents so the grill temperature reaches 350 degrees.
    4. Place the chicken on the cool side of the grill skin side up until the internal temperature reaches 150-155 degrees.
    5. Combine the bbq sauce, vinegar sauce, and hot sauce in a small container. Brush the skin side with the sauce and cook for 10 minutes. Flip each piece over and brush sauce over the back side and cook for 10 minutes.
    6. Right at the very end move each piece of chicken over to the direct heat side of the grill and glaze on both sides. Don't walk away because it can burn really quick. The breast should reach an internal temperature of 165 and the dark meat should go to at least 175.

    I rarely comment on videos, but I felt compelled to say this. Malcolm's chicken and his ribs are the best recipes I've ever put on the table. I've done his oxtail and turkey recipes too. His 50/50 vinegar and BBQ sauce is by far my favorite sauce combo.
    I've tried recipes from other channels too, Kent Rollins, Meat church, and Mad Scientist BBQ, to name a few, but Malcom always comes out ahead.
    So my family and I thank you for the good food I've been cooking through the years thanks to your products, recipes, and cooking tips.

      I do ribs and brisket for people. But when it's for me, and it's my turn, it's either barbecue chicken drumsticks and thighs, or barbecue tri-tip. Fast, easy, great flavor. Mouth is happiest on those days.

    That is exactly how my dad made bbq chicken when I was a kid and it’s my favorite way to eat chicken. Fresh off the grill or midnight snack/day after, it just doesn’t get better than that. I miss my dad so these videos from Malcomb are special for me. Thank you Malcomb

    That ain’t old-school bbq chicken….that’s ‘new’ old-school bbq chicken. We didn’t know all these tips and tricks back in the 70s and 80s. My dad and uncles used to burn up half the chicken and there was always tin foil involved, and they had never heard of two zone cooking.. 😂😂😂 But we loved it, and I sure do miss it. Some of my favorite memories are from cookouts at family get togethers in the summer. Awesome video, thanks for bringing back good memories. Happy memorial day, cheers!

      Sounds like your folks didn't know how to cook like mine didn't 🤣🤣🤣. But when I got to some of my cousins, they had either a 2 zone fire or they had a deep pit. One thing for sure though, either way we all had fun. The best fun was hearing my mom and others that couldn't cook talk trash to my cousins that could only to find out that my cousins food was the only ones that didn't make it to the to go plates. 🤣🤣🤣

    Have made two of your recipes so far and both were a smashing success (the other was the garlic butter filet mignons). This was easy to follow and resulted in my best bbq chicken so far after years of cooking. You have also gotten me to start using my Big Green Egg again after becoming frustrated with temperature control.     When I was growing up.
    We were never in a position to bbq anything unless it was in a skillet on the stove in the kitchen.
    But the best BBQ Chicken I remember was done by my mom, and she used catsup or ketchup as the sauce, and man was that good.
    My tastebuds were about 7 years old so take that for what you can.

    Old school for me is my dad bbqing chicken on a 50 gallon drum cut in half until it was cooked so much you could bite through the bone. And the lighter fluid was the chef's kiss.

    Oh man I love doing this method of smoking the chicken for a while then finishing off grilled on higher heat, you get the nice smokiness and the crispy skin, it's just magnificent.

    Here is my old school secret, when seasoning your chicken, peel the skin back and apply your seasoning directly to the meat then pull the skin back over and apply more seasoning.

    Oh, the memories, bbq is the best way to eat. It's been a long while, though, I only remember maybe two types of marinades we used to use. Although I still remember the rough areas where you can get good old school, bbq. Deliciousness 🥳. Once I have a bbq machine, I will try to make some or go get some in those bbq seller areas.

    Malcolm's bbq sauce is by far the best iv ever had!! The worst part of buying it is if u run out no other sauce will come close. Iv been buying his rubs for several years now and last year was my first year with his bbq sauce and I can't stop getting it. I have 6 bottles coming in the mail tomorrow. Memorial weekend will be several days of killer hog I'll have to put in another order by Monday lol.

    Man that BBQ chicken looked good. This reminded me a lot of growing up where my Dad cooked BBQ chicken what seemed like every other weekend.

      Probably none. Even when people know you can Q, they don't want to be considered rude. I've had roofing contractors working next door "joke" and say "what time is lunch" but they've got nothing to lose by asking.

    I've been a Traeger user for quite some time and just recently switched to Asmoke. Honestly, the difference in the grilling experience has been night and day. Asmoke's temperature control is so precise, and I love being able to adjust and monitor the temperature remotely through the app. It's really changed the game for me.
