instead of crying that there's no recipe I'll help MACA by pasting it here:
Soy Butter Mushroom Pasta
3-4 T butter and a glug of olive oil
2-3 C mushroom blend like Shitake
Soften 3 mins
Add oil if necessary.
Squeeze in 2 T garlic
Pinch of red or jalapeno peppers
Drop in wide pappardelle pasta in salted water
To the shrooms, deglaze with 1/4 C vermouth
Add 1/4 C butter and 1/4 C soy
Spider the noodles in
Add green onion, black pepper, parmesan, and toss
Add 1/4 C pasta water if dry
Plate and top with parm.
Garnish with Furikake if you got it.
I love how Sam still hasn't figured out that he can rip a sheet of paper towel from the roll 😂

this reminds me of my aunt, as a kid she used to make us like a “mac and cheese” it was essentially cooked pasta, butter, soy sauce, and melted kraft singles into a pan. Actually one of my favorites as a kid

I've been making variations of mushroom pasta for a few months lately.
Basic portobello mushrooms are already so delicious, and (where I live at least) any other type besides white is at least double the cost. I'm sure they're better, but they're not DOUBLE better so I'm sticking with portobello.
I fry up some bacon, remove it and most of the fat, then fry up mushrooms and shallots in the pan. When they're done add a splash of whatever you deglaze with, then some stock and cream to reduce into a sauce before adding the pasta to it.
I usually use penne. I like a short pasta so it divides out easily. I chop everything fine so I get little bits that can sometimes find their way inside, and I can make the sauce really thick for the same reason.
So simple and yet, dreams are made of this. Thank you Sam and Crew. I definitely will make!

Man this pasta looks so delicious, definitely going to give it a try.
I made this with sliced pickled jalepeno and carrot ... I used chinese red cooking wine and picled red chili garlic sauce ... left out the cheese cuz it's funky ... but added mixed seafood at the end - squid, shrimp, mussel and the water from that to finish it off like sammy ... the furakake is the perfect touch for that additional flaovor ... nice recipe there boiz

I have already been doing a super simple version of this. I usually use elbow macaroni, and add sweet corn for fresh and sweep pops with the soy and butter. It's quick to throw together, and so good! (◍•ᴗ•◍)❤

Wonderful! Amazing! Had leftovers and added some asian garlic chili sauce to give it a kick.
Please try the king trumpet mushroom sometime, great texture and flavor when sauteed or baked.
I do something like this regularly, but I fry some prosciutto and crumble it on top for a bit of a crunch 😮

Been using butter and soy together for a very long time, I always say someone should make this a thing because it’s so good!
Me too, I use egg noodles then as soon as the pasta is done, I add a couple big spoonfuls of butter and four shakes of soy. Then add chow mein noodles on top, so tasty 😋

Sam ... have been a fan for years but as a fellow Canadian I have to admit I don’t understand this concept of left over wine while cooking. Don’t get me wrong vermouth is excellent but leftover wine???? Cheers to you and the boys 🥂🥂👍🇨🇦

It was a Sam’s cooking weekend so many praises ( off your knees guest ) this was AMAZING!!!!!! So simple but delivered sooooo much flavour, spurge on the mushrooms just like he says, it’s not lobster and tenderloin for god sakes, I only have one thing, I found it a little salty and I’m not sure if a less salt soy would fix that but never the same it was amazing, your vegetarian friends will love it.
Sam, love these videos. have been following since the pandemic. I have the big knife and the cast iron pan... Loving it. However, I am not a mushroom guy. Is there another ingredient you would recommend substituting in this recipe for the mushrooms? Perhaps broccoli or cauliflower, chicken?
Baby beech mushrooms are the bomb. You should try using them in dishes, especially if you hate eating big mushrooms.

Made this, and my family loved it! They compared it with something they would have at a fancy resteraunt. The sesame space at the end made the dish pop and truly took it up a notch. It's expensive but worth it!
I make this with maitake mushrooms (hen of the woods), and use white wine, but vermouth makes sense👍
What about adding shrimp?

Made this pasta tonight and it was amazing. My 9yo son is notoriously picky and he served himself seconds. Holland peppers are hard to find in my area so I swapped in a serrano for heat and red bell for color. Definitely in our regular rotation now!

Don’t tell Mrs. Cooking Guy that one time, while rinsing off a bunch of shiitakes in the sink, I found a teeny, tiny, the-size-of-a-piece-of-uncooked-rice scorpion. Yes, I squealed, then turned on the garbage disposal and stuffed the shiitake and baby scorpion down the drain, grabbed an IPA and took a freak-out break. Truth be told, I had to have another IPA while finishing cooking our dinner.
"Please, sir, may I have more?" Yes, it was that good!

Shouldn't use oil or butter to cook mushrooms. Always add after cooking the water out first.

Given your obvious love of soy in your cooking, and particularly pertinent to this dish, you should seriously look at using Mushroom Soy. It amps up your whole Umami thing beyond belief. Can’t imagine you can’t get it in San Diego - I live in Madrid and we can get it here. Look for the ‘Healthy Boy’ brand - it’s the best. Trust me on this one………👍🏼🇬🇧🇨🇦🇺🇸

Sam, long time fan - since News8 and the DSC show. anyway I was wondering if you had tried Sriracha seasoning powder (Costco carries it in Kirkland brand). I love and use Sriracha sauce but just recentnly "discovered" this stuff. so far I have not done any significant cooking with it but I have put it on shredded cheese before heating nachos, in my egg salad, in chili and on my sliced ham sandwiches. It is FANTASTIC. I know you could come up with some amazing actual creative dishes using it. anyway just a suggestion from a fan.
