    Creamy Cajun Pasta - Sam the Cooking Guy Recipe
    • (1) TBS Smoked Paprika
    • (1) TBS Garlic Powder
    • (1) TBS Oregano
    • (1/2) TBS Onion Powder
    • (1/2) TBS Kosher Salt
    • (1/2) TBS Black Pepper
    • (1) TBSP Ground Cayenne Pepper
    • (4) Sliced Sausage
    • (1.5) LBS Shrimp
    • (1) Red Onion
    • (1) Red Pepper
    • (1) Green Pepper
    • (1) TBS Minced Garlic (or Garlic Paste)
    • (1) TBS Chipotle or Tomato Paste
    • (1) Cup Heavy Whipping Cream
    • (½) Cup Parmesan Cheese
    • Rigatoni Pasta
    • Butter
    • Olive Oil
    • Parsley (Optional)
    (1) Season and Cook Shrimp with Butter and Oil
    (2) Brown Sausage
    (3) Cook Onions, Peppers
    (4) Add Garlic, and chipotle paste, wait till fragrant
    (5) Add Whipping Cream and simmer down
    (6) Add Parmesan Cheese to thicken
    (7) Cook Pasta
    (8) Add everything back to pan a mix
    (9) Top with Parmesan Cheese and Parsley

    So my daughter and I have watched practically every single video you’ve ever made on your channel. We love everything about what you do. Could you possibly do a dish that stuck with me the two years I lived in Italy? It’s called “Penne al Salmone”. I’ve never been able to recreate this on my own and would love to.     Cajun Tip: For "cajun" pasta we use fettuccini and sub the sausage and shrimp (although spectacular choices) for 1 lb crawfish tails. Add a few tablespoons of lemon juice and then you'd be certified 'Nawlins ya heard me!

    I watched Justin Wilson on public broadcasting as a teen. I remember that he poured some salt into his hand, said it was about a tsp, then he poured the salt from his hand into a teaspoon, perfect measurement. Ooh boy!

    I have to confess, I watch your channel almost daily to get cooking inspiration & you just uploaded essentially what I want to make. I was thinking Shrimp Scampi but DAMN if this isn't on a whole new level. When I make this it will turn out amazing! You hit every single one of my favorite ingredients....how do you think black beans would be in this?
    PS: I'd love to get a knife or your cookbooks!

    I've made this about 4 times now and it's always amazing. Mix and match with the protein as well. I put chicken in with the shrimp and sausage last time, and it was great. Also try some poblanos along with the bell peppers. It's awesome. What makes it is the seasoning combo. It's a great taste. I have a bag of it and have used it on other dishes as well.

    Another nice feature is one can skip the pasta and serve it over rice (for the gluten intolerant).

    Nice job, stoked to try this!
    Got a smashburger idea I haven't even gotten to try myself...
    Ground pork and diced up shrimp mixed together with appropriate seasoning... thinking Cajun. Sauteed onion and roasted red pepper on top of a couple patties. Hmm... wonder what sauce and cheese to top it with.... maybe a garlicky black pepper slaw of some sort - the trinity plus a little red cabbage all finely chopped? I would love to see your ideas!

    I loved Justin! His recipes always seemed accessible. I make something similar. I always keep a container of Emeril’s Essence mixed up in my spice cupboard. I think my son and I have made at least 4-5 batches in the last couple of years (quite a bit for Minnesotans). I also keep at least one package of andouille sausage in the freezer for when the mood strikes. I need to make this soon.
    One of my go-to one-skillet dinners is a Cajun Rice dinner. I cook up peppers and onions with sliced andouille, then add some garlic and a cup of rice to toast up with a tablespoon of EE seasoning. Last, I put in a can of San Marzano tomatoes, squishing them by hand, and a couple cups of chicken stock. I use some of the stock to get all of the tomato bits out of the can. Bring to a boil, then simmer 20 minutes. I let it sit a few minutes with heat off, then serve. It’s so yummy and easy, and can be doctored with whatever protein you like.

    I really love these videos. Just kind of following along to get it just right. This one was particularly delicious! One suggestion would be to either list or mention the quantities of each ingredient being used. There were a few, but is it the whole pepper, the whole box of pasta, etc?

      This recipe is really flexible. You can add more or less of something as you like and it will be fine. I just kinda winged it on the quantities. I did two whole peppers and a whole onion, plus the whole pack of sausages. Ended up needing to do more like 1 and a half cups of cream to make the sauce work with all that. It turned out to be a pretty big batch, about 1.5-2 times what Sam made. But that's fine as it will make good leftovers. Can't say about the pasta since I decided to serve it over rice. I definitely didn't make enough rice to match. About 1 cup rice (what I made) would probably match Sam's. I'll need to make another pot for the leftovers. For pasta serving I would suggest keeping the pasta separate and just serve the meet/sauce over it,. That way you don't need to guess the proportions and everyone can just take as much as they like - if someone wants more noodles/rice they can have it.

    This has become a family favorite! We make it at least once a month. The only adjustment I've made is I add a dash of nutmeg to the sauce to amplify the cheese flavor, and I def use the chipotle paste rather than the tomato, just like he did in the video. I highly recommend this one.

    Justin was the bomb!! I loved him so. I have one of his cookbooks somewhere around here. A gem. His tv series was so good. The way he talked cracked me up. He would’ve used a lot more spice. I guar-an-tee!! He also would use a lot of fat in his dishes.

    I'm used to having that dish during Mardi Gras at each visit. One place that served it had a loaded version with sausage, crabmeat, and crayfish. Spicy af too. Serious comfort food right there.

    For the smashburger episode suggestions, look at Burgers Never Say Die restaurant in Los Angeles. They are very basic and extremely delicious burgers. Fresh beef, flattop grill, mustard, onion, ketchup, pickle. The good thing is that when we lived in LA 3 years ago, it was within walking distance of our house in the Silverlake neighborhood. Truly a basic burger that is so absolutely good it makes you question why you even would eat anything else.
