INGREDIENTS
Kosher salt
1 pound dried spaghetti
4 ounces pancetta, cut into lardons
1 tablespoon grapeseed oil
Freshly ground black pepper
2 large cloves garlic, sliced
1 fresno chili, sliced
4 tablespoons unsalted butter, divided
½ cup frozen peas
1 bunch chives, roughly chopped
1 bunch parsley, roughly chopped
1 bunch basil, roughly chopped
¼ cup vegetable stock
1 head green leaf lettuce, roughly chopped
1 lemon, zest and juice
Chili flakes, for finishing
Grated pecorino, for garnishing
PROCEDURE
1. Place a large pot of water over medium high heat and bring to a boil. Once boiling, salt the water generously and add in the pasta. Stir the pasta to make sure it does not stick together and continue boiling until al dente, about 8-9 minutes.
2. In a large skillet over medium heat, add the pancetta and grapeseed oil and cook until the lardons begin to caramelize, about 3 minutes. Season the pancetta lightly with salt and freshly ground black pepper.
3. Add the garlic and fresno and continue cooking until fragrant, about 2 minutes. Add 2 tablespoons of butter and continue cooking until the butter has melted completely.
4. Add in the frozen peas and continue cooking until they begin to soften, then add the chives, parsley, basil and vegetable stock. Season the sauce lightly with more salt, and add another 2 tablespoons of butter. Continue cooking until the butter has melted completely.
5. Add ¼ cup of the pasta cooking water, lemon zest and lemon juice to the pan and stir to combine.
6. Gradually add in the cooked pasta, tossing between additions to coat the pasta with the sauce completely.
7. Serve the pasta with a sprinkle of chili flakes and freshly grated pecorino.

Literally what I love about this is at the start he literally says it's "1/3 bacon, 1/3 peas and 1/3 chili/garlic" then literally by the end it's literally 95% butter
lichrilly
Literally said one or more literally for literally every minute of video length
True story
😁😁😁😁😁
?? No its not. I counted the ratios.
How much butter do you want?
Gordon: Yes
Full bag of KNOBS !
Was thinking the same when I watched the video. So much good healthy green stuff in it, but then also 300g of butter. Heart Attack Pasta.
LOL So I'm not the only one thinking that... He already got the render fat from the pancetta + the fat from the olive oil (used to "speed up the process")...
Why butter?
And why so much?
Today I made an easy pasta (tortiglioni) risottata with mortadella... I only used mortadella + pasta + water + parmigiano... the pasta got creamy even before the parmigiano was added.
I love butter too, but damn too much is too much.
All that fat turns out to be good for you. Thought everyone knew that 😮
I kept hearing the line from "Julie and Julia" where Julia Child says "...and so much butter it'll stop your heart". I love butter but even I got to a point where I said "Okay, calm down, Gordon!", haha.
This dish is f***ing delicious. I cook this about once a week and I can't get enough of it. Of course I use less butter and I finish it with some fresh grinded smoked black pepper to level up the bacon taste. The freshness of the lemon is gorgeous. Texture, taste, f***ing awsome! Best 10mins I spent on a dish.
Iadd tomatoes to mine I also left the lettuce out made salad instead. Was still fucking wonderful. I will be making again , I also left out all that butter but added lil cream.
Gordon goes nuts with butter but cl works like mad my health dissagrees though
Forgot to add more butter in the end... don't know if 2kgs was enough
I mean, why wouldn't this dish Gordon made taste good...he basically put (like you said) 2 kgs of butter in it...geez! The dish would be delicious with only 1/3 or 1/4 of the butter he put in there. To me, that is just cheating when you overuse fatty flavorings in recipes. Yes, OF COURSE something's going to taste good when you use 2 kgs of butter or 2 kgs of bacon! The real magic of being a chef is to make dishes that won't clog arteries but taste good. I would make this dish but only use like 1/4 butter Gordon used & I probably wouldn't put in the pancetta (Italian bacon, basically), either.
😆😆
Tanta manteiga! Desnecessário
Everyone saying he messed up on the peccorino, consider this: he says peccorino incorrectly and looks at it, then at the end he correctly says parmesan. He probably asked for peccorino and whoever shopped for the video messed up and he realized in the middle of filming but had to keep going.
Good observation tbh
Its parmigiano reggiano btw. Its the same cheese but different in a way that parmesan is parmigiano reggiano that was made outside Italy.
@@RiceTilts Not the same cheese. Cows and Sheep aren't the same animals
@@thapelo351 Talking about parmesan and parmigiano. Not parmigiano and pecorino.
dont know if thats correct but feels right and its a very good observation imo
To be loved by many people is a Gift, and to deserve it is a Talent.❤
He blew up on him absolutely roasting people to a crisp, not his cooking. He's nowhere near the best chef in the world.
@@King_George_W_Kush According the Michelin, and his bank balance, he's not that far off ;)
Damn he loves his butter
I love how Gordon can make even patas look amazing.Thank you chef for blessing us with your skills and flavors.
literally the first time I've seen pasta with lettuce. I literally can't believe it could be good, but i will literally try this because I literally love trying new food ideas.
I literally made it today and it is literally really good. I literally couldn’t find the cheese, and the store was literally out of fresh herbs and fresh chilli so I literally swapped them out for Parmesan and dried chilli/herbs and it was literally still literally really good. I would literally recommend you literally make it yourself.
No fr literally
My wife likes mixing her rice with salad on the same plate. I just can't get into it but it always looks good.
Thank you for teaching me. Priceless.
Love you man. You make me want to be good at kitchen. I get to understand the paradigm of cooking because of you, especially staples that remind me of healthy foods I've missed and taken for granted. Good job Sir! You made me change my mind. Kudos.
Just changed my plans for lunch tomorrow. Will do something similar not quite as much butter. looks great and will use up some stuff lying about in the fridge. Thanks👍
So many tips from just listening to Gordon, and watching his technique and cleaning his work station. Great to watch, thank you Sir.
I love Chef Ramsay and I love pasta!!! Let's go!!!
Yeah Mr Gordon 👍🏼
Did this for dinner tonight, it was really good, will make again!
I love how passionate You are about ingredients and how You explain everything. I love cooking myself. People say I am really good at it, but watching Your cooking teach me a lot and for that thank You so much.
Wow…..my wife is gonna love this, I’ll be making this soon, a great summer dish. Cheers Gordon 👍👨🍳👍
Made this for lunch today. Added a few extras that were hanging out in the fridge. Used a couple of Chinese cabbage leaves instead of lettuce added a little miso paste and it was delicious. Thanks for the inspiration. Oh. Only a couple of knobs of butter.
I was just looking for an amazing recipe for pasta and here it is! Gonna cook it tomorrow
This looks incredible. Can't wait to make it, thank you!
I will definitely try this dish......everything I love to eat in one pan.....brilliant!!!!
I love how you really use your hand to feel the ingredients while you cook. So inspiring ❤
Gordon is such a great guy. He loves his family so much, he works so hard.
Thank you; great tutorial and inspiring. ❤
From the amount of butter you but in there is gonna give me a heartattack.
Animal fats have never caused heart attacks thats the biggest lie big pharma has ever told.
Stop it. You really think butter is bad for you. Please do some research. it is absolutely good for you and will not harm you. oilve oil, grapeseed and any other seed oils clog your arteries. Need some references or research on it? UA-cam low carb down under seed oils. Vs animal fats. Get rid of the dam oils. eat only fat. you will do better in life. I bet you are on a statin and BP med. Stop that garbage too.
Butter is healthy
@@stringbender3
Yep this demonization of butter and fat is unfortunate. When I have high quality butter i can just feel the goodness and healthiness of it.
ain’t that much. you ever watch Paula Deen cook?
Pasta looked beautiful. Love the cookware! saving for them. 😊
its awful
I don’t think id be using a metal tongs on this frying pan 😊

Anything you make looks absolutely amazing love you and your shows
You're one of the few chefs that I can actually watch. You're not annoying 😍
This looks amazing for a “I’m too tired to cook” night. I’m very sinful however as I’m not a pea person so I would use asparagus as a substitute. Thank you for this. 😋
Wtf asparagus in pasta?
@@lostpockets2227 It’s really good! Try it, you might become a fan! Bacon snd asparagus so delicious!!
@gingerkelly5146 are you putting whole spears of asparagus, or are you chopping it up?
I was once absolutely taken away when I got introduced to smoked salmon spaghetti, something I would have never even thought to exist. I suppose I could give Asparagus a try, it wouldn't hurt to experiment.
I'm with you on this 100%, no peas, please, and asparagus is a good substitute suggestion.
Hate peas one thing I cannot put in my mouth just can’t eat it 🤢
"little bit of Pecorino"
It literally says "Parmigiano Regiano" on it 🤣
They're more or less the same anyway. Just different animal.
@@WendifurTTVwrong 💀
Pecarino from sheep, parmigiano from cow, isn't it?
@@WendifurTTV They taste different. But anyways, you're right about one thing. You can use either one and it'll taste good
😂 I noticed that one too . Whatever it is finishing touch of cheese is almost mandatory in Italian pasta dish to my mind.
Can’t wait to make this. Thank you Gordon for the inspiration
Absolutely Scrumptious!
Pro tip, make sure your hood is on is giving 'pro tip, water is wet' 😂
❤
Those are funny 😮😅
Was wondering when was someone was gonna notice LOL
We had this dish tonight with gf spaghetti , and it rocked! Thank you for an absolute winner.
Really like the cutting board in his kitchen. Have watched Gordon Ramsey many times. Love his style and presentation. Excellent.
Perfect for me!!.. like Short-tempered.. Thank you so much 👍👍🥰
Fresh frozen peas. Things you love to see.
I never understood that😂😂😂
@@tititichirca8250 It means that they are frozen almost immediatly after harvesting. So the vitamins and the structure did not break down. It's also the reason why frozen broccoli is healthier than "fresh" store bought broccoli.
The freezing process also helps with their sweetness. Peas are one of the few foods that work better frozen
Freezing affects things differently. It's not universally bad.
Seafood being the obvious example.
Household Ingredients? No way!!! I never make food with those. Have to try it.
the steps pretty much similar actually. It depends on what u got in ur cupboard, fridge, etc
If you have a sunny window, grow your own herbs! Seeds are cheap at the dollar store as well has the pots. I ordered some seeds because by the time I found out about them selling gardening stuff it was too late lol. I now have basil, thyme, oregano, cilantro, a tiny Tim tomato plant and Thai chili peppers 😂😂 I live in NYC so I know this is doable for just about anyone. Look up Kratky for the cheapest way to grow. No soil needed just a jar and a window ❤
When i read it my mind was like - Ah household ingredients, dish washing liquid, dishwasher tabs, hand soap, garden fertilizer, bleach, sodium hydroxide, peroxide wait, ... are we making a bomb?
@@ChickenDeranged walao, bro😂😂
@@johnlau6749"the steps pretty much similar" you said that very same thing on another post up top; exactly what does that even mean, similar to what?
That looks amazing! Can't wait to try it!!
Prepared this dish last night and it was a hit with my family. The fresh herbs make it a delicious summertime pasta sauce that keeps you coming back for more. And the lettuce was surprisingly good!
Looks delicious. I’m going to make this.
Literally the best cooking video ever. Literally. It's done in under 10 minutes, literally.
Literally
Really literally ?
Honestly
5 minutes if you double the video speed 😂
Definitely going to have a go at this, so simple and in 10 mins! Nice one chef 🙂
This was absolutely inspiring...I just made a version of it right now for dinner. Except I used what I had on hand...bacon, peas, mushrooms, roasted red peppers, fresh parsley & garlic. And of course butter. And broth & pasta water and a bit of tomato sauce. Angel hair extravaganza. Delicious. Family loved it. I should have grilled some chicken breasts to serve with it, but who can think of everything? Thanks for this tasty inspiration, Gordan Ramsey!
2:19 already I can smell that nice crispyness… Please share with us that extra sensorial attribute.
I was thinking the same thing.... you mean you can smell crispiness? The same way people who do art videos and will say the art work looks delicious!? I always thought "delicious" referred to something I can taste
Looks so delicious Gordon 😋
Gordon you're my best Teacher, I'm cooking last 16 years and I use only your Recipes, but my wife, she hate me, couse the kitchen after all procedures look like a Hell, I've also learned how to litter the kitchen beyond recognition, as You! My wife and daughter are delighted with the food that I cook according to your recipe, but they hate you and me because they have to clean everything up later. Thanks a lot ! You are the best.

I just made something similar last night. My fiancé and the neighbors are raving about it. Surprised me. I think it could have used a bit more nutmeg and salt… this looks good Gordon! Thank you for sharing. Love all of your shows. 😊 Kris in Jupiter FL
Nutmeg! Brilliant. I should have added that to my version.
How much butter did you add in this dish 😮😮😮😮😮😮
One pound 😊
The peas aren't fresh. They're FROZEN! 😆
Fawlty Towers reference? 🤣👍
They are Fresh Frozen. There's no such thing as a fresh hamburger.
frozen peas are fresher as they get frozen within 12 hours of picking. i use loads of frozen veg in steamer and its tastes so much better.
Looks amazing, will definitely try it!!
Very good guideline !! Thanks for sharing !! Great job !!
“It looks healthy”
Minus the butter, fat meat and cheese
I think he forgot to add butter
Right?! I think he needs more😂😂😂😂
All those healthy herbs, lettuce and at least 1/2 cup butter.😊
Looks absolutely deliscious! And doable. Thank you, Gordon!
After quite a few years of not cooking, I tried this. We LOVED it. There wasn’t a drop left!

Just by watching, I can tell something magical happened when the lemon was added! Definitely will be making this dish. Thanks Chef!
Lovely....true spring healthy greens ..when God of cooking cooks....how can it b not lovely
I love how Gordon started using chili’s in his cooking
How to make a pasta dish with a few household ingredients.. "grapeseed oil" "pecorino" "fresno chili" ... 😐
bro, basically this dish is yours to change since the steps pretty much similar and also those ingredients literally can be found in ur cupboard, fridge, etc.
It's meant for people who actually cook
You probably don’t cook often if you don’t have grapeseed oil.
Sub pecorino with Parmesan , and Fresno chilis with whatever chilies you have. Pretty standard ingredients.

To all the commenters here complaining about the amount of butter being unhealthy;
Real butter is good for you. It is healthier than margarine or seed oils (canola, safflower, corn, etc). It doesn't cause heart problems despite what youve been told all your life. Butter makes you feel full faster so you eat less. Check out Carnivore diets, Keto diets or the video "Butter Makes Your Pants Fall Off" here on YT. I have no connection to any of these.
Now that's right Charlie! I cannot believe how programmed they all are 😮
@@Malibu_Dawn Thanks, I can't believe it either.
Butter, so fresh and healthy. More butter, more healthy. Hot lettuce sucks but the rest really does look amazing.

I did it exactly like described besides I used Olive Oil. . It was perfect. I did not add that often butter. You can literally check how much you need. With preparation it took me 25 minutes 😄Included preparing cutlery and plates for 3. Thank you Gorodon 😁 My wife loved it.
😊❤looks absolutely delicious 😋 need to repeat the video. Gonna try this!
I'm curious to know where this house is located if these are "household ingredients" because something like grapeseed oil, I've never even heard of, same with fresno chili, never seen it or heard of it.
Just use olive oil or canola oil and a basic red chili.
Grapeseed? Rapeseed lol, one of the most common oils there are.
