Wow…. So I made 2 racks of ribs today for the first time and they were fall off the bone tender. I used mustard as a wet rub before I put a dry rub on that I found online. Cooked them at 320° covered in foil for 2 hours (uncovering and saucing them for the last 20 minutes). Then I sauced them and put them on the grill for another 5-7 minutes for char/color. They came out absolutely amazing and even though I’m a HUGE fan of your dad this episode inspired me to actually try it. Thank you so much.
So ribs, are usually the best around 195-205 F in finished temp. I am guessing, for those not to have gone dry I am guessing you rested them and then hit em on the grill. Nice job. Also, you DO NOT need to have a binder. Many add one, but if your ribs are damp, then the seasoning will stick. While it is recommended, and helps seasoning stick, it is still an optional thing. So both of you were correct in the application of seasoning. The only thing I would have done differently, and this is a preference, would have been to add the ribs on a wire rack above the liquid. Just feel like it gives a more even steaming to the vinegar and stock. But those real good boys! Nice job!
