How to Make Meatballs Like a True Nonno | Polpetti Di Carne

  • Nick brings you his beloved meatball recipe, Polpetti di Carne. Every Sunday, he prepares these savoury meatballs and simmers them in a rich tomato ragu sauce. In true tradition, Nick and his family enjoy these succulent, juicy meatballs as a second course, paired with egg rolls and a fresh salad, following a delicious first course of pasta with sauce. These meatballs are absolutely "bewdiful" (as Nick would say) - tasty, juicy, and utterly delish.

    NICK'S MEATBALLS | POLPETTI DI CARNE
    Ingredients
    - 300g beef mince
    - 200g pork mince
    - 4 eggs
    - 1/4 cup chopped continental parsley
    - 1/2 cup grated cheese (Pecorino Romano, Parmesan, Grana Padano)
    - 3/4 cup breadcrumbs
    - 1 garlic clove, finely chopped
    - Salt and pepper to taste
    - Olive oil, for shallow frying
    Instructions
    1. In a large bowl, combine the beef mince, pork mince, eggs, parsley, cheese, breadcrumbs, garlic, salt, and pepper. Use your hands to mix everything thoroughly. The mixture should be moist but not too wet. If it's too dry, add another egg. If it's too wet, add more breadcrumbs.
    2. Roll the mixture into golf ball-sized meatballs and place them on a plate.
    3. Heat olive oil in a large nonstick frying pan over medium heat. Add the meatballs and fry them until they are golden brown on all sides, turning as needed. Do not cook the meatballs all the way through. Once browned, remove them from the pan and let them rest on a plate for 15 minutes.
    4. After your ragu sauce has been simmering for at least an hour, add the meatballs to the sauce. Continue to simmer for approximately one hour.
    5. Serve the meatballs with pasta and ragu sauce, or enjoy them as a second course with a fresh salad, just like we do.

    Nonno i'm sorry, ma le polpette non si fanno con il pane macinato ma con il pane duro che va poi messo nell'acqua😢 cmq continua così i enjoy all your videos, you're the best❤❤
