- Here is a video of my Cheese And Onion Pie With New Potatoes And Carrots. I hope you enjoy it.
For the filling
1 tbsp. olive oil
1 large onion, finely chopped
1 egg
200g mature Cheddar cheese, grated
For the pastry
600g plain flour
pinch of salt
150g butter
150g cheddar cheese
250ml cold water
1 egg
To make the pastry
Add the flour butter salt and cheese to a bowl and rub together to create a crumbly mixture. Add the water and mix lightly, do not over mix, wrap in cling film and cool for 30 minutes
Method
Step 1
Preheat the oven to 200°C (400°F/Gas 6). Fan 180. Heat the oil in a small pan over a low heat. Add the onion and a pinch of salt, and cook for a couple of minutes until transparent and just starting to soften. Tip into a bowl, and leave to cool completely. Lightly beat one egg, and stir into the cooled onion with the cheese. Season with salt and black pepper.
Step 2
Halve the pastry, and roll out each piece on a floured work surface. Use one of the pastry circles to line the plate or pie tin, overlapping the edges, and fill with the cheese and onion mixture. Wet the edge of the pastry with a beaten egg, then top with the other round of pastry. Trim away the excess, then pinch the edges together with your finger and thumb to seal. Using a sharp knife, make two slits in the top of the pie to allow steam to escape.
Step 3
Brush the beaten egg all over the top of the pie. Bake in the oven on the middle shelf for 25-35 minutes until cooked and golden. Serve with a choice of vegetables.

A quick question, why did you not seal the rim of the bottom crust before you put the lid on? If you then crimp it it should not come apart. All the very best Terry from one chef to another. Cheers. Rab

What a great idea to use some cheese as part of the fat content! Is that your own 'invention'?! I hope you use a Yorkshire Cheese - my favourite is Wensleydale; would that work? I've recently started making my own butter (my local supermarket sell their double cream off at half-price and as I'm a Yorkshireman, I'm there to buy it up!) I grow my own onions so just need a field of wheat next and I can do it all!
It's not my invention perse, I heard it somewhere along my life's journey, I just chose to use Cheddar cheese. Not sure about the wensleydale, it depends on the fat content. Just give it a go and see how it goes.

Loved the look of the pastry and the the finished pie.my tip is when youve put the base of the pastry and filled it egg wash the top edge then lay on the top or lid then crimp the edge and cut the excess off. egg wash the top then cut in the slits that way the air slits wont get blocked with egg wash.only a tip ive picked up on works for me.keep the videos coming

It might be worth adding a bit more colour to the plate, so the thumbnails look more enticing. I don't doubt it tasted great but maybe if you added some fresh herbs, some greens, or something else, it might lift the look, as it is a bit beige.

Looks great Terry..but always grease you plate or dish when putting pastry on...and the pastry lid is easier when wet around the edges..will stay together without any leakages... I love cheese n onion pie..or its lovely as a Quiche with mash and baked beans ...nice video hun ....👍👍😋😋
