My family cooks the meatballs right in the sauce. No oven or frying in the pan. Put them straight in the pot of sauce and cook. All the flavor of the meatballs helps flavor the sauce. So good. I am going to try the ricotta cheese next time I make meatballs. And great job for being the first time. It's harder than you think talking to a camera

I was in Tuscany several years ago and had the best meatballs of my life, I've tried over a dozen recipes by many different Italian UA-camrs but none have come close. This one is almost perfect. I appreciate that a lot, Damian!! These are definitely the best I've had. A lot of Italians in Italy like to do milk with the breadcrumbs/soft bread for moisture, so that's an option instead of ricotta. But i think ricotta does the trick perfectly:) I'm glad you enjoyed them so much!

I make my spaghetti sauce with grated onion grated carrot and grated celery. Then I at the San Marzano tomatoes are fresh tomatoes, parsley, basil, oregano. A little salt and pepper and a teaspoon of sugar. I cook the onions carrots and celery and a little olive oil and then I add the tomatoes and everything else.
I made these today after watching your tutorial yesterday. They were FABULOUS……tasted like an Italian grandma made them…sue from fl. THANK YOU!! I used beef, pork and veal.

Had a friend years ago who moved here from philly, she made these meatballs from an old family recipe , I have never had one that good since I moved away, and it was never a shared recipe except in the family,they were out standing.
When I make meatballs .. I do exactly as you!! But!.. I fry them on not too high a heat.. as we like our meatballs browned on the outside… then as they come out of the pan.. put them in a casserole with marinara & bake a bit. May I suggest you scoop them all out, THEN roll them all? So much faster than up and down, up and down, plus, your hand only get yucky once. Scoop, roll and then wash hands. Great job!

Let me tell you what IS smart. Do NOT grate the onion. Chop it into not-so-small pieces. When the onions cook inside the meatballs, those little chunks shrink tremendously as they release their juices into the meatball itself. The space that was occupied by the onion is now a perforation inside the meat - a hole where the onion flake used to be. Many such holes in the interior of the meatball are left by the melting onion bits now immersed in the hot sauce. Those air holes are now filled with the sauce as it runs through in and out of the meatball, and in this way the meatball flesh becomes infused internally with the flavor of the sauce that surrounds it, and the sauce becomes enriched with the unique flavors contained in the meatballs. And don't use an ice cream scoop, and don't roll them or squeeze them in your hands. Roll the meat into long sausage shaped logs of your desired diameter and slice them into thick coins at reqular intervals to make them the same size. Then just shape them with two fingers into a roughly spheroid shape - using no pressure and let them brown in high quality olive oil before adding to the sauce

My oldest daughters boyfriend waited until after the meal and said to her 'Your dad bought these didn't he' The reason he asked her that is that whilst at Collage he worked in an Italian restaurant called Bianco's which had two genuine Italian chefs, and he said your meat ball recipe was better than there's 😮😮 I would say that was amazing praise for these beauties. These are the ingredients I use also, except for oregano. I grate the onion & garlic so there's no chunks at all and I prefer to use bread instead of crumbs but I do still use crumbs at times and I like to mix all ingredients (except meat) together then mix into meat, I think it makes a difference. Nice video, thank you.

Thank you for sharing your recipe. Good video, good explanations and demonstrations, very easy to follow. I make my meatballs almost identical to yours, but I have never put in the ricotta before, will give it a try next time for sure. I do like to use the three types of meat as well. Also, I tend not to use bread crumbs instead I finely ripped apart bread and soak it in milk. I think the ricotta would make up for that. I too prefer to bake my meatballs.

The appetizer, meatballs at Carrabas have ricotta cheese in them. They are the best meatballs I've had. Also, I like to mix all of the ingredients first and THEN add the meat.

I had four grandparents who were born in Italy, consider myself a proud Italian American, but nobody I knew ever put ricotta in their meatballs. It makes a world of difference! They are moist, no need to add moistened pieces of bread that would come out lumpy. My only change was to add grated pecorino cheese instead of parm, since it is very robust. But you’re a genius, and I am very grateful!

Made these today can’t wait to taste them! I grew up surrounded by Italian moms cooking and my dad’s cook offs with the musicians in his band. Even so I have trouble deciding ingredients some time these really appealed to me AND I have all that ricotta left for desserts. I love ricotta’s flavor.

try chopping then sauteeing the onion if you don't want it to be noticable inside the meatballs, it works as well.
My mom occasionally did it that way so there wasn't raw onion in them - great tip!
I always do that along with green pepper for meatloaf.

Yes! Grating the onion for meatballs is so much better than diced or even minced. Makes them so much easier to shape without little cubes of onion.

My oldest daughters boyfriend waited until after the meal and said to her 'Your dad bought these didn't he'
The reason he asked her that is that whilst at Collage he worked in an Italian restaurant called Bianco's which had two genuine Italian chefs, and he said your meat ball recipe was better than there's 😮😮

These are the ingredients I use also, except for oregano. I grate the onion & garlic so there's no chunks at all and I prefer to use bread instead of crumbs but I do still use crumbs at times and I like to mix all ingredients (except meat) together then mix into meat, I think it makes a difference. Thank you for sharing your recipe. Good video, good explanations and demonstrations, very easy to follow. I make my meatballs almost identical to yours, but I have never put in the ricotta before, will give it a try next time for sure. I do like to use the three types of meat as well. Also, I tend not to use bread crumbs instead I finely ripped apart bread and soak it in milk. I think the ricotta would make up for that. I too prefer to bake my meatballs.

The appetizer, meatballs at Carrabas have ricotta cheese in them. They are the best meatballs I've had. Also, I like to mix all of the ingredients first and THEN add the meat.

You can totally omit onion if it's your personal preference.
Onion adds such a depth of flavor that garlic alone doesn’t do.

I had four grandparents who were born in Italy, consider myself a proud Italian American, but nobody I knew ever put ricotta in their meatballs. It makes a world of difference! They are moist, no need to add moistened pieces of bread that would come out lumpy. My only change was to add grated pecorino cheese instead of parm, since it is very robust. But you’re a genius, and I am very grateful!

Made these today can’t wait to taste them! I grew up surrounded by Italian moms cooking and my dad’s cook offs with the musicians in his band. Even so I have trouble deciding ingredients some time these really appealed to me AND I have all that ricotta left for desserts. I love ricotta’s flavor.

Yes, great point on shredding your own cheese, vs buying pre-shredded. Pre-shredded cheese have anti-caking agents that don't make them great for these types of recipes. Looks delish, and thank you for sharing!!
