- Today I'm sharing my family's secret ingredient to making incredibly tender Italian meatballs! They're better than any Italian meatball I've had and are the best addition to serve with your favorite pasta. I hope you enjoy this recipe as much as my family and I do!
SECRET INGREDIENT ITALIAN MEATBALL RECIPE:

INGREDIENTS
1 lb ground beef 85% lean is best
1 lb ground pork (or split 1/2 lb pork + 1/2 lb veal)
1 cup breadcrumbs
2 eggs
1 cup ricotta cheese
1 cup fresh parmesan
1 small onion or half of a large or medium onion
2 garlic cloves
2 teaspoons fresh parsley, finely chopped
2 teaspoons fresh basil, finely chopped
1 teaspoon fresh oregano, finely chopped
1/2 teaspoon (each) salt & black pepper
3-4 cups marinara

try chopping then sauteeing the onion if you don't want it to be noticable inside the meatballs, it works as well.
My mom occasionally did it that way so there wasn't raw onion in them - great tip!
I always do that along with green pepper for meatloaf.
You blew my mind with grating an onion. Love how you explained the purpose of these ingredients especially the egg portion.

I made these today for the family, and the girls brought there boyfriends.
OMG Lady they went down so well you would not believe it !!!.
My oldest daughters boyfriend waited until after the meal and said to her 'Your dad bought these didn't he'
The reason he asked her that is that whilst at Collage he worked in an Italian restaurant called Bianco's which had two genuine Italian chefs, and he said your meat ball recipe was better than there's 😮😮

Drew is correct by saying that the meatballs have crispy edges. You want soft, moist inside and crispy edges as you achieved. Great video! I use the same technique and ingredients that you do. Much love and blessings to both of you and your family ❤

Thank you for sharing your recipe. Good video, good explanations and demonstrations, very easy to follow. I make my meatballs almost identical to yours, but I have never put in the ricotta before, will give it a try next time for sure. I do like to use the three types of meat as well. Also, I tend not to use bread crumbs instead I finely ripped apart bread and soak it in milk. I think the ricotta would make up for that. I too prefer to bake my meatballs.

Beautiful chef, presentation, kitchen and food. Similar recipe here, except I turn the meatballs 3 times way in oven to prevent a flatter side then cook more in sauce.
A dear buddy insists on plenty of cheese in the sauce when simmering, and it is pretty awesome too. I cry too much finely mincing the onion, but will give the grate a go. But, one question...for all...most Nonni add the egg as You did. An old uncle would mildly beat them (not full scramble) with a healthy drizzle of olive oil drained from a can of quality tuna (which he then used for a salad or separate sauce/pasta.) Just conversation, not recommendation.

I wish I could comment privately because it is kind of jerky to suggest cooking techniques to a cooking channel. That being said, I made meatballs like this with very rich meat for added tenderness. This gave me leeway to use the broiler to brown both sides of the meatball. I used tongs to flip them. Also, you are a cute couple. My wife and I send our regards.

Mix up the slurry first and then you can incorporate the meat with a fork

Well done video... and I'm an expert at cooking videos... My meatballs except for the ricotta... that's new... I also have learned to mix with just one hand and keep a clean hand for holding the bowl and such...

I will start to link my tools in our descriptions! Here is the exact size and one I use. amzn.to/3wGKMJB It says its a 3.4 Tablespoon size. I'd say anywhere around 3.5 to 4 Tablespoons sized meatballs will do! Hope you enjoy the meatballs!
I just finished making the Meatballs a couple of Hours ago. I can't Stop eating them. They Truly are the Best, Most Moist & Flavorful Meatballs I've ever Made. The recipe Yield me 28 Good size Meatballs. Bethany Thank You so Much for sharing your Family Recipe with You Tube. This will be my Go to Meatballs for now on. They are so easy to Make. I did Broil them for 7 mins after Baking them for 20 mins. They came out Perfect! Thank You so Much

What would make it even faster is if you scooped them all on the tray and then went back and rolled them , because you are not picking up and putting the scoop down between scoops.

As long as it’s a tasty marinara, but the meatballs are plenty flavorful!
What sauce did you use to cook them in?

You don’t have to! it adds more tenderness and flavor but you can just do beef.

As a Chef I recommend stuffing those into Bell peppers. Maybe Poblano Peppers. And Scotch Bonnet Peppers if you can take The Heat. Just a Suggestion...
Raw onion in meatball it’s not good. You should cook the onion before you put it in the meatball..
you're more than welcome to! I didn't mention it in the video but I grew up with my mom occasionally cooking the onion before adding.
