✅once done, chop in strips and cook in a skillet, it will make all meat nice and crisp
✅Marinade for at least 24 hours
Ingredients:
5-7 lbs thin sliced pork shoulder
5 New Mexico chile pods
1 Chile ancho
1/4 onion
3 garlic cloves
2 oz achiote paste
1 bay leaf
Salt to taste I used 5 tsp
2 tsp black pepper
1 tsp brown sugar
1 tsp onion powder
1 tsp garlic powder
1 tsp oregano powder
1/2 tsp ground cumin
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
2 tbsp white vinaigrette
2 tbsp oil
6 tbsp pineapple juice and 4 slices of pineapple
1 serving of love💕

I know it's not traditionally a Mexican dish, but I spent some time in the pizza business, and Mexicans are actually known for eating a lot of Hawaiianas. Personally, I prefer them with jalapenos, and extra garlic (both go very well with ham/bacon and pineapple).
Or perhaps you already have some kind of pizza recipe? (I'm new to the channel)

Made this recipe tonight and OHHH WAS IT A HIT!!!! I didn’t make my in the oven nor did I use pork. I used desmillo and cut my meat and cooked it on the stove top. Not spicy but has so much flavor! Thank you Claudia!!! I always go to your videos before anyone else’s Lol!

Al pastor is my fave next to pozole, and your recipes for both are the absolute best. I serve my al pastor on a plate con frjoles e arroz,d not in tacos, just so you know. Your innovation of cooking al pastor in the oven is a game changer for me, who has no access to smoker or other outdoor cooking methods. A million thanx! I love your recipes so much that I stopped buying canned red enchilada sauce and instead make yours, they have so much more flavor and depth plus I can make the sauce thicker to my liking. I don't know if I am getting the right peppers sometimes as they are not as big and dark red as the ones shown in your videos. Here in Arizona, it's hard to find some peppers and I wanted to know if you could share the brand and where you get your peppers and other specialty items. ONE Question..After frying the chilis you did not soak them in boiling water. Your earlier videos you did that. Is that an oversight? Or indeed you put them dry in the blender with no problem?

I just finished making this. The flavor was great but the texture was off. I think marinating it overnight caused it to be mushy. Any marinades with pineapple generally break down the fibers in the meat. I wouldn’t marinate this more than 3 hours next time.
This happened to me too but I think it just needed higher temp …
You don’t really need go over an hour with the marinade tbh. If you use fresh pineapple juice the enzymes will tenderize it way too much, I just use orange and lime in the one I have in the fridge just to be safe. 😂
