I made this recipe yesterday along with the green salsa for the topping on the tacos! Hands down the most amazing thing I have ever cooked! I smoked the pork on my pellet grill at 270 degrees and basted with the juices every 30 minutes! You have to make this recipe!

Suadero and cabeza are my favorite but if I find a place that makes good cuerritos and carnitas I’ll get that too. If the tripas are properly clean and extra crispy can’t go wrong either
drill 2-4 small holes in your cross bar to stick the skewer tips in. anti- rotation holes, just need a little longer skewers so the handle rests outside the grill frame & acts as a stopper

After watching your videos over the past few weeks, I finally hit that subscribe button. You said carnitas are your favorite, my weakness is lengua. We used to cook it in salt water in a stock pot for about 3 hours. Then slice it, put it in a tortilla with beans, pico de gallo, cilantro and salsa Verde. Cheers from Kansas City.
I really like his sauce recipe...will try tomorrow. I personally like the meat sliced about 1/4-3/8 thick for more layers and more delicious bites. That's what I've seen in many of my favorite pastor joints in both US and Mexico. That said, I'm just a gringo but I love a great al pastor.

My mouth is watering, that looks so good! I once made adobo from scratch and used it on lamb for Easter. I didn't have achiote though. I need to find some next time and use your recipe. I'd love to see you doing something with lamb or cabrito.

So, I don't have a cooking apparatus like yours, or a vertical rotisserie/broiler. However, I do have a large vertical pellet smoker, and a hook that I could hang the meat on similar to a vertical skewer. I can blast it in the smoker for 4 ish hours. My question is, do you think that would alter the flavor too much? Or do you think it would still be worth trying? Smokers make great bark. I live in Utah, originally from Texas, and pastor might be my favorite food of all time. There are some decent pastor places here, but i have been wanting to make my own for a long while. This video has inspired me to try with the tools I have on hand!

I ordered an electric rotisserie from Amazon Arnie just for this. Couldn't find one in Nuevo Laredo. Made it twice so far hands down the best.

Arnie your better then Rick Bayless and Bobby Flay combined..your down to earth ..salt of the earth American, no pretensions no BS ..thats very refreshing. ..and your recipes are easy to replicate, keep up the great details and good work, I am surprised you and wife don't weigh 300lbs with all the great food you do ...keep up the great work and videos.
So, I don't have a cooking apparatus like yours, or a vertical rotisserie/broiler. However, I do have a large vertical pellet smoker, and a hook that I could hang the meat on similar to a vertical skewer. I can blast it in the smoker for 4 ish hours. My question is, do you think that would alter the flavor too much? Or do you think it would still be worth trying? Smokers make great bark.
I live in Utah, originally from Texas, and pastor might be my favorite food of all time. There are some decent pastor places here, but i have been wanting to make my own for a long while. This video has inspired me to try with the tools I have on hand!
