I'm pasty white and needed this written out. In case anyone else needs it.
Chile Mix:
Add to pot of water (4 to 6 cups)
15 Guajillo chilies
3 Ancho chiles
3 Chile Arbol peppers
Quarter to half of an onion
6 garlic cloves
1 cinnamon stick
1 bay leaf
4 cloves (Clavo / Clavo Entero)
1/2 tsp Oregano
Bring to a simmer, let cool 5-6 minutes
Make Adobo
Discard bay leaf from chile mix
Transfer remaining solid ingriedients to blender
Add 1/2 Cup of chile water mix to blender
Add:
6 oz Pineapple juice
1 Tablespoon of Salt,Pepper, Garlic (OG, Pit Master brand)
1 tablespoon apple cider vinegar
2 tablespoons of achiote
2 chipolte peppers in Adobo
Blend - Add chile mix water (1st step) as needed to thin Adobo enough to strain
Strain Adobo into container (tedious)
Cook
Line hot griddle / skillet in lard
Add 1 pound ground pork
Cook until pork roasts (this happens fast)
Reduce heat, add adobo as desired (top with pineapple if desired)
Simmer for 5 minutes
Check temperature
Eat until your sick. Repeat.
Thank you so much!!
Thank you so much, highly appreciate it.
You’re a godsend 😂
@Awesomepieman-dw1po I made them last weekend following right off the list I wrote out and it came out AMAZING! Good luck and happy eating!
Thank you for your time doing this! You’re very appreciated!🎉😊
Arnie you are my favorite to watch for any Mexican style cuisine! Your videos are great because you don’t bs to much. You’re fun but educational! Thanks my friend. Keep up the awesome work.
Thank you for teaching me so much ❤️ ur channel has saved my relationship with my Mexican bf 🥺 I’m gringa and he lovveeee his Mexican food 🥹
That’s real sweet of you
I’m also a gringa learning for her man, we have a baby girl so I really gotta learn
Lol 😂
Tasty Taco's they are and I love eating them. My wife if from Texas and when WE go to visit every year (I) eat all I can of the Al Pastor & Carne Gasada, CHINGOW! and I love how there is an endless supply of BIG RED 😊😊😊.
I have made this 3 times...it's been a hit with everyone I have served it to...I still want to make a traditional style but till I can , this is the go to ❤
Never been disappointed by any of this guy's recipes so far. I have to try this.
Dude, this is going into my saved recipes playlist for sure. Here in Florida a lot of places don’t do tacos al pastor.
They have tacos in Florida 😂
Yes of course. That’s not what I said though.
Oh they should! Get a trompo and watch sales increase!
That's a fact.
I made this. It's outstanding
Arnie, whatever the Pork Board is paying you, tell ‘em to pay you more! This recipe is so good you’re selling pork in Australia mate! I just served a slightly modified version of this (it’s hard to get certain specific chillies locally) to the family, and it went down a treat 👍🏼
Can you or someone write the recipie down? It’s be great if you did that in the comments or description. It’s just easier and some people are read/write learners. Thanks for yhe awesome recipe, my wife and I just had this diced /cut up pork style, and although it was good, my wife likes ground meat (less gristle and chewing in her opinion) so this works perfectly.
Someone wrote it down btw, if your still interested
The guajillo and other peppers can have a very thick and tough skin, a vertical crushing type juicer makes quick work of them and can eliminate the straining step.
I use an old Omega vert juicer for salsas, fresh and canned peppers.
You can run everything for a salsa through the juicer then add separated solids back in or leave them out.
What a great idea, Imust try it, thank you for that.
Now this is an Al Pastor recipe for a single dude who loves cooking. I'd never get through a trompo fast enough by myself. But this? Oh hellz yeah!
Your show rocks. So many delicious, healthy, and fun meals. Thanks, amigo!
Not always the most healthy of meals at times, but good tasting ones usually come at a price :)
I am personally on a mission to try all of your recipes as none of them have disappointed me even close. Your party beans are still the best beans I have ever had. Doing this one this weekend and just need to get some cinnamon.
The party beans were good
I had this idea a couple years ago. I thought I was inventing this revolutionary shortcut to Al pastor. Then I when I ate it, I realized I basically “invented” chorizo. 😂
I had no idea what to make for dinner tomorrow. Now I know!
This is a great idea! Shocked I never thought to use ground pork for tacos. I'm going to do this next week for sure.
I just came back from buying the ingredients from the store. I am so making this from my Fiance today.
I am a displaced Texan living in CA. You bring me sabor de Texas. Thank you.
Genius! I've watched a trillion Hispanic cooking videos (I'm kinda addicted), and made just as many tacos in my home kitchen, and you sir have introduced something revolutionary! I'm super stoked to make this!! Thank you, keep up the great work, Arnie!!
Arnie, I notice you use the fine mesh strainer a lot for your sauces. Have you ever tried a food mill? I find you can strain sauces 3-4 times faster, and you shouldn't have to worry about how thick the sauce is before you strain it.
I have a bigger commercial strainer too but uise the fine one for video since thats what most people will have at home. But the bigger one is much much better and makes the job so quick, thanks
gracias don, ima make this for my mom sometime. tacos are so simple to make but the process is what makes it so good! saludos desde LA
Adding this to my list. That Adobo looks great.
Watched all your videos.! Definitely trying. I moved to Wisconsin and the Mexican food ain’t the same. So I make everything myself. 956 Rio Grande valley
I’m a gringo. Southern Louisiana. That looks so good. Amazing.
Can you grow pineapples in Southern Louisiana? Or is it too humid?
Thank you!
For this good recipe! Keep them coming!!
The ground pork is a really good idea! Texture won't be the same, but the convenience is what I'm here for.
I hit the thumbs up button twice thanks for your video.

Making this tonight 😋
Question: What kind of griddle is that? Looks amazing! Thank you so much for the recipe and tips!
Muy rico! la receta por favor. 🙏🏽
Making this next Tuesday. :)
Thank you!❤
My favorite taco, Charlotte nc ❤️you 👍👍🌮🍺!
Oh my god that look good I’m gonna try that today, but I’m gonna marinate the ground pork.marinate 30 mins and let’s see how it comes out and put grilled pineapples
I wanted to grill the pineapples too but were really short on time, it's a much better flavor and marinade the pork longer yes, up to 3-4 hours and it will be even better.
Oh yum
Would luv to watch the traditional way of cooking al Pastor tacos❤
I'm all about that salsa Rojo! ❤
Looks good buddy.
Being from the Alamo city myself, I always trust a San Antonio, TEXAS Mexican! 😆👍
Arni I'm a Texan living in N. C I enjoy watching you cooking question why in tacos al pastor have pineapple keep on cooking
Looks fire bro and I sure miss mama’s cooking
Yummy!
My favorite taco. Never had the guts to try and make it myself. This might be worth a shot.
You got this, do it!
Adobo is an awesome seasoning mix. That and a little onion powder is a perfect burger seasoning!
Uff! Que rico!
New fan and gona try this out this weekend. Was wondering if this would work in a slow cooker with pork shoulder as time is no problem for me. Also wondering what would happen if i just skip the straining step.
My goodness. This is so easy! Well, the straining part is definitely tedious. But worth it.
I like the slotted spatula and that grill! Also like the double burner stove! Can you please post a link of where to buy all of them? Thank you for the video, I’m salivating at the thought of making those tacos Al pastor! Love you Arnie!!!❤️

The spatula I do not recall but think it was a loacal restaurant supply store.
Thank you so much Ernie! Wishing you and your family a Merry Christmas & and happy New Year!
We definitely need taste-a-vision.
People, stop watching others about how to make Mexican. This is the one and only man you need to follow.
Do you ever cook with deer meat or wild game? I love your channel!!!
I have all the peppers I need, I got the toppings, and I'm making this tonight!
Damn, that'll wake you up! I forgot to take the seeds out
The Red Green and White. Italian and Mexican food is easily two of the top 5 foods in the world.
I need to make these boxing day let's go!!
boxing day - orale! i have family in liverpool
Arnie, have you used this as a marinade for pork slices for a traditional al pastor? I ask, because I've struggled reeling in my recipe for al pastor. I mean, my tacos are fantastic, but not perfect. On a side note, I love the ancho, they always have the perfect smell like a dried fruit.
I'm waiting for the warmer months to come up here in the north, but I've got a list of your recipes to try. Keep up the great content.

Your channel is sooo enjoyable. But if you're just gonna use ground pork might as well use Chorizo
Alright, you switched gears here, my friend😂 ain't no right way ain't no wrong way right 🎉
Great videos . Is your seasoning is stores?
yessir Mike at www.pitmaster.us/
Ummmm rico 😋😋😋
Do you blend up the cinnamon stick as well or is that removed prior to blending?
Arnie, I shared your video with my wife, so hopefully there'll be some tacos al pastor in my near future. I like your guayabera. Where can I get one?
@billsimon you can order them online here>> www.texas-standard.com/products/tejas-guayabera-estandar?
You got a place where there is a recipe list? Hard to follow a video for all the stuff going in to this.
Thanks. I have a meeat grinder and about 40 lbs of pork shoulder i paid 79cents/lb for. Tons of sausage made but i need ideas of what else to do with ground pork
