I'm trying chuck roast this time to cut down on cooking time. I omitted anchovies since my hubby is allergic to fish. added Napa cabbage (cooking stalks for 1 hour then add the sprouts and leaves for the last 30 minutes). I hope it doesn't change the flavor too much since we did it how you said the first time and I LOVE LOVE LOVED it. I'm half Filipino and half white but my mom taught me a few Filipino dishes and everyone loves her cooking. I'm going to show this to my mom and I know she'll love it. My husband has also been cooking your food since I showed him your channel and he's been doing such a great job. your instructions are very easy to follow and we appreciate all the recipes you have shared. thank you very much for everything you do! !!!!
the anchovie hack is Genius! Last winter I made Yukgaejang (without fernbrake, unfortunately) for myself, ate it for two weeks straight and I still love it. Also I didn't get sick from flu. Best dish for cold season! thanks a lot for that recipe!

Seonkyoung, I first ate Yukgaejang in Chuncheon in 1985 while stationed at Camp Page in the U.S. Army. I will never forget how instantly comforting it was on a very cold winter's night. Thank you for sharing this.
i HAVE to have gosari in my yukgaejong. when i lived in Alaska, i craved it constantly while pregnant. id call the korean restaurants ahead to make sure that they have gosari available :) sooooo good! the taste and the texture is delicious

Just made Yukgaejang today. I put 5 spoons of chili pepper instead of 4, great! Unfortunately forget you said Do NOT stir egg....... the soup was cloudy. So unfortunately. But the flavor was also good. I put 6 garlic instead of 10, I personally think it is a little scary to have 10 garlic. And I think it is good. The sesame oil is brilliant! I like it so much! It combined every other ingredients together so well. I have no idea how to pronounce the vegetables, I put them in the soup, so good! Everything is perfect. Last thing want to mention, the small fish (anchovies, and fish oil) is wonderful. I and my friend ate the soup extremely quick, totally have no time to take a picture. Very glad I find your video, Very lucky just have these ingredients in my fridge and made a great meal. Like all of your videos. Thank you!

Bok Choi is usually available in US supermarkets. We use that as a substitute. Plus whatever mushrooms that look fun (that we cook separate to reduce any flavor domination). And a bucket of green onions. Some sprouts. We alternate with different noodles. Like udon or fat rice noodles that hold up to heat over time. Or some just made biang biang (big flat noodles).
Fougère (FOO-zhair) is French for "Fern," which is the same type of plant as Fernbrake, which is a Fiddlehead fern. In fact, both plants are often referred to by the same name: "Bracken."

I ended up adding little more salt and red pepper flakes to my liking. I looked for the bottle of anchovies at Lotte and H-mart but couldn't find it. However, found it next to cans of sardines at Safeway. Also, I was worried that the glass noodles wouldn't get cooked but it was perfect. I always visit Aiiiiiisiaaaann Ut Hummmmmm whenever I feel like cooking Korean dishes : )

Ok so here is my plan, to make this as a main dish during the summer, and also have a bunch of other banchan and I am using most recipes from Seongkyoung! Some recipes I will be using from Maangchi, I cannot wait to make this dinner. This stew would be int he center, along side braised tofu, fresh spicy kimchi, kimchi mandu, kalbi on the grill, japchae, acorn jelly, bean sprouts (which their name in korean seems to escape me at the time)I think it is something like kongnamool? Correct me if I am wrong :) But I have a question, for this feast, do you recommend I wake up early and start cooking, or prepare over night?

try fish sauce instead. you will not be able to taste or smell. its just brings rich flavor to tje soup.
