- I’m introducing delicious and nutritious yukgaejang to you today: spicy beef and vegetable soup. This soup is smoky, spicy, and rich, with healthy hunks of sliced beef and plenty of vegetables that are soft, but not mushy-they’re full of earthy mountain flavor from gosari (fernbrake). Served with rice, it’s a satisfying, warming meal.

this is my favorite soup as well. I had this at a restaurant and took home the leftovers. WOW it was amazing leftover! was blow away by fernbrake! The restaurant closed, sadly ... then I found you :) Now I have it whenever I want. Your cookbook and recipes are standard in our home. You rock!

Maangchi, you are so inspiring. My mom grew up in a really poor and small village in my state in 50's. She learnt with my grandmother how use all food and never throwing anything away! Everything could be used! Food was so expensive at that time and so it is until now, isn't it? She told me they could prepare all kinds of delicious food with whatever they had at home. So I see that in your cooking videos. You always tell us "don't throw it away! You can use later!" or "keep this in the refrigerator". Thanks for be just the way you are! Keep inspiring people! I decided to make this at home since I usually eat it in a restaurant. The woman at the meat counter was so impressed I was trying to make it and found the perfect meat for me. The soup came out so good and tasty, better than any restaurant I had it in here in Seoul. All thanks to your recipe! Thank you! Now I feel excited and more confident to try to make other recipes. When I return to America one day I will be a Korean cook master!

I was briefly married to a Korean woman who was a chef and with my help owns a restaurant in Flushing, Queens. She used to make tofu, soy milk, dumplings and kimchi homemade. I loved the fresh baby bok-choy kimchi. Never got a cold that Winter.

Many years ago my girlfriend and I were driving my truck in the forest in Michigan. all of a sudden she yelled STOP! She got out, and all around us was gosari. She kept saying My Mother would love this! We picked a large bunch of it and she made a soup. I loved it, very good!

I live alone and still made the full recipe. Then I portioned the soup and froze them. And I'm so happy that I've a well balanced meal for many days after that! Just heat up the portioned soup, made rice and I've a well balanced meal for days. Eaten with kimchi and side dishes, all of which I get the recipe from Maangchi!
Thanks, Maangchi, for being so generous in sharing your recipes. You have made our life easier by convincing me that I can make good delicious meals. Cheaper too! I save a lot by cooking all these dishes myself.
Frozen vegetables become over tender..
My mother would make the Spanish chicken and yellow rice with a little beer added to the chicken stock . Lots of olive oil, garlic, onions , and the chicken pulled from the bone . Garnished with green peas and red pimentos on top after it’s cooked . No leftovers because it got sent home with who ever was lucky that day .

Had this in a restaurant. They gave me such a huge bowl! Finished 3/4 of it before I gave up lol. Didn't have a sesame oil flavor surprisingly, but they put potato starch noodles too. I had fun putting my rice into it, turned into like a porridge-stew mixture. Very comforting stew. ☺️

I love this channel so much. I'm vegetarian but I still watch all your videos because they make me so happy ^.^
My mom always cooked a big meal that would last us for days. That way she only had to cook every couple of days. She worked a lot and then later when we got older she went to school and worked so the cooking was left to me, and I just cooked the same way. She would cook the same things, spaghetti, potatoe salad, goulash, chili, hamburger gravy, lasagna. She would cook breakfast on the weekend of fried potatoes, over easy eggs, maybe some bacon or sausage. Later on she learned to make a beef stew in the crock pot.
I can say that I am the woman I am thanks to my mother. But of course I followed my own path, and my mom was always there, for better and worse. Yes she is special.

I know this comment is a year old, but just a tip-Use some beef broth at the start rather than all water (IE: 4 cups of beef broth, 8 cups of water). I also add a tablespoon of gochujang to my "sauce" for the vegetables. This makes for a spicy, rich flavor in the broth. :)

I've recently been making and eating a lot of your recipes....I have now formed an addiction to kimchi, and cannot have a meal without it. Not only is it delicious but I 100% believe there is something in kimchi that is good for inflammation...I have Lupus, and ever since I've been eating mostly Korean dishes and tons of kimchi, I feel better than I have in years. I don't know what is in these fermented ingredients...but I can now see why Koreans are healthier overall than Americans, and I appreciate you sharing this long established knowledge about these foods with us. It has truly changed my life!
