Stir Fry Pork With Garlic And Ginger

  • Hey, today we are making Stir Fry Pork With Garlic And Ginger.
    To give the pork that silky, tender texture that you get in restaurants and zi char stores, we'll tenderise the meat with baking soda or sodium bicarinate. This also keeps it juicy and smooth. And the garlic and ginger combination is the classic Chinese aromatics pairing.
    Ingredients:
    350g Lean pork
    8 slices ginger, julienne
    4 cloves garlic
    2 stalks spring onions, separate white and green parts
    Marinate:
    1 Tbsp light soy sauce
    1/4 tsp white pepper
    1/2 tsp baking soda
    2 tsp cornflour
    Seasoning:
    1 1/2 Tbsp dark soy sauce
    1 Tbsp oyster sauce
    1/2 tsp sugar
    120 ml water
    1 Tbsp Chinese cooking wine
    1 tsp sesame seed oil

      I heard you're supposed to wash it off though before frying

      Try using sherry or any white wine instead. 😃

      Thank you! One of my fondest childhood memories (and I guess for most people as well) is home-cooked food and the person that's cooking it. This formed the basis for comfort food for me as an adult. I wanted the same for my kids.

    I love this recipe I am making it now this is my third time making it but each time I ask something a little more I add accent a little bit of slap your Mama seasoning I use bell peppers

    Wow, I'm so surprised out well this turned out without using the sugar, wine, or oyster sauce. I'm sure it's even better with those ingredients but since I didn't have the last two on hand, I went without. I did use Tamari. I will certainly be making this again!

    I love this flavor but everytime I cooked a similar version, it leave a sour taste on my tongue.
    Is it because of the baking soda? I don't want to throw this recipe or similar recipe away because of the sour taste on my tongue and my mouth.

      Yes, it's likely the baking soda. Try using 1 egg white instead of baking soda and let it marinade for 20 to 30 minutes. Hope this helps

    What can I substitute for corn flour? I don't have any

      You can use potato starch, rice flour or just your everyday all purpose flour. Use these the same way as you would with corn flour. Hope this helps.
