I remember years ago when I first tried cooking a broccoli stir fry and it was mushy and salty. Nice to chuckle when I hear how strange it is to put raw broccoli into nearly finished pan. Thanks for the content!
Am I missing something? When did non stick pans become impervious to metal utensils? He used a metal whisk AND metal tongs, and totally scraped them around the pan. Lotta teflon coating coming off in your food if you do that, not to mention ruining your pan really fast.
Agreed. Horrific. This is not how south east Asians stir fry. They would marinate the meat and add cornflour to the meat to ensure it is tender and juicy. They don't typically use olive oil to stir fry 🤦🏻♂️ the utensils he uses will ruin that pan big time! Not remotely close to an Asian authentic stir fry! 🙄
These chefs are using top of the line pans.. Most made in Germany. I know chef jean Pierre also uses a so called non stick pan and metal on it. He's had it for years! Far beyond what we can buy!
He never called it a nonstick pan. But to me, it looks more like carbon steel and a particularly high end one. Lots of kitchens use carbon steel and it's only just becoming popular for consumers.
This also made me queasy hearing the metallic scrape in that pan in the beginning. Then at the end I was numb when he smashed the tongs into the skillet in order to plate the dish. We arrived at the same conclusion lol
As a Thai food chef what Chef Ramsay is cooking is called Pad Mee. I highly suggest you add little bit of fish sauce, bit of dried chili and oyster sauce for better flavors.
Gordon, going to be honest here. 10 years ago I watched you on TV and thought what a ass you were till now I fully respect you because as a student it is that hard to live unless you have the correct food and nutrition in your body to strive. Made the stir fry chicken tonight. Used asparagus as we had no broccoli. Also added a touch of toasted sesame oil as we love that flavor. Sooooo yummy! Thanks Gordon!
@@alex.harkness Olive oil has a low smoking point and low flash point (the temperature where it catches on fire), Olive oil's flash point is lower then the smoking point of vegetable oil. Which means it will catch on fire before vegetable oil even starts smoking. It is completely unsuited for stir frying. The whole point of stir frying with a wok is to get the wok as HOT as possible to caramelized the food the with the Maillard reaction. Its like trying to barbeque ice cream, complete idiocy.
I fry the ingredients separately with olive oil at medium heat before combining it all with a sauce that I make and stir frying it at high heat. It takes a little longer but it's delicious.

Turned out very well, though I ended up without the lime on the end because well my roommate consumed the lime lol I have enough ingredients to give it another go though. Furthermore a very satisfying meal to be sure.

Update: I did try the Chicken Stir Fry. I followed the way Gordon did it, but made a few tweaks: added baby shrimp, used Ramen noodles, and added some cilantro at the end. Turned out great!
Uncle Roger should roast the crap out of this video. Should use chicken thighs instead of breasts and should also velvet the meat. The worst part of the whole thing is it looks pretty bland. Needs more seasonings and a lot more sauce (oyster sauce, hoisin, rice vinegar)
Uncle roger would rip this to shreds, I'd be surprised if he hasn't already. It's a fucking shit recipe. He uses olive oil, he doesn't season the chicken, the sauce is entirely garlic and soy, the noodles are basically just plain noodles with no flavour, he puts egg in it like he thinks he's making fried rice. Gordon Ramsey is great if you want to know how to do European food....east Asian food? He doesn't seem to know what the fuck he's doing...or these decisions were made to make the recipe seem simple and familiar to Europeans ("Oh olive oil, the good oil") so that it gets traction on youtube...because Ramsey is a business man before he's a chef.

Can you make stir fry pork noodle with strips of pork slices like you did with chicken? Normally we don’t use ground pork like that ! Ground meats are for making meatballs or put in congee🤔😉😀
I tired it!..I loved it! I also added mangetout to it for extra greens. One thing I wanted to mention that Its not a good idea to use metal clippers or metal whisker on tefal/nonstick pan as it damages the pan and crumble Teflon which we then eat. Love Ola :)

As a western chef, Gordon has learnt to cook so many different style of food, good job. Though any chef from a local Hong Kong style restaurant can cook a much better stir fry dish.
I love your TV show its really iconic, my favorite line is WHERE IS THE LAMB SAUCE! Idk but this is my favorite celebrity. I've seen your restaurant in Las Vegas a lot. Cause I go there a lot for the weekends but I can't cause I'm not in America no more. 😊
Pretty good, not sure about the egg though. At first I thought he was going to coat the noodles in the egg and cook but its sort of like scrambled egg on top.
The egg is great but you should put the noodles way earlier, his egg was basically already done and scrambled when he put everything in. Usually (at least in china and japan) they cook the egg to about 70% and put the rest in and mix it for about 1 to 2 min since the egg will finish cooking during the stir frying. I'd recommend a bit of dark soy sauce on the chicken noodles too, and I know traditionnally people would add oyster sauce but I haven't managed to cook a good meal with that sauce yet :/
Honestly Gordan, people rarely ever use Olive Oil in Stir Fries because the smoke point for Olive Oil is too low. Most prefer a higher smoke point like Canola or Corn Oil because their smoke point is a lot higher. So if you were to do this with a high heat Wok method, gotta think of the type of oil one is using.
Love Morticia, but Ramsay is a British chef, not Asian or even Aus fusion. OC is correct, other oils are usually used as a hot wok is crucial. Source: partner is a chef of 10 years and has run Asian fusion restaurants in Australia. I actually flinched when he said olive oil.

Olive Oil is great and healthy, but the oil can only go to about 300 or so before hitting the smoke point (which you don't want when stir frying)

I feel like I would use a silicone whisk and tongs in a non stick pan. Yet I don't have the option of new pans whenever I want lol

You sure can. Just be sure to get the pork nice and thin and be aware that pork has a shorter cook time than chicken

I guess is to let the meat marinate or absorb then extra for the noodles.
