Chinese Pig Feet Recipe

  • Ingredients- pig feet, garlic, ginger, bay leaves, leek, cinnamon, star anise, Sichuan pepper (optional), sugar, salt, oil, water, scallions.
    Follow the directions and if you have any questions feel free to ask.
    It seems there are a lot of names for pig feet but I will stick to pig feet.
    I guess when people were a lot poorer they didn't want to waste any meat so they ate the feet. The problem is that there is so little meat on pig feet, except for fat.
    I will always remember once when my boss took me out for dinner. In China it is polite to offer food or even put food in to other people's bowls. So my boss gave me a big fat pig foot. I'm not one to waste food and I don't want to be rude so I took a huge bite of that rather impressive foot. To this day I'm not sure if I have ever had so much fat in one mouthful. There was no meat at all just a big mouthful of chew pig fat. I gobbles it down. 干杯!

    Love you and your wives videos. A good laugh and more importantly, they're a great showcase of Chinese home cooking which I find is the hardest to learn from cook books. Also, can't wait to try that tepache recipe.

    My wife who is from Changsha, Hunan drives me nuts. She pronounces all her “n” like “l”. She says Lan Feng instead of Nan Feng 南风( south wind). I can speak standard Mandarin. It’s hard enough to teach her American English that I won’t bother trying to correct her Chinese! Btw, enjoy your humorous comments.

    Hilarious commentary. My mother sounds similar to yours. Though, when I say in a restaurant "this is just how my mother used to make it", it's not a compliment

    We got six pigs feet for six bucks and it's a week til bin day so we cooked them up
    Cracked me up and that was just the beginning. Looked delicious but as I can't stand skin or gristle on my meat I'll not be trying it. I'd buy that sauce though.

      Thanks mate. Sometimes I get so busy with work that I can't make videos. We kept recording them through the year but I didn't edit or narrate. I find that I can only do it when I'm not bummed out and my job really drains it out of me.

      Hey mate. Yeah sorry about that. Been a little bummed out to be honest, work blows and I never seem to have both time and energy at the same time to put out a video. Having said that we have filmed a backlog of videos, both cooking and beer. We even filmed one last weekend, and plan on doing another 2 within the week. Just not sure when they will be uploaded. We found a bamboo forest so have been harvesting and eating bamboo shoot everything. I find it super interesting. Either way, holidays are in 5 week and then there should be a steady stream for a while. I will try to use that time to get my shit together. Sorry to be a bummer. Thank you for remembering us. How are you doing?

      We filmed a dumplings episode months ago that uses mince. I never uploaded it because I feel they don't look beautiful enough. The Internet's dumpling beauty standards are so high. I'll have a re-look at it when I get time.

    Were you serious about the flask of boiling water?? You said true story but I never know with you.

      Yes, I'm serious. We drink a fair amount of tea and coffee, plus Zenglei is Chinese and they only drink hot water. So each day we were boiling the kettle quite a few times. When you boil the kettle and then pour yourself a drink, you inevitably leave quite a large amount of hot water behind to cool down and not get drunk. Then, an hour or two later when you want more hot water you add more water and repeat the process. This causes a large waste of energy. Thus each morning we fill the kettle, boil the water, and put it in the vacuum flask. I bought a Stanly brand flask because it has a life time warranty. Having written all of this I has become cleat to me that I'm an old man.

    would be cool to substitute in oxe tail and see how that would turn out. Not a big fan of feet in food. Both chicken feet and pork feet feel like fatty gello in the mouth :D I like the taste, but can't get over the mouthfeel.

    Pigs feet are nice enough but nothing really to them but good for making stock
    braised - fried lightly and then stewed slowly in a closed container
