    Even in Korea this particular dish is rarely cooked at home. I am sure Maangchi was vary happy when she finally succeeded in making Jokbal right. Very impressive! Hands down one of the best Korean cooks on youtube.

    Where im from, we usually "burn" the skin and then soak and scrape the skin to help remove the gamey smell from trotters. We braise the trotters in similar way with soy sauce,sugar, black pepper,bay leaves, star anise, ginger, garlic, fermented black beans, and scallions. Its amazing how it is almost similar to this dish.

In my country pork trotter is a not-so-common dish, but a tasty one. My grandma used to make a delicious stew with tomato & onion sauce, and that's the recipe I learned from her :)

    In Poland we’re boiling using beer to tenderized with vegetable like cabbage carrots etc. for instead 2-3 hours and then finishing in the oven over very high heat to crispiness the skin😉

    I'm a Muslim, therefore I don't eat pork. At first, looking at the piece of meat was kind of disturbing as I had never seen it before, but as I went further and further into the video, I got more and more interested. In the end, it did not bother me. Although I will never make this recipe (as I can't eat it), I am grateful to you, Maangchi, for sharing these amazing recipes with us. It was also so considerate of you to address the vegans/vegetarians/Muslims/etc. in the beginning of the video. I love you, Maangchi! Please keep showing us amazing and interesting recipes!

      I am a Muslim too. I did all the Maangchi chicken recipe. I didn’t eat KFC for 3 months. I’m addicted to these Korean fried chicken.

    My parents were from Hungary & Czechoslovakia and both grew up in rural areas. No part of the animal was wasted. My father used to cook something similar to this; watching you cook this brings back memories.

      I come from an area with a large Serbian population and every year they have a festival where they slaughter bulls and prepare the bulls publicly. People all bring home grown vegetables and dishes to eat with the bull meat as the whole community takes part. Every cut of the bull is eaten as well. My grandparents were all raised on farms as well and so I grew up eating things like trotters, chicken feet, gizzards and cock's combs, and head cheese (a meat jelly made from the head of an animal).

      Thank you, your jokbal looked delicious!! I miss my Mom's cooking. We had pickled pigs feet Chinese style whenever a baby was born. The dish gave the mother strength. Great collagen & protein...very nutritious! ❤❤

    I told my dad about this recipe and was extremely surprised when his face lit up. He said Jokbal is one of his favorites and he misses it because no one makes it around here. He used to eat it when he was stationed in South Korea. We do have a small Korean market here I shop regularly at...I haven't seen jujubes but I may not have been looking hard enough...and I bet if they don't have it all I need to do is ask, the owner is very sweet.
    Once I can find jujubes I have everything else except the trotters, which I can get at the butcher. I'm going to surprise my dad with it.

      I know it took FOREVER to get back, sorry about that!!
      I made them on Christmas! He was jokingly skeptical about me making it till I showed him pictures of my process haha. He LOVED IT, it was such an awesome gift! He's still surprised I cooked that, but now he's been asking me almost daily what I am cooking for dinner which is hilarious.

    I made this recipe, too there are a few things I need to share to help anyone wanting to make this recipe.
    Spices: If you don’t want overwhelming spice flavour cut down the spices to a qtr what this recipe calls for. I didn’t use a spice bag so perhaps that’s why my spice flavours came out stronger.
    Strong taste from meat: I also found no amount of rinsing the soaked hock pork meat took that gamey smell and taste away. But it did significantly reduce it. What I did was soak the hock in water salt and vinegar for a while and did this a few times. I recommend soaking hock overnight in vinegar, salt water and and next day freeze it for at least a week. Freezing it will take off some of its strong flavour. I also boiled my hocks twice in salt for 20 mins each and rinsed hocks and scrubbed pot again.
    Coca Cola: I added Coca Cola to help tenderise meat, add deeper flavour and deepen Color.
    Apple and coffee: I added only half the coffee amount from this recipe and in hindsight I should of added more because that’s why the spice flavour was quite strong. The apples were wonderful but next time I will double the amount because I loved the flavour and sweetness it gave the pork meat.
    All up a good recipe, at my local Korean grocer here in Sydney, Australia I used to buy 1 already prepared and cooked small sized hock vacuum sealed - it came with all condiments, a dipping sauce, chilli, raw garlic all for $12-15AUD but to buy the hocks per kg is $7.99AUD - I got about x2 large hocks price of cooked one. However the cooked one doesn’t have any gamey overly porky taste.
    Lastly I’m not sure if I’ll make again in a while - since I felt I failed but not Maangchi fault it was my own fault since I didn’t follow her recipe to a T. Use the muslin bags guys!

    4번이나 해먹었습니다. 냄새도 하나두 안나고 피를 잘빼는게 중요한거 같아요 마사지해서 피까지 다 뺴서 했습니다.
    파는것보다 맛있다고 가족들이 좋아합니다. 요리하는 준비,조리시간은 긴데,, 먹는건 순식간이네요 ㅎㅎ
    한국에서도 제가 사는 주변 정육점 문제인지 몰라도 장족은 잘 안팔더라구요. 주문하면 몇일있다 사는 방식이라;;
    한국 사람들이 족발은 잘먹지만 집에서 해먹을 생각은 안하자나요 ㅋㅋㅋ 워낙 원조니 맛집이니 많다보니
    그런데 이 레시피 대로하면 진짜 맛있습니다. 맛술대신 청주 넣어서 했어요..

      RyverLoire lol I went on a semester abroad to Thailand . and when the food microbiology professor talked about fermented food. She actually showed Maangchis video on how to make kimchi and I had such a fan girl moment... I was waving at Maangchi and was like "oh yessss! It's Maangchi!!! I know her I know her! She is awesome!"

      In this class we were only 3 students. And I was sat in the middle so from each side and from the front I had 3 people giving me a funny look. Then we were laughing and my friend really really wanted to try kimchi.

    Counterpart of that dish here in Philippines is our famous Crispy pata...same procedure boil it to make it tender. Then deep frying best partner for Wine or beer. Just dip in Vinegar with soy souce slice onion and garlic plus chili

    You can buy pig feet from Caribbean stores in Richmond Hill, Queens, NYC. I love trotters and this recipe looks fabulous, so I'll be hunting for trotters myself this weekend!

    Love all of your recipes. Sometimes I find a lot of similarities between mexican and korean food. We call chamorros to that part and we prepared them in different dishes one of my favorites carnitas style, I love to mix both cultures and eat my carnitas with homemade kimchi.

    I’m so glad you shared this recipe! I saw this dish on a Korean romcom (Let’s Eat) and have been intrigued ever since. I’m thinking of trying to make this during the holidays! It seems like a perfect festive dish with the cinnamon and star anise 😍

    i stumbled upon your channel few weeks ago and im an avid viewer now i love far east asian/korean food and i tried 2 of your squid dishes already and i loved eating what i cooked from watching your vids ,and couple other things ,you make everything look so simple with great results but i do sometimes worry about your tiny teeny finger when you chopping away but im know and sure you got it all under control ,and last thing Maangchi ,your so adorabley cute ,cutest cook i seen

    In Korea, jokbal is the best to eat with soju. sometimes put rice, jokbal, and ssamjang in lettuce.
    There's also a restaurant and street famous for jokbal.

I live far away from Korean restaurants and it’s not very often that I’m able to find jokbal on their menu. I can’t wait to make this at home for the holidays. 😊

    I've been planning a big dinner since Covid happened, because before it happened me, my husband, my brother and his husband would always get together on Sunday and have family dinner. I'm going to make this when we get together next month!! Along with some of your other spectacular dishes! So thank you for showing me how to make this, we love asian cuisine and I regularly cook big feasts, but I've never attempted to make the roasted meat we all love so much 💜 I bet this will go great with those steamed shisito peppers 🌸

    Here in Sweden we have something similar. We call it 'Fläsklägg', which translates to 'Pork-leg'. We don't actually use the lowermost part, the trotters, when we make fläsklägg. And the pork shank/leg we buy is mostly 'rimmat', which means it has been soaked in salt-brine. We can rarely find the un-brined version in supermarkets any more. Perhaps if you go to a butcher you'll have a better chance.
    In any case, we boil the pork-shank with whole black and white peppercorns, salt, bayleaves, chopped onions and carrots. We cook it for severalhours until the meat literally falls off of the bones, then we remove the skin, fat and bones and serve the meat with a dish called 'Rotmos', or in direct translation 'root-mash'.
    It's like mashed potatoes, but it's made from cooked, mashed carrots, turnips and similar root-vegetables, mashed with milk or cream, and butter. It's really delicious, but I desperately want to try Jokbal! It always looks so amazing whenever I see it in Kdrama!

    I just knew you’d have a recipe for jokbal! I go to my local Korean restaurant but the meat is so little and it’s usually dry. Your recipe looks so succulent! Can’t wait to try it out!

    I can never forget that Korean banquet we had as a group of midwives in Sydney, eating late after work, in one of the simplest Korean eating places in King Cross of all places. Such tasty food. That was a long time ago but the memory makes me glow. Never since then have I eaten so well, even at Korean restaurants.

    I'm from Germany and funny enough in the general area of the Rhineland we have a dish called Pfötchen mit Sauerkraut, boiled pig trotter with fermented cabbage. Pfötchen basically means paw and is used as an euphorism for the pig trotters, who are seen as an off cut. Sadly not many people are still eating this dish nowadays, cause they are not used to the fatty, gelatinous mouthfeel, but paired and sometimes stewed with the Sauerkraut it's actually pretty balanced and really delicious.

      Oli Gar this is one of my favorite ways to eat that cut or other fatty cuts of meat. I am American and my family lives in region with a past of Polish and German influences, and they adopted this recipe. It is great reading about what it is called and how tastes evolve over time.

      Can you start a youtube channel with German food! I was always a little, nahhh about German food. Thought that compared to France, Italy, Spain and other parts of Europe, Germany was a place that didn't have good food. But alas(!) I went to German and boy was I pleasantly surprised! I had really good dishes. Lots f meat dishes and stews. There were really good pastries too. So now I like German food.
