    This tasted delicious. Seasoning the oil with curry leaves and star anise really adds that authentic flavour. Will add a stalk of lemon grass next time as suggested in the notes for a touch more complexity..This is the closest to restaurant quality recipe ive tried and ive tried a few different recipes. Thanks 😀

      It's one of my favourite curries! The star anise is definitely the key - I've experimented with less, but have hit on the perfect amount in the curry powder and the sauce too I think. Glad you enjoyed - I'm gonna have to make some myself now! :)
